MANGO COBBLER
A unique fruit & cake combination. Adapted from a basic "easy fruit cobbler" recipe. slight changes were made. very flavorful, & like I said...unique!

Steps:
- Thaw mangoes, cover with 3/4 cup sugar, set aside. Mix well after several minutes.
- {reheat oven to 350°F; put butter in shallow baking dish or casserole dish, place in oven & melt butter.
- Mix remaining dry ingredients EXCEPT BROWN SUGAR.
- Add milk, mix well.
- Pour batter into butter in dish- DO NOT MIX!
- Pour mangoes into batter- DO NOT MIX! sprinkle with brown sugar.
- Put in oven & bake for approximately 35-50 minutes depending on how shallow/deep dish is.

FRESH MANGO COBBLER
Steps:
- Preheat the oven to 375 F.
- Spray a 1 1/2-quart baking dish lightly with nonstick cooking spray.
- Peel and slice-or dice-the mangoes . You should have about 4 cups.
- In a medium saucepan, combine 2/3 cup of the sugar with the cornstarch. Stir to blend. Add the water and lemon juice along with the mango.
- Place the saucepan over medium-high heat and bring to a boil. Reduce the heat to low and simmer for about 5 minutes, or until the fruit is just tender.
- Pour the hot sliced mango and syrup into a 1 1/2-quart baking dish; dot with butter and sprinkle with the cinnamon sugar.
- In a medium bowl, combine the flour, the remaining 1/3 cup of sugar, baking powder, and salt; blend well. Cut the shortening into the flour mixture until it resembles coarse meal. Add the milk and stir to blend.
- Drop spoonfuls of the dough over the hot fruit mixture.
- Bake in the preheated oven for about 25 to 30 minutes, or until the topping is golden brown.
- Serve the mango cobbler warm or cold with ice cream or whipped cream.

MANGO COBBLER

Steps:
- Preheat oven to 375°F.
- In a 10-inch cast iron skillet, add mango, sugar, butter, flour, cornstarch, vanilla and salt.
- Cook on stovetop over medium heat, stirring regularly, until bubbly and thickened.
- Meanwhile, in a stand mixer with paddle attachment, add 1 cup flour, oats, sugar, cardamom and salt. Add the butter and mix until mixture holds together in coarse clumps, adding a splash of water, if needed.
- When fruit is ready, drop large tablespoons of dough on top of warm fruit. Place into preheated oven and bake for 35-40 minutes, until the edges are bubbling and the top is golden brown.
- Serve warm as is or topped with ice cream.
MINTED MANGO-BERRY COBBLERS WITH CHAI BISCUITS AND FRESH GINGER CREAM
Steps:
- Preheat the oven to 450 degrees F.
- For the biscuits: Add both flours, sugar, baking powder, chai spice, cinnamon, nutmeg, allspice and salt in the bowl of a food processor. Sprinkle with both extracts and pulse to combine. Add the butter and shortening and pulse 6 to 8 times until the mixture resembles coarse meal. Add the ice water, 1 tablespoon at a time, pulsing until the dry ingredients are just moistened. Remove the dough from the processor bowl, flatten into a disk shape, wrap tightly with plastic wrap and refrigerate for 30 to 40 minutes.
- For the cream: Whip the cream cheese and yogurt in a medium bowl with an electric mixer until light and fluffy. Beat in the sugar, fresh ginger, crystallized ginger and both extracts until evenly combined. Cover with plastic wrap and refrigerate until serving.
- For the cobblers: Add the mangoes, strawberries, blueberries, lemon juice, cornstarch, sugar and mint to a large bowl and stir to combine. Lightly spray 6 (8-ounce) baking bowls with cooking spray. Evenly divide the fruit mixture into the bowls and arrange on a rimmed baking sheet.
- Roll out the reserved dough, on lightly floured marble or a flat surface, to 1/4-inch thickness. Cut the dough into 6 rounds or decorative shapes slightly smaller than the width of the bowl. Put 1 piece of dough on top of each cobbler. Brush the dough evenly with egg wash.
- Bake the cobblers for 20 minutes, then reduce the heat to 350 degrees F. Bake until the pastry is lightly browned and the fruit is tender and bubbling on the edges, about 5 to 7 minutes longer. Remove from the oven and transfer the bowls to a wire rack. Let cool for 20 to 25 minutes before serving.
- Dollop ginger cream on each cobbler and sprinkle with toasted almonds. Garnish with mint sprigs, if desired, and serve.
MIMI'S BOURBON MANGO COBBLER
I wanted to use the fresh mangos I bought on sale so I adjusted this peach cobbler recipe. We loved it.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine mango, 2 tablespoons sugar, bourbon, cornstarch, cinnamon, and orange zest in a large bowl. Mix well to coat the mango evenly. Set aside.
- Combine flour, remaining 1 tablespoon sugar, baking powder, and salt in a separate bowl. Cut in 2 tablespoons butter using a pastry cutter, or the tips of your fingers, until the mixture resembles coarse crumbs. Combine egg and milk in a small bowl; add all at once to the flour mixture. Cobblers are an easy way to get a "pretend pie". They are easy to make and soooo good. It makes a dinner end with a real treat. You can make them with the wild blueberries which have tons of flavor, or you can use the frozen ones. This may be doubled and put in a 9"x13" baking dish.

- BLUEBERRIES:.
- In a large bowl combine all the ingredients.
- Put into a 2 quart baking dish which has been sprayed with cooking spray.
- Bake at 375 degrees for 10 minutes while you make the Cobbler.
- COBBLER:.
- In a small bowl combine the first five ingredients; mix well.
- Cut in the cold butter till mixture resembles coarse crumbs.
- Stir in the buttermilk just till moistened.
- Drop by tablespoons onto blueberry mixture.
- Sprinkle some sugar over the top of the dough.
- Bake uncovered at 375 degrees for about 25-30 minutes or till golden.
- Serve warm with vanilla ice cream or whipped cream.
