AUTHENTIC ENCHILADA SAUCE



Authentic Enchilada Sauce image

Rich and robust and a thousand times better than store-bought, this authentic enchilada sauce packs some serious FLAVOR!

Number Of Ingredients 12

3 ounces dried ancho peppers
3 ounces dried guajillo peppers
2-3 or more dried arbol peppers (OPTIONAL: for heat)
1 medium white onion, peeled and cut in half
2 ripe tomatoes, halved
4 cloves garlic, peeled
4 cups boiling water or chicken broth (for even more flavor)
we love Aneto 100% All-Natural Chicken Broth from Spain ((it's the BEST!))
1 teaspoon sea salt
1 teaspoon dried Mexican oregano
1 teaspoon ground cumin
Small piece of semi-sweet chocolate (optional)

Steps:

  • Start with that all important step: Roasting! Heat a heavy non-stick skillet (I like to use cast iron) over medium-high heat. Don't add any oil. Lay the dried peppers on the skillet and toast them for a minute or two on each, just until they become very fragrant. It's better to under-toast than to over-toast them as they will become very bitter if scorched. Remove and set aside. Next place the onion, garlic and tomatoes on the skillet and toast until lightly browned.
  • Remove the stems from the peppers (using gloves if you're using hot peppers), slice the peppers open and remove and discard all of the seeds and the membranes (contrary to popular belief, it's the membranes not the seeds that are hot, the seeds are bitter). Place the peppers in a bowl.Pour the boiling water over the peppers, cover the bowl and let them sit for 20-30 minutes until soft.
  • Place the peppers and their liquid along with the onion, tomato, garlic and all remaining ingredients (except for the chocolate if using) in a blender and blend until completely smooth.Note: At this point determine for yourself whether your sauce needs to be strained. I use a Vitamix blender which does an excellent job of blending the sauce to a very smooth puree, so I don't bother straining it.
  • Time to cook the sauce: Heat a tablespoon or so of oil to a pot then add red sauce. Simmer it uncovered for about 30 minutes. Add a little more water if you prefer it thinner. The sauce should be the thickness of heavy cream.Optional: For an added flavor touch, add a small piece of semi-sweet chocolate at the end and stir until melted.If the sauce is very bitter, add a touch of brown sugar. SEE NOTE.
  • Store in the fridge for up to 2 weeks or freeze it for several months. I like to freeze about a cup of it per freezer bag so I can conveniently grab a bag as needed.Makes approx. 5-6 cups.

This is my version of Mexican village gravy. Serve over burritos, with chips, or anything else in which you like Mexican gravy.

½ cup flour
2 tablespoons chili powder
2 teaspoons onion powder
1 teaspoon dried Mexican oregano
1 teaspoon salt
6 tablespoons vegetable oil
4 cups water

Steps:

  • Mix flour, chili powder, onion powder, oregano, and salt together in a small bowl.
  • Heat oil in a large saucepan over low heat. Whisk flour mixture into hot oil until smooth. Pour water into mixture in small amounts and whisk to incorporate smoothly between additions. Bring the gravy to a simmer for 5 minutes. Remove from heat and cool 10 minutes.

1/4 c red chili powder
1 Tbsp ground cumin
1/2 Tbsp garlic powder
1/2 tsp salt
2 pinch ground black pepper
4 Tbsp vegetable oil
1/4 c all purpose flour

Steps:

  • 1. In a low heat setting place sauce pan on burner. Add oil, chili powder, cumin, and garlic to pan and cook for 3 minutes. This will release the spice flavors.
  • 2. Add 1 1/2 cups of water to the pan and stir.
  • 3. Boil for 5 minutes.
  • 4. Lower heat and simmer. While simmering, make a rue with flour and water. Add Rue to desired sauce thickness. Simmer for an additional 7 minutes.
  • 5. Remove from heat and pour over your prepared enchiladas.

Wonderful with chicken enchiladas, "enchiritos," burritos, and just as a dip for a taco. The original recipe came from a banged up library book featuring crock-pot recipes.

1/4 cup butter
1/3 cup flour
1/2 teaspoon garlic salt
1/2 cup chili powder (yes, that's the right amount)
1 teaspoon oregano
1/4 teaspoon cumin
3 1/2 cups chicken broth (or 3 - 15 oz. cans)
1 (12 ounce) can tomato sauce

Steps:

  • In a large frying pan, melt the butter.
  • While that's melting, mix the dry ingredients, then slowly add them to the melted butter, stirring CONSTANTLY.
  • Gradually add the broth (there will be some sizzling & hissing), stir until smooth; when it begins to bubble, add the tomato sauce.
  • This will be thick and is ready to use now or can be transferred to a crock-pot to keep it warm.
  • Use "as is" or add to other recipes.

¼ cup vegetable oil
2 tablespoons self-rising flour
¼ cup New Mexico or California chili powder
1 (8 ounce) can tomato sauce
1 ½ cups water
¼ teaspoon ground cumin
¼ teaspoon garlic powder
¼ teaspoon onion salt
salt to taste

Steps:

  • Heat oil in a skillet over medium-high heat. Stir in flour and chili powder, reduce heat to medium, and cook until lightly brown, stirring constantly to prevent burning flour.
  • Gradually stir in tomato sauce, water, cumin, garlic powder, and onion salt into the flour and chili powder until smooth, and continue cooking over medium heat approximately 10 minutes, or until thickened slightly. Season to taste with salt.
