2 teaspoons vegetable oil
1 cup uncooked rice
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
3/8 teaspoon garlic powder
1/8 teaspoon onion powder
1/8 teaspoon oregano
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups low sodium chicken broth (I use Herbox Sodium Free)
1 (14 1/2 ounce) can no-salt-added diced tomatoes
1 (15 ounce) can no-salt-added vegetables

Steps:

  • In a stock pot heat oil till hot.
  • Add uncooked rice and saute until the rice looks clear (usually 2 - 3 minutes).
  • Add seasonings, chicken broth, diced tomatoes and mixed vegetables and turn heat up to high. Stir well and bring to a boil.
  • Turn heat to low. Cook covered for 20 minutes.

⅔ cup diced onion
1 ½ cups uncooked white rice
1 cup chopped green bell pepper
1 teaspoon ground cumin
1 teaspoon chili powder
1 ½ (8 ounce) cans tomato sauce
2 teaspoons salt
1 clove garlic, minced
⅛ teaspoon powdered saffron
3 cups water

Steps:

  • In a large saucepan, heat vegetable oil over a medium-low heat. Place the onions in the pan, and saute until golden.
  • Add rice to pan, and stir to coat grains with oil. Mix in green bell pepper, cumin, chili powder, tomato sauce, salt, garlic, saffron, and water. Cover, bring to a boil, and then reduce heat to simmer. Cook for 30 to 40 minutes, or until rice is tender. Stir occasionally.

1 Medium Onion (chopped)
1 Medium Red Bell Pepper (chopped)
1 12 oz Can of Crushed Tomatoes (no salt added or the lowest sodium you can find)
2 cups Long Grain White Rice (uncooked)
2 cups water

Steps:

  • In a large skillet (with lid) or dutch oven heat the oil 2. Add the rice, peppers, and onion and saute until the rice browns and the peppers and onions are tender 3. Stir in the tomatoes and water. 4. Add the cumin, paprika, and chili powder 5. Bring to a boil, then cover the pot/pan and reduce heat to a simmer. 6. Allow to simmer for 30 minutes or until the Rice has absorbed the liquid, stirring occasionally to keep the rice from sticking to the pot/pan.
