3 tablespoons canola oil
1 white onion, chopped
1 tablespoon chopped garlic
1 tablespoon toasted cumin seeds, ground
1/2 teaspoon toasted anise seeds, ground
9 cups chicken stock
5 boneless, skinless chicken breast halves
4 Yukon gold potatoes, diced
3 (15-ounce) cans white hominy
2 roasted, peeled and seeded poblano peppers
1 jalapeno, seeded and chopped
5 chiles de arbol, seeded
3/4 pound tomatillos, husked and quartered
1/2 bunch chopped cilantro leaves, plus more for garnish
4 leaves romaine lettuce
1/2 tablespoon Mexican dried oregano
1/2 tablespoon chopped garlic
Salt and freshly ground black pepper
Sliced avocado, for garnish
Sliced radishes, for garnish
Queso fresco, for garnish

Steps:

  • Heat the canola oil in a heavy-bottomed stockpot over medium-high heat.
  • Add the onions and garlic and cook until translucent. Stir in the cumin and anise, then add the chicken stock and chicken.
  • Simmer until the chicken is cooked through. Remove the chicken to a cutting board and let cool.
  • Add the potatoes and hominy and simmer until the potatoes are tender.
  • Shred the cooled chicken.
  • Combine the poblanos, jalapenos, chiles de arbol, tomatillos, cilantro, romaine, oregano, garlic, salt and pepper, to taste, in a blender. Blend on high until all of the ingredients are well combined.
  • Add the blended mixture to the stockpot along with the shredded chicken and cook for about 5 to 8 minutes. Season with salt and pepper, to taste.
  • Ladle the posole into shallow bowls and garnish each serving with slices of avocado, thinly sliced radish, queso fresco, and chopped cilantro.

In most towns in Mexico, street vendors set up food stalls on summer evenings. Head for the pozole stand for bowls of brothy pozole verde, a stew of large hominy kernels simmered with pork. As opposed to pozole rojo, made with red chiles, this lighter, herby version makes a great summer supper. Set out bowls of condiments - chopped onion, cilantro, chopped chiles, avocado and oregano - so each diner can customize. A squeeze of lime for each serving is vital.

1 pound dried pozole, soaked overnight in cold water
1 head garlic, divided into cloves but not peeled
Kosher salt and black pepper
4 pounds boneless pork shoulder, cut into 2-inch chunks
1 small onion
2 bay leaves
6 cloves
1 pound tomatillos, diced, about 2 cups
1 small chayote squash, diced (optional)
2 medium zucchini, diced
Kernels from 3 large ears corn, about 2 cups
1 cup finely diced onion
2 cups roughly chopped cilantro
1/4 cup finely chopped hot green chile, such as serrano or jalapeño
1/4 cup dried oregano
2 firm-ripe avocados, cut into thick slices
Roasted poblano chile strips (optional)
Lime wedges

Steps:

  • Drain pozole and transfer to a large soup pot. Add water to cover by 3 inches and bring to a boil over high heat. Reduce heat to a simmer, add garlic and cook pozole for 2 1/2 to 3 hours, until kernels are tender and beginning to burst. Add 1 tablespoon kosher salt halfway through cooking and be sure to keep the cooking liquid topped up. (Pozole kernels may be cooked in advance, up to 1 day ahead.)
  • Season pork well with salt and pepper. Place in large soup pot and cover with 12 cups water. Add onion, bay leaves and cloves. Bring to a boil, then reduce to a simmer and cook, covered with lid ajar, until very tender, about 1 1/2 hours.
  • Combine cooked pozole (with broth) and cooked pork (with broth) in one pot. Simmer for 15 minutes, then add tomatillos, chayote, zucchini and corn and cook for 5 minutes more. Taste broth and adjust seasoning. Add a little more water if necessary to keep a soupy consistency.
  • Serve in large bowls. Pass garnishes separately.

One of my favorite casual restaurants in Las Vegas is Chino Latino in the Cosmopolitan Hotel. They have the best Chicken Posole Verde that I tried to duplicate at home. Serve garnished with cilantro, avocado, and lime wedges.

4 large skinless, boneless chicken breasts
1 tablespoon cumin
1 teaspoon ground black pepper
1 teaspoon adobo seasoning
½ lime, juiced
6 tomatillos, husked and chopped, or to taste
3 serrano chiles, stemmed, or to taste
1 onion, chopped
3 garlic cloves, peeled, or to taste
1 bunch cilantro
1 tablespoon kosher salt
1 (32 fluid ounce) container chicken stock
1 (15.5 ounce) can white hominy, drained

Steps:

  • Place chicken breasts in a slow cooker; cook on Low until no longer pink in the center and the juices run clear, about 4 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Shred chicken in a large pot; add cumin, black pepper, adobo seasoning, and lime juice and mix well.
  • Place tomatillos and serrano peppers in a clear microwave-safe bag. Seal bag and pierce a few times with a knife to vent. Microwave until soft, 4 to 5 minutes.
  • Put softened tomatillos, serrano peppers, onion, garlic, cilantro, and salt in a blender and blend until salsa verde is smooth.
  • Mix chicken stock and hominy with shredded chicken in the large pot. Add half of the salsa verde to the shredded chicken.
  • Simmer over medium heat until flavors are well-mixed, about 30 minutes.

