- In a small saucepan, combine spreadable fruit and water. Cook and stir over medium heat until smooth; transfer to a small bowl. Refrigerate until chilled., In a small pitcher, muddle mint leaves and lime juice. Add blackberry syrup and rum. Divide the mixture between 2 cocktail glasses. Stir in club soda; garnish with mint sprigs.

DESERT ROSE (COCKTAIL)
I found this on the Women and Wine website. It is Maria Hunt's signature cocktail that she created for Cinco de Mayo celebrations. You can use any sort of sparkling wine you wish, such as French champagne, Spanish cava or Italian asti spumante. And for a lovely pink cocktail, use pink champagne and add a splash of your favorite rose water. It's just a delicious as written below though.

SPARKLING ROSE COCKTAIL RECIPE BY TASTY

- Chill 2 champagne flutes in the freezer for about an hour prior to serving.
- Make the strawberry simple syrup: In a small saucepan, combine the water and sugar and bring to a simmer over medium-high heat, stirring until the sugar dissolves.
- Reduce the heat to medium-low and add the strawberries. Simmer for 10-15 minutes, muddling to break down the strawberries, until the syrup is bright red and the strawberries start to lose their color. Remove the pot from the heat and let the syrup cool to room temperature.
- Strain the syrup through a fine-mesh sieve, discarding the leftover solids. The syrup will keep in an airtight container in the refrigerator for up to 10 days.
- Make the cocktail: Fill a cocktail shaker halfway with ice. Add the vodka, lemon juice, rosewater, and 1 ounce strawberry simple syrup. Close the shaker to seal and shake vigorously for about 30 seconds.
- Strain the cocktail into the chilled champagne flutes, dividing evenly. Top each glass with 2 ounces of sparkling wine, then fill almost to the brims with club soda. Top with rose dried petals and serve immediately.

MIDNIGHT FIZZ
While a classic gin fizz uses lemon juice, the sweet acidity of lime in this variation skews it toward a (very) frothy gimlet. To ensure plenty of that froth, use a double shake to make the cocktail: first without ice to foam the egg white, then a second time with ice to chill and dilute the drink. Serve traditionally without ice in a small Collins or fizz glass, or go rogue and serve over a few cubes. Either way, as with all egg white drinks, drink with efficiency to capitalize on the drink's froth and avoid its inevitable separation.

Add ice to the shaker, cover again and shake vigorously until chilled and well frothed, about 10 to 15 seconds more. Double-strain into a small Collins or fizz glass without ice and top with soda water. Serve immediately.
