CHEESE STUFFED TURKEY MEATLOAF RECIPE
The best tasting, moist turkey meatloaf stuffed with cheddar cheese, spinach and rolled, jelly roll style topped with a ketchup based glaze.

- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- Spray a small nonstick skillet with cooking olive oil spray over medium heat and saute shallot until golden, about 2 to 3 minutes; remove from heat.
- Combine the glaze ingredients in a small bowl.
- In a large bowl combine ground turkey, mushrooms, shallot, breadcrumbs, ketchup, egg, salt and marjoram. Mix with your hands until well blended. Place on a 12- x 16-inch piece of parchment paper and pat firmly into a 10- x 12-inch rectangle.
- Sprinkle cheese mixture evenly over ground turkey followed by the spinach. Roll up jelly roll-style, starting from the short end, by lifting wax paper and removing the paper as you roll. Seal ends well. Place seam-side down in prepared baking dish.
- Bake 45 minutes. Remove from oven, brush the sauce over roll, and return to oven 10 to 15 minutes, or until no pink remains. Remove from oven and allow to stand 10 minutes. Slice into 16 slices and serve.

- Preheat the oven to 350 degrees F. Generously coat 18 standard muffin cups (from two 12-cup muffin pans) with cooking spray.
- Put the oats in a small bowl and slowly pour the milk over them. Stir to make sure the oats are all coated and then let them sit for a few minutes.
- Put the turkey and bacon in a separate large bowl and add the oats and any extra milk from the bowl to it. Add the parsley, seasoned salt, black pepper, red pepper flakes and 1/4 cup of the ketchup. Use your hands to mix it all together. Place a 1/4-cup scoop of the mixture in each greased muffin cup. Squirt about 1/2 teaspoon of the remaining ketchup on top of each meatloaf. Use a spoon to smear the ketchup evenly over the top, then use it to nudge the edges of the meatloaves away from the pan a bit (this just neatens them up a little).
- Bake for 25 minutes, then carefully squirt another 1/2 teaspoon of ketchup on top of each, spreading it carefully with a spoon to cover as much of the surface as possible. Continue to bake until completely cooked through and sizzling around the edges, about another 30 minutes. If there are any large areas without ketchup, go ahead and squirt/spread more as needed.
- Sprinkle the meatloaves with parsley, then let them sit in the pan for 5 to 7 minutes before serving. Run a sharp knife around the edges of the loaves to loosen them if they stick. Serve them warm with a veggie on the side
TURKEY AND WILD MUSHROOM MEATLOAF PATTIES WITH PAN GRAVY

- Heat a nonstick skillet over medium high heat. Add oil, 2 turns of the pan. Add chopped mushrooms and shallots and season with salt and pepper. Saute mushrooms 5 or 6 minutes until dark and tender. Remove from heat. Transfer mushrooms to a bowl and return pan to stove top to preheat to cook patties.
- Add turkey to the mushroom mixture. Make a well in the center of the meat. Add sage, Worcestershire sauce, bread crumbs and beaten egg and season with salt and pepper. Mix turkey meat loaf and make a small 1-inch patty. Place meat in the hot pan and cook 1 minute on each side. Taste the mini patty to help you adjust seasonings. Divide meat loaf mixture into 4 equal parts by scoring the meat before you form patties. Form 4 equal oval patties 1 inch thick. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, and arrange patties in the skillet. Cook 6 minutes on each side and transfer to a serving plate or individual dinner plates. Return pan to heat and add butter. When butter melts, whisk in flour and cook 1 to 2 minutes. Whisk in stock and season gravy with poultry seasoning, salt and pepper, to taste. Simmer gravy until it reaches desired thickness, and pour over patties, reserving a little to pass at the table.

- In a bowl, combine first six ingredients. Mix in beef. Divide into six portions. Shape each portion around a cheese stick and form into a loaf. - 1. preheat oven to 350 spray 12 muffin tins with cooking spray
- 2. combine beaten egg, milk, uncooked oates, and salt in a large bowl. Add the ground beef or turkey, mixing well.
- 3. divide mixture into 12 equal portions. Insert 1 cheese cube into the center of meat and roll in hands to form the meat into a ball around the cheese. Place into muffin tin and continue with remaining meat and cheese.
- 4. combine the ketchup and brown sugar in a separate small bowl. stir thoroughly and spread over each mini meatloaf.
- 5. Bake uncovered on center oven rack for 30 minutes.
- 6. Refrigerate any leftovers. You could probably freeze also.
CHEESY MINI-MEATLOAVES
This is a nice twist on the normal meatloaf recipes.. 8 mini meatloaves with a yummy sauce!! I have made this several times and recently added fresh mushrooms to meat mixture before shaping into loaves and it was fantastic... endless possibilities!

- Preheat oven to 350 degrees.
- Beat egg and milk together.
- Add cheese, oats, onion, salt, & pepper to milk/egg mixture.
- Mix in ground beef with your hands until all ingredients are incorporated well.
- Shape into 8 loaves and place into a greased 9x13 pan.
- Mix all sauce ingredients together and spoon over loaves.
- You may want to make extra sauce for after its done cooking!
- Place in 350 degree oven, uncovered, for 45 minutes.
