Yummy and easy shells, stuffed with garlic, thyme, mushrooms, and spinach ricotta. Perfect for a weeknight dinner! Add more cheese or any kind of meat! A lamb/pork mixture is really good; get a nice sear on it and add it to the spinach and mushroom (sans ricotta) maybe some goat cheese? Have fun with it!

24 lumaconi pasta shells
3 tablespoons olive oil
1 (8 ounce) package button mushrooms, chopped
3 cloves garlic
1 (10 ounce) bag baby spinach
2 teaspoons ground thyme
salt and ground black pepper, to taste
2 cups ricotta cheese
¾ cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 (28 ounce) jar pasta sauce
¼ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta shells in boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes; drain.
  • Heat olive oil in a large skillet over medium-high heat. Cook and stir mushrooms and garlic in hot oil until mushrooms are soft, about 7 minutes. Stir spinach and thyme into the mushroom mixture; season with salt and pepper. Cook and stir the mixture until the spinach wilts. Remove the skillet from heat and drain any excess liquid; transfer drained mixture to a large bowl.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix ricotta cheese, 3/4 cup mozzarella cheese, and 1/2 cup Parmesan cheese with the spinach mixture; season again with salt and pepper and stuff into pasta shells.
  • Arrange stuffed shells into a 9x11-inch baking dish. Pour pasta sauce over the shells; top with 1/4 cup mozzarella cheese and 1/4 cup Parmesan cheese.
  • Bake in preheated oven until the cheese is melted and the shells are hot, about 30 minutes.

1 teaspoon Italian seasoning
1/2 teaspoon fennel seed
1/4 teaspoon salt

2 cups sliced fresh mushrooms
1 medium onion, chopped (1/2 cup)
4 cloves garlic, finely chopped
1 cup fat-free cottage cheese
1/4 cup fat-free egg product
2 cups tomato pasta sauce
1/4 cup shredded Parmesan cheese

Steps:

  • Heat oven to 350°F. Cook and drain pasta as directed on package, omitting salt.
  • Meanwhile, in 10-inch nonstick skillet, cook turkey, Italian seasoning, fennel, salt and pepper over medium heat 8 to 10 minutes, stirring occasionally, until turkey is no longer pink; remove turkey mixture from skillet.
  • In same skillet, cook mushrooms, onion and garlic over medium heat 6 to 8 minutes, stirring occasionally, until vegetables are tender. Stir turkey mixture, cottage cheese and egg product into mushroom mixture.
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spoon about 1 tablespoon turkey mixture into each pasta shell. Place in baking dish. Spoon pasta sauce over shells.
  • Cover with foil. Bake 20 to 25 minutes or until hot. Sprinkle with Parmesan cheese.

1 (26 ounce) jar spaghetti sauce

Steps:

  • Cook shells according to package directions. Place in cold water to stop cooking. Drain.

1 cup canned chicken
1/8 cup saltine crackers, crushed (1/8 package)
2 tablespoons white wine
5 ounces conchiglioni pasta, cooked (16 shells)
1/4 cup parsley
2 scallions
1/4 lb mushroom, sauteed
2 tablespoons parsley
1/2 teaspoon celery salt
1/2 cup parmesan cheese
1 tablespoon paprika

Steps:

  • Crumble sausage into casserole. Add scallions. Nuke on HIGH 3-4 minutes. Pour off fat. Stir in chicken, sauteed mushrooms, crumbs, wine, parsley, and celery salt. Mix well. Stuff 16 shells and place four in each gratin dish.

½ lb medium pasta shells
1 tablespoon olive oil
1 lb ground beef
1 medium onion, finely chopped
2 cloves garlic, minced
2 teaspoons italian seasoning
1 teaspoon salt
2 teaspoons nutmeg
2 teaspoons pepper
2 tablespoons flour
2 cups beef stock
1 can tomato sauce
1 tablespoon tomato paste
¾ cup heavy cream
2 cups shredded cheddar cheese

Steps:

  • In a large pot of boiled salted water, cook the pasta according to package instructions and drain. Set aside.
  • Heat olive oil in a large skillet over medium high heat. Add ground beef, stir, and cook until browned, approx. 3 to 5 minutes. Set aside.
  • Without cleaning the skillet, add the onion and the garlic, stirring frequently until cooked.
  • Add all seasonings to the pan and stir until fragrant. Then, add the flour and whisk for a minute until browned.
  • Gradually whisk in beef stock, tomato sauce and tomato paste. Bring to a boil, reduce heat and let simmer. Stir occasionally until the mixture reduces and has slightly thickened.
  • Stir in the pasta, beef and heavy cream until heated through. Then, stir in cheese until fully melted, about 1 to 2 minutes.

1 lb ground beef (or sausage)
2 lbs ricotta cheese
2 cups shredded mozzarella cheese
1 (25 1/2 ounce) bottle Prego spaghetti sauce (with meat)
1 cup shredded parmesan cheese
3 eggs
3 tablespoons milk
1 (12 ounce) box San Georgio jumbo pasta shells

Steps:

  • In a large mixing bowl, mix eggs and milk.
  • Whisk well.
  • Add one cup mozzarella cheese, all ricotta cheese, all Parmesan cheese, and browned ground beef (or browned sausage).
  • Mix well.
  • Put egg/beef/cheese mixture into cooked shells in oven safe dish (eg. Corningware); add spaghetti sauce to layer.
  • Top with remaining mozzarella cheese.
  • Cover with foil loosely.
