1 large, ripe avocado, chopped
2 cups chicken stock
2 tablespoons freshly-squeezed lemon juice
Salt
Tabasco pepper sauce
2 tablespoons freshly-squeezed lime juice
1 chile pepper, seeded and minced
1 small tomato, peeled, seeded and diced very small
1 tablespoon minced fresh cilantro, plus extra sprigs, for garnish
1 tablespoon minced fresh chives
1 tablespoon olive oil
3/4 pound fresh white fish fillets, such as red snapper, halibut or sea bass, sliced into 3/16-inch strips

Steps:

  • In a blender combine avocado, stock and lemon juice and process for several minutes to a smooth puree; season to taste with salt and Tabasco pepper sauce. Refrigerate, covered, for at least 1 hour until well chilled.
  • In a nonreactive bowl combine lime juice, chile, tomato, cilantro and chives. Slowly whisk in oil; season to taste with salt and Tabasco pepper sauce. Stir fish into marinade, cover and refrigerate for 60 minutes. Remove from refrigerator and let sit 15 minutes at room temperature.
  • To serve, ladle soup into a large shallow soup bowl. Remove fish from marinade with a slotted spoon and mound in center of plate. Garnish with cilantro or dill sprigs and serve immediately.

Washington, DC's renowned chef-owner of Citronelle has a special relationship with seafood: He was born in Brittany on the northwest coast of France. Chef Michel Richard has been decorated with nearly every cooking award, including the James Beard award, and he is known for combining fresh California ingredients with traditional French cooking. This recipe, a simplified take on a traditional French bouillabaisse, is sure to satisfy.

Number Of Ingredients 9

4 ounces small boiling (waxy) potatoes, peeled and cut into 1/2" cubes
1 cup clam juice
1/2 cup heavy cream
1/4 teaspoon saffron threads, crushed and dissolved in 2 tablespoons boiling water
Salt and freshly ground black pepper to taste
8 ounces medium crayfish, peeled and deveined
1 pound flounder fillet, trimmed and cut into 1/3" strips
8 ounces squid, cleaned and cut into 1/2" slices
1 small tomato, peeled, seeded, and diced

Steps:

  • Set a steamer over a medium saucepan of water and steam the potatoes for about 10 minutes, or until tender and easily pierced with a knife. (This can be prepared ahead, covered, and set aside at room temperature.)
  • Place a large, heavy, nonstick skillet over medium heat and add the clam juice, cream, and saffron. Bring to a gentle simmer. Add the potatoes and season with salt and pepper. Bring the clam juice mixture to a boil, add the crayfish and flounder, reduce the heat, and simmer gently for about 2 minutes, or until the crayfish just start to turn pink, turning the seafood halfway through using tongs. Add the squid and cook for about 1 minute, or until opaque.
  • Using a slotted spoon, divide the seafood and potatoes among 4 warmed soup bowls. Quickly bring the clam juice mixture to a gentle simmer. Ladle over the seafood. Sprinkle with tomato. Serve immediately.

1 1/2 pound squid, cleaned
3/4 pound skinless, boneless monkfish (see note)
1 pound skinless, boneless codfish (see note)
1/4 cup olive oil
2 tablespoons finely minced garlic
1 3/4 cups finely chopped onions
1 1/2 cups finely diced, cleaned leeks, both white and green part
2 cups cubed fresh, red ripe tomatoes or use imported canned tomatoes, drained
Salt to taste, if desired
Freshly ground pepper to taste
1/2 teaspoon dried saffron stamens
3 tablespoons tomato paste
1/2 cup dry white wine
1 bay leaf
1/2 teaspoon dried thyme
1 teaspoon fennel seeds, crushed
4 cups water or unsalted fish broth
1/2 cup finely chopped parsley
2 hot dried red peppers

Steps:

  • Cut the body of the squid into half-inch circles. Cut the flat portions of the squid into 1 1/2-inch squares. Cut tentacles into bite-size portions. There should be about three cups.
  • Cut the fish into 1 1/2-inch squares. There should be about 1 1/2 cups monkfish, 2 to 2 1/2 cups cod.
  • Heat the oil in a casserole or Dutch oven and add the garlic and onions. Cook, stirring, until onion is wilted. Add the leeks and tomatoes. Bring to a boil, stirring. Add salt and pepper to taste.
  • Add the saffron, tomato paste, wine, bay leaf, thyme and fennel seeds. Stir and bring to a boil.
  • Add squid and monkfish and water. Add half of the parsley and the red peppers. Bring to a boil and let boil 10 minutes. The fish should boil rather than simmer. Add cod and reduce heat. Let soup simmer about two minutes, no longer. Serve with remaining parsley sprinkled over each serving.

1/4 pound slab bacon, cut into 1/4- by 1/4- by 1/2-inch pieces
1 tablespoon olive oil
1 tablespoon medium-hot paprika
1 cup chopped onion (about 1/2 large onion)
3 cloves garlic, smashed and peeled
1/2 cup dry white wine
2 cups fish broth (see Micro-Tips)
3 strips dry lasagna noodles, about 2 ounces, broken across into 1-inch pieces
8 littleneck clams (about 1 pound), scrubbed
1/2 cup tomato puree
4 mussels, scrubbed and debearded
1 cup canned pink beans, drained and rinsed
1/2 pound squid, cleaned, bodies sliced into rings, tentacles quartered, OR 1/2 pound bay scallops
Pinch dried sage
Pinch dried thyme
Pinch freshly ground black pepper

Steps:

  • Place bacon in a 5-quart casserole. Cover loosely with paper toweling. Cook at 100 percent power for 7 minutes. Remove from oven and uncover.
  • Remove bacon with a slotted spoon to paper toweling to drain; set aside. Pour off most of the fat from casserole, leaving about 1 tablespoon behind. Add oil and paprika and stir to make a paste. Mound in the center of casserole. Cook, uncovered, for 2 minutes.
  • Remove from oven. Add onion and garlic and toss to coat. Cook, uncovered, for 2 minutes 30 seconds. Stir in wine, 1 1/2 cups of the fish broth and lasagna pieces. Cover securely with microwave plastic wrap or with a tightly fitting lid and cook for 5 minutes.
  • If using plastic, prick plastic to release steam. Remove from oven and uncover. Arrange clams, hinge-end down around the inside edge of the dish. Re-cover and cook for 5 minutes or until clams open. Prick plastic to release steam.
  • Remove from oven and uncover. Stir in tomato puree and arrange mussels, hinge-end down, in the center of the dish. Cover and cook for 5 minutes, or until mussels open.
  • If using plastic, prick to release steam. Remove from oven and uncover. Add remaining ingredients and stir to combine. Cover and cook for 4 minutes or until squid is opaque. Remove from oven and uncover. Stir in bacon pieces and serve.