1 pound fresh tomatillos, husks removed
1 pound poblano peppers
1 drizzle olive oil
1 cup water
1 tablespoon olive oil
2 pounds skinless, boneless chicken breasts, cubed
1 medium white onion, diced
4 cups chicken broth
2 serrano peppers, chopped
4 cloves garlic, minced
1 tablespoon ground cumin
2 teaspoons chipotle chile powder
salt to taste
¼ cup cornmeal

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place tomatillos and poblanos into a roasting pan and drizzle with olive oil, tossing to coat.
  • Roast in the preheated oven until poblanos are blackened, about 45 minutes. Remove from the oven and let cool enough to handle, about 10 minutes.
  • Remove skins from poblanos and place them into an electric blender with tomatillos. Add water and blend until smooth.
  • Heat 1 tablespoon oil in a skillet over medium-high heat. Saute chicken and onion in the hot oil until onions soften and show color and chicken is browned, 5 to 7 minutes. Add blended poblanos and tomatillos, chicken broth, serrano peppers, garlic, cumin, chipotle powder, and salt.
  • Bring mixture to a boil, reduce heat to medium-low, and let simmer until chicken is no longer pink in the center and flavors have melded, about 1 hour. Stir in cornmeal to thicken.

Pozole is a hearty hominy-based stew from Mexico that has numerous iterations. In this green version, tart and tangy ingredients like tomatillos, cilantro, and lime balance rich, fatty pork shoulder.

4 pounds boneless pork shoulder, cut into 2-inch pieces
Coarse salt and freshly ground pepper
4 cups low-sodium chicken broth
1 large white onion, peeled and quartered
1 head garlic, halved crosswise
2 dried bay leaves
6 whole cloves
2 teaspoons dried oregano, preferably Mexican
3/4 pound tomatillos, husked, rinsed, and quartered
2 poblano peppers, quartered, ribs and seeds removed
2 jalapenos, quartered, seeds removed for less heat, if desired, plus more for serving
1/3 cup packed coarsely chopped cilantro, plus more for serving
1 tablespoon safflower oil
2 cans (28 ounces each) white hominy, drained
Diced avocado, sliced radishes, finely shredded purple cabbage, lime wedges, and warm fresh corn tortillas or tortilla chips, for serving

Steps:

  • Season pork with 2 tablespoons salt and 1/2 teaspoon pepper. Place in a pot with broth, half the onion, garlic, and 10 cups water. Bring to a boil, skimming impurities from surface. Reduce heat to low; stir in bay leaves, cloves, and oregano. Simmer, partially covered, until pork is fork-tender, 1 1/2 to 2 hours. Remove onion, garlic, bay leaves, and cloves.
  • Meanwhile, combine remaining onion, tomatillos, poblanos, jalapenos, cilantro, and oil in a blender; puree until smooth. Transfer to a saucepan and simmer over medium heat, stirring occasionally, until thickened slightly and deep green, 12 to 15 minutes. Stir into soup with hominy and simmer for 10 minutes. Serve with jalapeno, cilantro, avocado, radishes, cabbage, lime wedges, and tortillas.

It is more authentic using chicken breast halves with bones and skin but I wanted to lighten it up a bit. You can top with finely chopped onion, diced avocado, sour cream, tortilla chips and lime wedges- if desired.

7 cups chicken stock
2 cups water
4 boneless chicken breasts, halves
1 lb tomatillo, husked and halved
1 small onion, quartered
2 poblano chiles (cored, seeded and quartered)
2 jalapenos, seeded and quartered
4 large garlic cloves, smashed
1/2 cup cilantro, chopped
1 tablespoon oregano leaves
salt & freshly ground black pepper
1 tablespoon vegetable oil
3 (15 ounce) cans white hominy, drained

Steps:

  • In a large pot bring the chicken stock and water to a boil. Add the chicken breasts and simmer over very low heat until they're tender and cooked through, about 25 minutes. Transfer the chicken breasts to a plate and shred the meat.
  • In a blender or food processor combine the halved tomatillos with the quartered onion, poblanos and jalapeños, smashed garlic, chopped cilantro and oregano. Pulse until coarsely chopped; stopping occasionally and scraping down the side. With the machine on, add 1 cup of the broth and puree until smooth. Season with salt and pepper.
  • In a large deep skillet, heat the vegetable oil until shimmering. Add the tomatillo puree and cook over medium heat, until the sauce turns a deep green, stirring occasionally, about 12 minutes.
  • Pour the green sauce into the broth in the casserole. Add the hominy and bring to a simmer over moderate heat. Add the shredded chicken to the stew, season with salt and pepper and cook just until heated through.
  • Serve the pozole in deep bowls, topping with onion, avocado, sour cream, tortilla chips and lime wedges if desired. We just usually eat it with a sprinkling of tortilla strips.

  • Pull off the husks of the tomatillos and give them a good rinse. I usually de-stem them but this is optional. Add the tomatillos to a roasting pan along with the rinsed poblanos and roast them in the oven at 400F. I usually flip the poblanos over after 15-20 minutes, and if the tomatillos are disintegrating you can take them out of the oven at this point. The poblanos will need about 30 minutes total to fully roast.
  • Add the two chicken breasts to a pan and cover with 2 quarts of stock. Be sure there is enough liquid to submerge the chicken breasts. I also added 1/2 onion, 10 sprigs cilantro, a pinch of salt, and some freshly cracked black pepper but these are optional. Bring to a boil and then reduce heat to a simmer. Cook the chicken until no longer pink inside, about 20 minutes. Once cooked, set the chicken aside to cool on a plate and then shred using two forks. Save the cooking liquid.
  • Add the remaining green sauce ingredients to a blender: 2 peeled onions, 2 de-stemmed and rinsed jalapenos, 4 peeled garlic cloves, and 1/2 bunch of rinsed cilantro. I usually just twist off and discard the bottom, thicker portions of the cilantro but use the upper stems that hold the leaves together.
  • Once the poblanos have fully roasted, remove them from the oven and let them cool down for a few minutes. Pull off and discard as much of the skin as you can. De-stem and de-seed them. I find it easiest to cut off the tops and then make a slit lengthwise. Open up the pepper and use the knife to scrape out the veins and seeds.
