These little cheesecakes make a fun dessert that's just right for cooks who don't have a lot of time for fussy recipes. Plus, you get to eat the whole thing yourself! -Kay Keller, Morenci, Michigan

1 cup crushed vanilla wafers (about 30 wafers)
3 tablespoons butter, melted
1 package (8 ounces) cream cheese, softened
1/3 cup sugar
2 teaspoons lemon juice
1-1/2 teaspoons vanilla extract
1 large egg, room temperature, lightly beaten
TOPPING:
1 pound pitted canned or frozen tart red cherries
1/2 cup sugar
1 tablespoon cornstarch
Red food coloring, optional

Steps:

  • Preheat oven to 350°. Combine crumbs and butter; press gently onto bottoms of 12 foil-lined muffin cups. In another bowl, combine cream cheese, sugar, lemon juice and vanilla. Add egg; beat on low speed just until combined. Spoon over crusts. , Bake until centers are almost set, 12-15 minutes. Cool completely. , For topping, drain cherries, reserving 1/2 cup juice in a saucepan; discard remaining juice. To reserved juice, add cherries, sugar, cornstarch and, if desired, food coloring. Bring to a boil; cook until thickened, about 1 minute. Cool; spoon over cheesecakes. Refrigerate, covered, at least 2 hours.

0.666 cup(s) Graham cracker crumbs
14 tbsp(s) Plain lowfat Greek yogurt divided
8 oz Fat-free cream cheese
2 large Raw egg(s)
0.333 cup(s) Sugar
1 tsp(s) Vanilla extract
10 oz Frozen sweetened cherries
1 tbsp(s) Sugar
1 tsp(s) Fresh lemon juice
1 pinch Table salt
2 tsp(s) Cornstarch
2 tsp(s) Water cold
0.5 oz 60-69% dark chocolate shaved

Steps:

  • Preheat oven to 325°F. Line a 12-hole muffin pan with paper liners.
  • Toss graham cracker crumbs with 2 Tbsp yogurt; using the back of a spoon, press 1 Tbsp crumb mixture into bottom of each prepared muffin cup.
  • Using an electric mixer, beat together remaining yogurt, cream cheese, eggs, 1/3 c sugar and vanilla; spoon evenly into muffin cups. Bake until top is set, 15-20 minutes; let cool and then chill in refrigerator 2 hours (can make up to 2 days ahead).
  • Meanwhile, to make topping, combine cherries, remaining 1 Tbsp sugar, lemon juice and salt in a small saucepan over medium heat; bring to a simmer. Using a potato masher, lightly crush cherries. Combine cornstarch with cold water; stir into cherry mixture until thick. Cool cherry topping completely before using (may be made up to 1 day ahead).
  • To serve, top each cheesecake with a heaping Tbsp cherry topping; evenly divide chocolate shavings over top.
  • Serving size: 1 cheesecake

2 tablespoons fresh lemon juice

20 ounces light cherry pie filling, warmed

Steps:

  • Place 12 cupcake liners in a cupcake pan.
  • Combine graham cracker crumbs and margarine; mix well.
  • Spoon 1 tablespoon of crumb mixture into bottom of each liner and press down gently. Refrigerate until ready to fill.
  • Beat cream cheeses until fluffy and add lemon juice, egg whites, vanilla extract and sugar; beat until smooth.
  • Spoon cream cheese mixture evenly into crumb cups.
  • Bake at 375 deg. for 15 minutes.
  • Cool.
  • Top each cheese cakle with 1 tablespoon cherry pie filling.
