MICROWAVE SCRAMBLED EGGS
Scrambled eggs have long been a staple for most breakfasts, and most people add assorted ingredients to make their eggs extra fluffy, but this recipe is your basic scrambled eggs with just salt and pepper. If you want to add anything, add butter. Unlike milk, which will dilute the flavor and cause rubbery eggs, butter will make them creamy. Don't want to microwave them? Cook them on the stovetop over medium heat.

- Spray a large glass bowl with cooking spray. Crack 1 egg into a small ramekin and then pour into the bowl. Whisk egg. Repeat with remaining eggs, whisking well after each addition.
- Cook eggs in a microwave oven for 30 seconds; remove from oven and stir. Continue cooking in 30-second intervals, stirring after each, until eggs are almost set, about 3 minutes total. Season with salt and pepper.

SCRAMBLED EGGS IN THE MICROWAVE (GREAT FOR WORK!)
I can only eat so much oatmeal and peanut butter toast without getting bored. I started making scrambled eggs in the microwave to break up the breakfast monotomy at work! I serve these alongside a piece of whole wheat toast and a glass of vegetable juice. In order to cut down on unhealthy cholesterol but keep the healthy protein, I use only one egg yolk; three works fine too (just increase the water [or milk] to 3 T). I'll sometimes make these at home when I need a quick breakfast.

- In an 8x1 1/2 inc. round baking dish, break up sausage. Microwave, uncovered, on high 3-5 minute or until meat loses its pink color, stirring once during cooking. Drain sausage, reserving 2 Tb drippings; place sausage on paper toweling.
- Microwave green onions in reserved drippings in the baking dish, uncovered, on high 1 minute
- In a large mixing bowl combine eggs, sour cream, milk, salt, mustard, and pepper; pour over onion in baking dish. Microwave, uncovered, on high 5-7 minute or until eggs are almost set, pushing cooked portions to center of dish several times during cooking.
- Top eggs with sausage; sprinkle with cheese. Microwave on medium 3-6 minute or until cheese is melted.
- Cut into wedges. Makes 6 servings.
