MINI EGG PIES RECIPE BY TASTY

Steps:
- Preheat oven to 220°C (430°F).
- Using a cup or mug with roughly the same diameter as the bottoms of your muffin tin, cut out 3 circles of puff pastry dough. Make sure you cut the circles out as closely as possible to save dough.
- With the remaining dough, cut out strips to wrap around the inside of the muffin tin cups. The strips should be about three centimeters (1 inch) wider than the depth of the muffin tin cups.
- Rub oil in the bottom of 3 to 4 cups in the center of your muffin tin. Place the puff pastry dough circles at the bottom of the cups, then wrap the dough strips along the walls of the cups.
- NOTE: The dough strips should come up a couple of centimeters (about an inch) taller than the wall of each muffin tin cup.
- Using your fingers, pinch and press the beginning and end of the strips together and then press the edges of the strips down near the edges of the circles to create one cohesive dough cup.
- Crack one egg into each dough cup and then season with a pinch of salt and pepper.
- Working carefully, pinch small sections of the tops of each dough wall together, crimping around the edge so that you bend the dough closer to the center and make five crimped crests on the top of each pie. You want to build a top to the pies but there will still be a circle in the middle with exposed egg.
- Place the muffin tin on a center rack in the oven and bake for 15-20 minutes, or until the puff pastry is golden brown and the egg looks set. Remove from muffin tin.
- Enjoy!

This is what you get when you cross a breakfast casserole recipe with a quiche recipe. Very little prep for such a tasty crowd pleasing dish. I've also made it with sliced mini sausages instead of ham, and I'm sure bacon would work too.

Steps:
- Defrost hash browns in the microwave.
- Beat eggs in a large bowl and whisk in sour cream.
- Place pie shell (in its tin) on a cookie sheet.
- Spread cheddar on bottom of crust.
- Cover with hash browns (broken into small pieces), ham, and mozzarella.
- Pour egg mixture over all and sprinkle in salt.
- Bake in a 350 degree oven for 40-50 minutes until set.

- Preheat oven to 425°F (220°C).
- Add the oil to a large pot over high heat. Once the oil begins to shimmer, add the chicken, and stir until cooked through, about 7 minutes. Transfer the chicken to a bowl.
- Melt butter in the same pot. Add the onions and carrots and stir until softened, about 8 minutes.
- Add the flour, stirring to combine. Slowly add the milk and chicken broth, alternating between the two, stirring continuously and bringing to a boil.
- Add the cooked chicken, peas, salt, and pepper, and stir until thoroughly mixed. Remove from heat and let cool.
- Lay out puff pastry sheets and use a small 6-inch (15 cm) bowl to cut circles out of it.
- Place dough circles in a nonstick muffin tin and fill with pot pie mixture.
- Using remaining puff pastry, cut ⅛-inch (3 mm) strips of dough, and make a lattice top for each muffin cup. Brush the lattice tops with the egg.
- Bake for 15 minutes, until golden brown.

- Preheat oven to 375°. On a lightly floured surface, unfold pastry sheets; roll each into a 16x12-in. rectangle. Using a floured cutter, cut twelve 4-in. circles from 1 sheet; press onto bottoms and up sides of ungreased muffin cups. - For the Crust:
- Crush sandwich cookies in the food processor until fine crumbs form. Press into the bottom, and up the side of a nine-inch springform pan.
- Bake at 350'F for 10 minutes and set aside to cool.
- For the Ice Cream:
- Beat egg whites and sugar until stiff peaks form. Meanwhile, place chocolate, margarine and vanilla sugar into a double boiler (or the microwave) and stir until melted.
- Once melted, allow to cool slightly and add the seven yolks, mixing quickly so the yolks shouldn't cook. Mix until well combined.
- Fold chocolate mixture into the snow and pour over the crust. Freeze.
- For the Topping:
- Whip up the dessert topping until soft peaks form.
- Slowly add coffee and instant vanilla pudding until stiff.
- Place into a decorating bag with star tip and pipe rosettes on the top of the ice cream pie.
- Garnish with additional cookies and crumbs.
- Serve.

- Preheat the oven to 350 degrees F (175 degrees C).
- Lightly flour a work surface. Roll each crust out to about 1/8-inch thick. Cut dough to fit three 3x5-inch loaf pans. Push dough into tins and up the edges using your fingertips. Roll out remaining dough for use as top crusts and set aside.
- Heat oil in a large pot over medium heat. Add potatoes, celery, onion, and carrot. Cook, stirring occasionally, until onions are translucent, about 5 minutes. Add beef and cook until browned, 5 to 7 minutes. Add peas, corn, and ale; cook and stir until reduced by a bit more than half, stirring occasionally, about 5 minutes.
- Add flour to the vegetable-ale mixture and stir constantly until thick and almost pasty, 1 to 3 minutes. Add stock slowly, stirring constantly. Add ketchup, Worcestershire sauce, salt, tomato bouillon, rosemary, and garlic powder. Reduce heat and simmer until filling mixture reduces to desired thickness and potatoes are cooked through, 7 to 10 minutes.
- Remove pot from heat and allow filling to cool slightly. Fill crusts with filling. Top with remaining dough and pinch edges to seal. Brush tops of pies with beaten egg wash. Cut 3 slits in the top of each pie for air to escape. Place tins on a baking sheet.
- Bake in the preheated oven until golden brown, about 30 minutes.

This is my little egg & bacon pie. It is very basic, made for kids, so feel free to add any little herbs, etc, that you like! They are great served either hot or cold, and my kids love them in their lunchboxes.

- Whisk together eggs, milk, cream, parmesan, salt, and pepper.
- Cut 5 rounds out of each sheet of pastry, and use the rounds to line the holes of 2x12 large cup muffin pan.
