⅓ cup shredded pizza cheese blend
16 slices turkey pepperoni (such as Hormel®)

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.
  • Arrange bagels on prepared baking sheet, cut sides up. Spoon a thin layer of pizza sauce over each bagel half and sprinkle with pizza cheese. Place 2 pepperoni slices on each bagel.
  • Bake in the preheated oven until cheese is melted and pepperoni is lightly browned, about 6 minutes.

I created this recipe for "something different" at breakfast. Even though they look like I went to a lot of trouble, these little pizzas do go together quickly. I even make them for our three children on rushed school mornings.

8 to 10 large eggs
3 tablespoons whole milk
Salt and pepper to taste
1 tablespoon butter
10 frozen bread dough dinner rolls, thawed
10 bacon strips, cooked and crumbled
2 cups shredded cheddar cheese

Steps:

  • In a bowl, beat the eggs. Add milk, salt and pepper. Melt butter in a skillet; add the egg mixture. Cook and stir over medium heat until the eggs are set. Remove from the heat and set aside. , Roll each dinner roll into a 5-in. circle. Place on greased baking sheets. Spoon egg mixture evenly over crusts. Sprinkle with bacon and cheese. Bake at 350° for 15 minutes or until the cheese is melted.

8 Rhodes White Dinner Rolls , thawed to room temperature
8 eggs
salt & pepper to taste
1 tablespoon butter
4 tablespoons pizza sauce or salsa
1/2 cup grated Cheddar cheese
1/2 cup grated mozzarella cheese
3 green onions, chopped
1 cup cubed, cooked ham
Italian seasoning, if desired

Steps:

  • Spray counter lightly with non-stick cooking spray. Combine 2 rolls together and flatten into a 5-inch circle. Repeat with remaining rolls to make 4 mini pizza crusts. Place on a large sprayed baking sheet. Poke each one several times, with a fork, to prevent bubbles from forming. Bake at 350°F 10-15 minutes or until lightly browned. Remove from oven and set aside.In a small bowl, whisk eggs. Melt butter in a skillet and add eggs. Cook and stir over medium heat until eggs are softly set. Salt & pepper to taste. Spread each mini pizza crust with 1 tablespoon pizza sauce or salsa. Combine the cheeses together and sprinkle each pizza with 1-2 tablespoons cheese. Top with eggs, green onions, ham and any remaining cheese. Sprinkle with Italian seasoning if desired. Bake at 375°F 10-15 minutes or until cheese is nicely melted.

½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ cups shredded part-skim mozzarella cheese

Steps:

  • Preheat broiler. Place English muffin halves on baking sheet; set aside. Spray large skillet with cooking spray. Heat over medium-high heat. Add sausage, onion, bell pepper and mushrooms; cook 5 minutes or until sausage is crumbled and vegetables are tender, stirring occasionally. Drain. Remove from skillet and keep warm.
  • Reduce heat to medium. Add eggs to same skillet; sprinkle with salt and black pepper. Cook without stirring until edges and bottom begin to set. Gently turn to scramble; continue cooking until set.
