This Mexican Green Rice recipe is an easy side dish to serve along with tacos, enchiladas, or any other south of the border recipe.

1 tablespoon vegetable oil
0.5 cup chopped onion (1 medium)
2 cloves garlic, minced
0.5 teaspoon kosher salt
1 cup reduced-sodium chicken broth or vegetable broth
0.75 cup Spicy Salsa Verde or purchased green salsa
1 cup long grain white rice
0.5 cup finely snipped fresh cilantro
2 cup chopped peeled tomatillos (about 5)
2 peeled and seeded avocados
1 cup snipped fresh cilantro leaves
0.5 cup chopped onion (1 medium)
1 seeded and chopped fresh jalapeno chile pepper
0.5 water
0.333 lime juice
0.25 teaspoon salt

Steps:

  • In a medium saucepan, heat oil over medium-high heat. Add onion, garlic, and salt; cook about 2 minutes or until onion is tender. Stir in broth and Spicy Salsa Verde; bring to boiling. Stir in uncooked rice; reduce heat. Simmer, covered, for 20 to 30 minutes or until tender.
  • Remove pan from heat. Remove lid. Cover pan with a clean kitchen towel; replace lid. Let stand for 5 minutes to let the towel absorb any excess moisture. Remove lid and towel. Add cilantro; fluff rice with a fork. Spicy Salsa Verde
  • In a food processor, combine chopped peeled tomatillos, peeled and seeded avocados, snipped fresh cilantro leaves, chopped onion, and seeded and chopped fresh jalapeno chile pepper. Cover and pulse with several on/off turns until all ingredients are finely chopped. Transfer to a medium bowl. Stir in water, lime juice, sugar, and teaspoon salt. Cover and chill for 2 hours to 3 days.

  • Stir in rice, cover, and cook at medium-low for 10-12 minutes.
  • Stir in spinach and cilantro; cook on low until rice is tender (4-5 minutes.) Remove from heat, fluff rice, and let stand for 5-10 minutes before serving.

GREEN RICE (ARROZ VERDE)

There are many ways to make arroz verde, but most have something in common: a brightness and depth from the addition of plenty of fresh green ingredients, such as chiles and herbs. This recipe toasts the rice in oil first, then seasons it with a purée of onion, poblano, jalapeños and herbs. For a more complex dish, replace the cooking water with chicken stock or vegetable stock, and serve it with a side of soupy black beans.

1 cup long-grain white rice, such as jasmine
1/4 cup olive oil
1/2 cup roughly chopped white onion (about half a small onion)
1/2 cup roughly chopped poblano pepper, stemmed and seeded (about half a large poblano)
1 jalapeño, stemmed, seeded and roughly chopped
2 cloves garlic, peeled
1/2 cup cilantro leaves
1/4 cup parsley leaves
1 teaspoon kosher salt, plus more to taste
1 1/4 cups chicken stock or water
1 lime, halved, to serve

Steps:

  • Rinse the rice a few times, until the water that drains from it runs almost completely clear. Set aside to drain well. Put the onion, poblano, jalapeño, garlic, cilantro, parsley and salt in a food processor with a splash of the measured stock or water if needed, to help the blades catch the ingredients and break them down. Purée until smooth.
  • Heat oil in a medium, heavy-bottomed pot over medium-high heat, then add the rice and stir well. When the grains are dry and toasted, and some are starting to color, about 5 to 10 minutes, add the mixture from the blender along with the remaining stock or water.
  • When the liquid comes to a rolling boil, give it a good stir, scraping at the bottom of the pot. Put a lid on the pot and turn the heat down to low. Cook for 15 minutes, then turn off the heat and let the rice rest for another 15 minutes before opening the lid. The green purée will have settled on the top of the rice, so gently mix it in as you stir and aerate the rice with a spatula. Taste, season with salt and serve with a wedge of lime.

1 cup packed fresh cilantro leaves
1/2 cup packed fresh parsley leaves
1/4 white onion, chopped
1 garlic clove, minced
Coarse salt and ground pepper
1 teaspoon extra-virgin olive oil
1 cup long-grain white rice
1 tablespoon fresh lime juice, plus lime wedges for serving (optional)

Steps:

  • In a blender, combine cilantro, parsley, onion, garlic, and 1 3/4 cups water. Season with salt and pepper and blend until smooth, 15 seconds.
  • In a medium saucepan, heat oil over medium-high. Add rice and stir to coat. Add herb mixture and bring to a boil. Reduce to a simmer, cover, and cook until water is absorbed, about 15 minutes. Remove pan from heat and let sit, covered, 5 minutes. Add lime juice and fluff with a fork. Serve rice with lime wedges if desired.

