24 Ounces Ore-Ida® Southern Style Hash Browns
2 Cups Pepper Jack Cheese Shredded
1 Teaspoon Oregano Crushed
1 Red Bell Pepper
6 Eggs
3 Tablespoons Butter Melted

Steps:

  • 1.Combine potatoes, cheese, and seasonings in 13" X 9" X 2" baking dish, sprayed with non-stick cooking spray. Arrange pepper rings over top of potato mixture.
  • 2.Crack one egg into each pepper ring, brush eggs with melted butter. Bake at 400°F for 20 minutes or until egg whites are set and potatoes are tender.

6 slices white bread, crust removed
1 lb pork sausage
4 cups colby or 4 cups monterey jack cheese
6 eggs
2 (4 ounce) cans diced green chilies
1 teaspoon salt
1 teaspoon dry mustard
2 cups half-and-half
butter or margarine, softened

Steps:

  • Lightly butter both side of bread slices and place in 9x13-inch baking dish.
  • In nonstick skillet, over medium-high heat, brown beef sausage; drain well and pat with paper towels. Sprinkle sausage over bread slices.
  • Sprinkle cheese over sausage. Follow with a layer of chopped green chilies.
  • In medium bowl, beat eggs lightly. Add salt, dry mustard and half-and-half. Mix thoroughly. Pour over casserole.
  • Cover with foil and refrigerate overnight.
  • To bake, preheat oven to 350°F and bake casserole 45 minutes, or until bubbly and lightly browned. Allow to stand 15 minutes to set. Cut into squares and serve with picante sauce on the side.

1/2 lb bulk pork sausage
1/2 cup chopped onion
3 tablespoons unbleached all-purpose flour
1 1/2 cups milk
6 dashes Tabasco sauce
2 cups finely shredded sharp cheddar cheese
1 1/2 cups frozen shredded hash brown potatoes, defrosted
3 green onions, thinly sliced (white and tender green parts)
6 large eggs, beaten

Steps:

  • Spray inside of 9-inch square baking dish with cooking spray.
  • In a big pan, saute sausage over medium heat until it is browned, breaking it up with a fork, 8-10 minutes; drain off fat.
  • Add in onion; saute for another 2-3 minutes.
  • Sprinkle in the flour; stir until the flour is combined and coats the sausage and onion.
  • Cook for about 2 minutes, stirring constantly.
  • Slow pour in the milk and stir up the bits from the bottom of the skillet; bring to a boil and add in the Tabasco.
  • Stir in 1 cup of cheese and continue stirring until cheese melts; cool for 10 minutes.
  • Add in hash browns, green onions, and eggs, stirring until the mixture is combined.
  • Pour into prepared dish; sprinkle with remaining cheese.
  • Preheat oven to 350°; bake for 25-30 minutes, until puffed, golden, and set in the center; let rest for 10 minutes before serving.
  • Note-after step 9, may cover and refrigerate for up to 2 days or freeze for up to 1 month; when ready to use, defrost in the refrigerator overnight, let casserole come to room temperature for about 30 minutes, then bake as directed.

Number Of Ingredients 8

1 pound ground pork sausage
1 pound bacon
4 cups milk
8 eggs
12 slices white bread, crusts trimmed
2 tablespoons butter, softened
3 small onion, chopped
6 slices processed American cheese, shredded

Steps:

  • Place sausage and bacon in two large, deep skillets. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Butter one side of six slices of the bread. Placed slices butter side up in the bottom of a 9x13 inch baking pan.
  • In a large bowl, stir together cooked sausage and bacon with onion and cheese. Place half of his mixture on top of buttered bread. Then add another six slices of bread (no butter). Add remaining meat/cheese mixture. Beat together milk and eggs; pour over top of casserole. Cover with foil and refrigerate overnight.
  • The next morning: preheat oven to 425 degrees F (220 degrees C).
  • Bake, covered, in preheated oven for 45 to 60 minutes.
