1 cup fresh orange juice
1/4 cup fresh lime juice
5 canned chipotle chiles, minced plus
1 tablespoon juice (see note)
4 cloves garlic, minced (4 tsp)
1 teaspoon freshly grated orange zest
2 teaspoons dried oregano
1 teaspoon cumin seed
2 tablespoons wine vinegar
1/2 teaspoon fresh ground pepper
1/2 teaspoon salt

Steps:

  • Combine the orange juice and lime juice in a saucepan and boil until only 1/2 cup liquid remains.
  • Place this and the remaining ingredients in a blender and purée to a smooth paste.
  • Spread this paste on the food to be marinated.
  • Marinate seafood for 2 hours, poultry for 4 hours, and meat overnight, turning once or twice.
  • Marinated food may be sautéed on the stove top, broiled on a charcoal grille, or roasted or broiled in the oven.
  • Makes 1 cup of marinade, enough for 1 1/2 to 2 pounds of seafood, poultry or meat.

6 canned chipotle chiles with 2 tablespoons canning juices
5 cloves garlic, peeled
1 strip orange zest (2 x 1/2 inches removed with a vegetable peeler)
1 cup orange juice, fresh and sour or 3/4 cup fresh orange juice and 1/4 cup fresh lime juice
1 tablespoon tomato paste
2 teaspoons oregano, dried
1 teaspoon cumin, ground
2 tablespoons red wine vinegar
1 teaspoon salt
1/2 teaspoon black pepper, freshly ground

Steps:

  • 1. Combine all the ingredients in a medium-size saucepan. Bring to a boil over high heat and boil until reduced by half, 5 to 8 minutes.2. Place the mixture in a blender or food processor and process to a smooth paste. Store, tightly covered in the refrigerator, for up to 3 days.Makes about 1 cup enough to marinate 3 pounds meat or chicken

You can use any meat with this marinade. I have tried it with beef, pork, and even seafood. This recipe is directly from the Founder, CEO, and Chef of Chipotle Mexican Grill. I hope you enjoy it as much as I do!

1 (2 ounce) package dried ancho chiles (or dried pepper of choice)
1 teaspoon black pepper
2 teaspoons cumin powder
2 tablespoons fresh oregano, chopped
6 garlic cloves
1/2 red onion, quartered
1/4 cup vegetable oil
2 lbs skirt steaks

Steps:

  • Soak dry chiles in water overnight or until soft. Remove seeds. Add all ingredients except meat in food processor. Puree until smooth.
  • Spread mixture over meat and refrigerate at least one hour, up to 24 hours.
  • Heat grill to about 400 degrees, or if cooking inside heat small amount of oil in skillet or grill pan over high heat. Salt meat to taste. Grill meat about 4 minutes per side, depending upon thickness, until done.
