- Place the rice and cinnamon stick in a large glass bowl and add the 4 cups of hot water. Cover the bowl with a dish or plastic wrap, then let it soak overnight, or at least 8 hours. *Please see NOTES
- The next day, pour the rice, cinnamon, and water into your blender and process until it becomes a smooth, watery paste.
- Using a strainer or sieve, strain the mixture into a wide mouth pitcher, stirring to help the liquid pass through.
- Add the milk (if using), vanilla extract, and the rest of the water. Stir in the sugar, adjusting the amount to fit your taste. Let the drink chill in the refrigerator. Stir the Horchata before serving, since the rice mix tends to settle at the bottom. Serve in glasses with ice cubes.

MEXICAN HORCHATA: RICE AND ALMOND DRINK
Horchata is one of Mexico's most common agua frescas: an easy-to-make rice flavored drink that offers up all sorts of great combos. Lately I've been adding coconut milk to it -- yum!

Steps:
- Add 1 cup white rice to a blender or food processor and grind it as fine as you can.
- Add 3/4 cup raw almonds, 1 cinnamon stick, 1/4 cup sugar and only 4 cups of warm water. Blend together.
- Let this mixture sit overnight in the fridge.
- The next day, give it another blend and then add 4 cups of cold water and another 1/2 cup sugar. Combine well and taste for sweetness, adding more sugar if needed.
- Strain the mixture and discard the leftover solids. Using a fine mesh sieve works but you can also add a few layers of cheesecloth to it if you want.
- Serve immediately over ice and optionally add a final dash of cinnamon.

ALMOND MILK HORCHATA
This is not your traditional horchata recipe by any means. Our family was craving horchata so I searched this site for recipes but they were all so labor intensive. I was inspired to create an easy version and I think I succeeded. I hope you enjoy it as much as we do! It's like heaven in a glass - so sweet and creamy that it could even be served as a dessert! This is more of a Spanish version with the almond flavoring. K

- Mix rice milk, almond milk, and condensed milk together in a gallon jug. Add vanilla and almond extracts and mix again. Pour about 2 cups into a bowl; add cinnamon and whisk well until mostly combined.
- Pour cinnamon mixture back into the jug and stir to combine. Add cinnamon sticks and refrigerate for at least 4 hours; overnight is best. Stir before serving over ice.

- Process the rice in a blender until it's like a fine powder. Transfer to a bowl and add the almonds, cinnamon, and lime zest. Add 2 1/4 cups hot water (not boiling), cover, and let stand overnight (or at least for 6 hours).
- Add the mixture to a blender and process for 3-5 minutes until smooth. Add 2 cups water and blend for a few seconds more. Set a strainer over a bowl and line it with three layers of dampened cheesecloth.
- Pour in the mixture in batches stirring to help it pass through. When you will strain all the liquid, gather up the corners and twist them together, squeezing firmly to get all the remaining goodness.

- Drain the water from the almonds and let the almonds cool down slightly. Remove the almond skin from all of the almonds (they just need a little squeeze and the skin comes right off).
