CRISPY CHICKEN SANDWICHES

4 chicken cutlets
1 cup buttermilk
1/2 lemon, sliced
1 teaspoon kosher salt
Olive oil cooking spray, for the baking sheet
4 slices prosciutto
1/4 cup mayonnaise
2 tablespoons store-bought pesto
1/2 cup all-purpose flour
1/2 cup plain breadcrumbs
1/2 teaspoon kosher salt
1/2 cup grapeseed oil
4 slices mozzarella
4 potato buns, toasted
1/2 cup baby arugula

Steps:

  • For the chicken: Combine the chicken, buttermilk, lemon and salt in a resealable plastic bag. Seal the bag and toss to coat. Place in the refrigerator and marinate for at least 6 hours or up to overnight.
  • For the crispy prosciutto: Preheat the oven to 350 degrees F.
  • Spray a rimmed baking sheet with olive oil cooking spray. Lay the prosciutto flat on the baking sheet and spray with a few more spritzes. Bake until lightly toasted and crispy, about 10 minutes. Allow to cool slightly on the baking sheet, then transfer to a rack to cool completely.
  • For the mayo: Mix together the mayonnaise and pesto in a small bowl. Refrigerate until ready to use.
  • For the sandwiches: Mix together the flour, breadcrumbs and salt in a shallow bowl. Heat a large skillet over medium-high heat. Add the grapeseed oil to cover the bottom of the skillet. Remove the chicken from the buttermilk, removing as much of the buttermilk as possible, and dredge in the flour mixture. Place immediately in the hot oil. Repeat with the remaining chicken. Fry on the first side until golden brown and there is a ring of cooked chicken around the edges, about 5 minutes. Gently flip the chicken and continue to cook on the second side until evenly golden brown and cooked through, an additional 4 minutes. Place a slice of mozzarella on top of each and cover the pan for an additional minute to melt the cheese. Alternatively, you can remove the chicken to a small baking tray, top with the mozzarella and place under the broiler until melted and bubbly, about 2 minutes. Repeat with the remaining chicken.
  • Spread the cut sides of the buns evenly with pesto mayonnaise. Place a small amount of arugula on the bottom halves and top with a cutlet. Break a slice of crispy prosciutto on top. Close the sandwiches and enjoy.

Here is a quick spiced up chicken salad mix. I fix this when I need something fast but still want something yummy.

2 (10 ounce) cans chicken breasts (Drain liquids)
4 hard-boiled eggs, diced (I only use half of the yolks to cut down on cholesterol)
1 -1 1/2 cup mayonnaise (I use light)
1 tablespoon dill relish
1/2 small onion, finely chopped
1 whole jalapeno, finely chopped
3 slices of cooked chopped bacon (I use the pre-cooked bacon, and just crisp in the microwave for 30-40 seconds right before you add i)
salt and pepper
paprika

Steps:

  • While the eggs are boiling, drain cans of chicken and seperate chicken pieces in a medium size mixing bowl.
  • Add mayo, onions, relish, jalapeno, and seasonings.
  • Add diced eggs and warm bacon.
  • Mix well and serve on warm toasted bread (whatever your favorite kind is).
  • Salad mix canned be topped with lettuce leaves for added crunch and flavor.

1 (18 ounce) can of cooked white meat chicken, broken up and shredded (by hand or fork)
1 tablespoon mayonnaise (regular or light is fine)
1 tablespoon Dijon mustard
1 small granny smith apples or 1 small equally tart and crisp apple, diced into small pieces
1/2 cup raisins or 1/2 cup dried cranberries
1 stalk celery, diced into small pieces
1 teaspoon pepper

Steps:

  • Combine all ingredients into large bowl and refrigerate for 1-4 hours.
  • I like to serve on sweet Hawaiian bread or toasted whole wheat.

This Ohio potluck staple tends to be made with canned chicken, cream of mushroom soup, saltine crackers, and other iffy components. I developed this version using real ingredients so you can enjoy the warm comfort of shredded chicken sandwiches in a healthier, more delicious way.

¼ cup slivered almonds
2 slices white bread, torn into pieces
2 tablespoons olive oil
salt and ground black pepper to taste
3 (5 ounce) skinless, boneless chicken breast halves
6 cups chicken broth, or as needed
2 tablespoons salted butter
4 large roll or bun (3-1/2" dia)s brioche buns, halved

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Pulse almonds in the bowl of a food processor to fine crumbs. Add bread, oil, salt, and pepper and pulse mixture to coarse crumbs. Spread evenly on a rimmed baking sheet.
  • Bake in the preheated oven for 10 minutes, stirring halfway through. Set aside to cool.
  • Season chicken with salt and pepper, then place in a Dutch oven or deep skillet in a single layer and cover with chicken broth. Bring to a boil over medium heat, skimming foam. Reduce heat to low, cover, and simmer until no chicken is no longer pink in the center, 10 to 14 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken and let cool a bit on a cutting board, then shred with two forks.
  • Strain chicken broth to remove solids.
  • Return chicken to the pot, then add bread crumb mixture and 4 cups chicken broth. Boil over medium heat, adding more broth if necessary, until mixture reduces and reaches desired consistency, about 20 minutes. Season with salt and pepper.
  • Melt butter in a skillet over medium-low heat. Toast flat sides of buns until golden brown, 1 to 2 minutes. Fill with a generous scoop of chicken mixture and serve.
