FANTASTIC MEXICAN DIP



Fantastic Mexican Dip image

This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.

2 pounds lean ground beef
1 (16 ounce) jar taco sauce
1 (16 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
1 (1 ounce) package taco seasoning mix
1 (16 ounce) package shredded Cheddar cheese
1 cup shredded lettuce
1 tomato, cubed
2 green onions, sliced
1 (2 ounce) can sliced black olives, drained

Steps:

  • Crumble ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, mix in the taco sauce and set aside.
  • In a large bowl, mix the sour cream, cream cheese and taco seasoning mix. Spread the mixture into a medium serving dish.
  • Layer the sour cream mixture with beef mixture, Cheddar cheese and lettuce. Top with tomato, green onions and black olives.

2 (8 ounce) packages cream cheese, softened
2 lemons, juiced
1 lime, juiced
½ green onion, chopped
dried dill weed to taste
salt and pepper to taste
1 (12.5 ounce) can water-packed tuna, drained and flaked
1 teaspoon olive oil

Steps:

  • In a medium bowl, mix cream cheese, lemon juice, lime juice, green onion, dill weed, salt and pepper. Blend until smooth. Mix in the tuna and olive oil. Cover and chill in the refrigerator approximately 25 minutes.

I just came back from a fabulous trip to Los Cabos and ate at this restaurant that served this delicious dip that they called "Tuna Dip." They just told me it had canned tuna in it and wouldn't tell me anything else. So I came home and experimented and the result is almost exactly the same!

1 (5 ounce) can tuna, packed in water
1/4 cup mayonnaise
1/4 cup onion, chopped
1/2 cup salsa, any heat you like, I prefer hot
1 tablespoon lemon juice

Steps:

  • Squeeze water out of the tuna.
  • Place all ingredients in a food processor and puree.
  • If you like your dip a little thinner, then add more salsa. If you like it a little spicier, add some hot sauce. If you want it thicker, add a little more mayonnaise. I've tried it all -- this recipe is very easy to adjust and it's delicious!
  • Serve with a good quality restaurant style tortilla chips.

2 cans tuna (6 oz / 170 gr each)
2 packages cream cheese (7 oz / 200 gr each)
3 pickled japaleño chilies
3 Tbsp pickled jalapeños brine
1 lime (juice)
salt and pepper (to taste)

Steps:

  • Add cream cheese into a food processor or blender.
  • Drain tuna and add it to the blender.
  • Add jalapeño peppers (read notes), brine, pinch of salt, and pepper.
  • Add the juice of half a lime and then blend until smooth.
  • Taste and add more jalapeño peppers if you want, blending between additions.
  • Adjust salt, lime juice, and pepper to taste.
  • Transfer to a bowl and serve (check notes).

1 -2 jalapeno chile, seeded and stemmed
1 green onion, green part only
1 piece celery

  • Blend tuna, jalapenos, green onion and celery in food processor or blender. Do not puree. Blend in mayonnaise and salt & pepper to taste. Blend to desired consistency. Sprinkle with cilantro.
