CORN AND CHEESE-STUFFED CREPES WITH POBLANO CREAM

Steps:
- Grease a 13-by-9-by-2-inch glass baking dish with butter. Set aside.
- For the crepe batter: Place all ingredients in a blender and process until smooth. Let the batter stand for 30 minutes to allow any bubbles to settle.
- Preheat oven to 350 degrees F.
- For the sauce: Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add the onions and cook until translucent, about 4 minutes. Add the poblano chiles and cook for 1 minute to blend flavors. Add the heavy cream and bring to a boil. Reduce the heat to medium and simmer until reduced and the cream coats back of spoon, about 6 minutes. Cool mixture slightly then transfer to blender and process until smooth. Season the poblano sauce with salt and pepper, to taste. Return the sauce to the same skillet and keep warm over low heat until ready to serve.
- Heat a 10-inch-diameter non-stick skillet over medium-high heat. Brush the pan with oil (or spray with non-stick cooking spray). Add scant 1/4 cupful batter to the skillet; tilt to coat the bottom of the pan with an even layer of batter. Cook for about 30 to 45 seconds until golden on the bottom, adjusting the heat, as necessary, to prevent burning, Using a spatula, turn the crepe over and cook for 30 seconds. Transfer to a plate. Repeat with the remaining batter.
- Stuff each crepe with 1/4 cup of grated cheese and transfer to the prepared backing dish, fitting them snugly into dish. Cove the pan with foil and bake until cheese melts, about 15 minutes.
- To serve: Arrange the crepes on a platter and pout the sauce on top. Garnish with corn kernels, Mexican crema and chopped cilantro.
MEXICAN CHICKEN CREPES
So good and so easy! I got this from my SIL, and even though it is more like chicken enchiladas, this is the name that came with it. Cook time does not include cooking and shredding chicken.

- Combine all indregients except tortillas and chicken.
- Mix half of the sauce with chicken and roll into tortillas and put into a baking dish.
- Then pour the rest of sauce over filled tortillas.
- Bake for 25-30 minutes at 350, or until bubly and hot.
- Garnish with more grated cheese, olives, and tomatoes.

- In a large skillet, saute the chicken green pepper and onion in oil until chicken is no longer pink and vegetables are crisp-tender. Add the corn, broth, salsa, salt, chili powder if desired and pepper; bring to a boil., Stir in the rice; cover and remove from the heat. Let stand for 5 minutes. Fluff with a fork. CHICKEN CREPES
A great way to use up leftover chicken! It's teamed with garlicky sauteed spinach and a rich Gruyere bechamel for the filling of these hearty crepes.

- Preheat oven to 400 degrees with rack in center. Heat oil in a large skillet over medium-high. Add garlic and cook until golden, 1 to 2 minutes. Add spinach and stir until wilted. Transfer to a work surface, chop, and set aside.
- Mix 3/4 cup bechamel with chicken. Working with one at a time, place crepe on a work surface. Arrange 1/4 cup chicken mixture and 1 heaping tablespoon spinach down center of crepe; roll into a cylinder. Transfer, seam-side down, to a 9-by-13-inch baking dish; assemble and arrange more crepes, leaving 1/2 inch in between each. Spoon more bechamel on top and sprinkle with cheese. Bake until bubbly, about 15 minutes. Switch oven to broiler setting and cook until browning in spots, about 5 minutes. Remove from oven and let cool slightly. Sprinkle with parsley.
CAJUN CHICKEN CREPES
This award-winning original recipe is similar in composition to "Bennigan's" Cajun Chicken, though it has a number of significant differences. The crepes were kind of a fortuitious accident that proved very popular, though the recipe can certainly be made without them.

Steps:
- Begin by heating cooking oil in a large pot until water pops when sprinkled into it.
- Add chopped peppers and crushed red pepper and cook 2-4 minutes until peppers are slightly tender.
- Whisk in flour, adding slowly to insure prevention of lumps. Mixture should be very very thick at this point.
- Slowly add chicken stock, whisking continuously to prevent lumps, until mixture is about the consistency of gravy, you may have some stock left over (I often use the remainder to replace the water when cooking the rice).
- Add the heavy cream, sour cream, and cheeses and stir until smooth.
- Allow to simmer 15-20 minutes while preparing the rice and crepes.
- Saute the chicken with a bit of salt and pepper.
- Once the rice and crepes are prepared, and the sauce has had time to simmer, season to taste with salt (makes a BIG difference in the level of spiciness of the peppers).
- Serve by laying a bed of rice down the center of a crepe and sprinkling some chicken over the top, then roll up the crepe and drench in the sauce.

CHICKEN SALTIMBOCCA CREPES
I usually serve this with a Caesar salad and hot sourdough French bread for a fancy dinner. These are much easier to make than "real" chicken saltimbocca. The butter makes these very rich tasting, so two crepes per person usually makes a very filling dinner.

- Combine Parmesan cheese, breadcrumbs, and salt and pepper to taste in a shallow bowl, place melted butter in small bowl, and set conveniently by work area.
- Place a slice of ham and a slice of cheese on each crepe.
- Top with a little diced chicken and chopped tomato, and sprinkle generously with seasoned salt or poultry seasoning (seasoned salt is actually best).
- Roll up crepes, folding in ends as you go.
- Dip each rolled crepe in butter, then in bread crumb mixture, pressing on breadcrumbs to make them adhere.
- Place in a shallow baking dish.
- Drizzle with any remaining butter and sprinkle with remaining crumbs.
- Bake at 350 degrees F for 30-40 minutes or until heated through and lightly browned on top.

- In medium saucepan melt butter and saute onion until tender.
- Whisk in flour.
- Add stock, blending well.
- Season with salt and basil.
- Stir in mushrooms.
- Add heavy cream and chicken and simmer about 1 minute or until warm.
- Fill and roll crepes with chicken mixture and place in a 11 1/2 x 8 inch casserole pan.
- Cover and bake at 350 degrees for 15 minute.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat milk, eggs, and 1 1/2 tablespoons oil together in a bowl. Add flour and salt.

- 1. Make crepes. Stir together sour cream, spices, chiles, 1 1/2 cups Jack cheese, chicken and onions. 2. Spoon 1/2 cup mix down center of crepe. 3. - Mix milk, flour, eggs, melted butter, and salt together in a blender until combined. Let mixture rest for 15 minutes.
- Heat a 12-inch nonstick skillet over medium heat; lightly coat with cooking spray. Add 1/2 cup of batter and swirl the skillet so the batter completely covers the bottom. Cook until bottom is golden brown, 2 to 3 minutes. Loosen the edges with a rubber spatula and use your fingers to quickly flip the crepe. Cook 1 minute more.
