My Mom found this recipe in the local newspaper years ago. Now I make this for my family! The cinnamon makes it yummy!

1/2 cup unsalted butter
1/2 cup vegetable oil
4 tablespoons cocoa
1 cup water
2 cups flour
1 teaspoon baking soda
2 cups sugar
1/2 cup sour milk (place 1 ½ teaspoons vinegar in a half cup measuring cup and fill cup with milk to equal ½ cup)
2 eggs
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup butter
2 tablespoons cocoa
6 tablespoons milk
1 (1 lb) box powdered sugar
1 teaspoon vanilla
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F.
  • Combine butter, oil, cocoa and water in a saucepan and heat until butter is melted.
  • In a large mixing bowl, combine flour, baking soda, sugar, milk, eggs, cinnamon and vanilla.
  • Add melted butter mixture to the flour mixture and blend.
  • Pour batter into a greased 9X13X2-inch baking pan and bake 20-25 minutes or until done.
  • While cake is still hot, ice cake.
  • For icing, combine butter, cocoa and milk in a saucepan and heat until bubbly around the edge.
  • Remove from heat and add powdered sugar, vanilla, and pecans.

2 cups sugar, divided
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 -2 tablespoon cinnamon
3 small eggs
1/2 cup buttermilk
1 cup butter
6 ounces bittersweet chocolate
1/2 cup cocoa powder
2/3 cup espresso or 2/3 cup strongly brewed coffee
2 tablespoons vanilla extract
1/4 teaspoon almond extract

Steps:

  • Preheat oven to 350°; grease and flour 12 mini-bundt forms and set aside (if you only have a Mini-Bundt pan with six cavities, bake this recipe in two batches).
  • In a bowl, whisk the flour, 1 cup sugar, baking soda, salt, cayenne, and cinnamon together; set aside.
  • Beat eggs and buttermilk together and set aside.
  • Melt butter and chocolate together in the top of a double boiler or in a metal bowl suspended over simmering water; make sure that the bottom of the bowl does not touch the water.
  • Add in cocoa powder and espresso; stir until thoroughly combined.
  • Add the egg mixture to the chocolate mixture.
  • Stir in the remaining 1 cup sugar, vanilla, and almond extract.
  • Stir the wet ingredients into the dry ingredients; mix until thoroughly combined and any lumps are dissolved.
  • Pour the batter into the prepared Mini-Bundt pans.
  • Bake for 20 minutes exactly; let the bundts cool for 10 minutes before inverting them onto a wire rack to finish cooling.
  • Delicious served plan or with a dollop of whipped cream or chocolate whipped cream.

Steps:

  • Heat oven as directed on box. Place paper baking cup in each of 24 regular-size muffin cups.
  • In large bowl, beat cake mix, 2 teaspoons cinnamon, the milk, oil, vanilla and eggs with electric mixer on low speed 30 seconds. Beat on high speed 2 minutes. Divide batter evenly among muffin cups, filling each about two-thirds full.
  • Bake cupcakes and cool completely as directed on box.

Being a big fan of Mexican hot chocolate, I just love the slight accent flavor of cinnamon in chocolate. This recipe for chocolate cake evolved with experimentation as I figured out how to achieve a light fluffy cake and infused it with a hint of coffee and cinnamon. Coffee enhances the flavor of cocoa powder, resulting in a more chocolaty cake. Cocoa powder is bitter on its own, with hints of fruit and spice that are detectable when you get a good-quality cocoa. Coffee has these same flavor elements, and a small amount of coffee in the batter will help these cocoa flavors stand out even more than they would on their own. Cinnamon adds another layer of richness that complements the underlying spice flavors in cocoa. Add a dollop of blackberry preserves in the center of the cupcakes.

½ cup brown sugar
¼ cup butter, at room temperature

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
  • Beat white sugar, brown sugar, and butter together in the bowl of a stand mixer until thoroughly blended and creamy. Add egg; beat well. Mix in 1 teaspoon vanilla extract.
  • Combine flour, 2/3 cup cocoa powder, baking powder, coffee, salt, baking soda, and cinnamon in a second bowl. Blend with a whisk until fluffy and no clumps appear.   • Fit a piping bag with a coupler and tip. Drop piping bag into a tall glass and fold edges down around the glass. Spoon frosting into the bag. Gather edges and twist together. Pipe frosting onto the cupcakes.