Roasted poblano peppers are the key to this authentic Mexican Green Rice. I've also been adding a handful of spinach to it lately. So good!

1 cup rice
2 poblano peppers
10-15 sprigs cilantro
1 handful spinach (optional)
1/2 onion
1 garlic clove
2 cups stock
1/2 teaspoon salt
olive oil

Steps:

  • Roast the poblano peppers in the oven for 20-25 minutes. You can flip them over halfway through the roasting period if you want.
  • De-stem and de-seed the poblanos. Add them to a blender along with 10-15 sprigs of cilantro, a handful of spinach, 1/2 onion, and 1 garlic clove. Combine well.
  • Add a dollop of oil to a saucepan over medium heat. Add 1 cup of rice and cook until opaque and starting to turn golden brown, stirring regularly. This should only take a couple minutes so keep an eye on it to prevent burning.
  • Add the blender puree to the rice and cook for a couple minutes, stirring regularly. Add 2 cups of stock and 1/2 teaspoon of salt. Stir well, bring to a boil, then reduce heat to a simmer and let cook until all of the liquid is absorbed, approximately 15-20 minutes.
  • Remove from heat. Give a stir and cover the rice, letting it sit in its own steam for a few minutes.
  • Take a final taste for salt level, adding more if necessary. Serve immediately and store leftovers in an airtight container in the fridge.

2 roasted poblano peppers, stems, seeds and skin removed
1 roasted jalapeno pepper, stem, seeds and skin removed
1/2 cup chopped fresh cilantro leaves, divided
Kosher salt
2 tablespoons vegetable oil
1 Spanish onion, finely diced
4 garlic cloves, peeled and finely chopped
1 1/4 cups long-grain rice

Steps:

  • Combine the broth and chiles in a medium saucepan, bring to a boil, and then partially cover and simmer gently over medium to medium-low heat for about 10 minutes. Pour the chile mixture into a food processor, add 1/4 cup cilantro and process to a smooth puree. Season with salt and keep warm.
  • Wipe the pan clean, add the oil, and heat over medium-high heat. Add the onions and cook until soft. Add the garlic and cook for 1 minute. Stir in the rice and cook for 1 minute. Add the warm broth mixture, stir, and season with salt. Bring to a boil, cover, and then reduce the heat to medium-low and cook for 15 minutes. Remove from the heat and let sit for 5 minutes, covered. Fluff with a fork, transfer to a bowl, and stir in remaining cilantro.

5 poblano peppers, halved and seeded
3 ½ cups chicken broth, divided
½ small onion
1 clove garlic
2 tablespoons vegetable oil
1 ½ cups uncooked white rice
1 sprig fresh epazote leaves
salt to taste

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place poblano peppers cut-side down on the prepared baking sheet.
  • Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and tightly seal with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins.
  • Combine 4 poblano peppers, 1 cup chicken broth, onion, and garlic in a blender; blend until smooth.
  • Heat oil in a saucepan over medium heat and fry the rice, stirring continuously, until evenly browned, 3 to 5 minutes. Add poblano chile mixture and remaining 2 1/2 cups chicken broth, epazote, and salt. Bring to a boil, cover, reduce heat to low, and cook until rice is soft and all the liquid has been absorbed, 20 to 25 minutes.
  • Slice remaining poblano chile and serve as a garnish with the rice.

1 tablespoon unsalted butter
1/2 small white onion, chopped
1 cup long grain white rice
1 1/2 cups water
1/2 teaspoon salt
1/2 cup fresh cilantro leaves, minced

Steps:

  • Set rice cooker to Quick Cook or regular/Brown Rice cycle.
  • Place the butter in the rice bowl.
  • When melted, add the onion.
  • Cook stirring, until onion is softened and translucent, about 5 minutes.
  • Add rice, water, salt and cilantro to the rice cooker bowl.
  • Stir to combine.
  • Close the cover and reset for the regular/Brown Rice cycle, or allow the regular/Brown Rice cycle to complete.
  • When the machine switches over to the Keep Warm cycle, let the rice steam for 15 minutes.
  • Fluff rice with wooden or plastic rice paddle, or wooden spoon.
  • This rice will hold on Keep Warm for up to 1 hour.
  • Serve hot.
