This easy Mini Meatloaf recipe can be made on a sheet pan or in muffin tins for a perfect portion-sized family dinner!

1 Tablespoon butter
¼ cup yellow onion (diced)
¼ cup bell pepper (diced)
1 teaspoon minced garlic
1 egg
1/3 cup milk
1 teaspoon yellow mustard
1 teaspoon ketchup
1 teaspoon BBQ Sauce
½ Tablespoon Worcestershire sauce
½ teaspoon salt
1/4 teaspoon pepper
1/3 cup crushed Ritz (or Italian breadcrumbs)
½ cup cheddar cheese (shredded)
1 pound ground beef (85% lean)
½ cup ketchup (plus more for serving)
½ cup BBQ Sauce

Steps:

  • Preheat the oven to 350 degrees.
  • Sauté the vegetables: Melt the butter in a small saucepan over medium heat. Sauté the onions and peppers for 4 minutes. Add the garlic and sauté for 1 more minute. Remove and let cool.
  • Combine Wet ingredients: Whisk together the egg, milk, mustard, ketchup, BBQ Sauce, Worcestershire sauce, cheese, salt, and pepper in a large bowl.
  • Add remaining ingredients: Stir in the Ritz crackers, then add the cooled onions/peppers/garlic. Add the ground beef and gently mix until just combined. Don't overwork the meat or it will become tough.
  • Form into loaves: Divide the meat mixture into 4 equal parts and mold them into 5-inch loaves. Place on a parchment paper lined baking sheet (preferably a sheet that has raised edges to avoid overflow from drippings.) Combine the glaze ingredients and brush half of it over the meatloaf.
  • Bake Once/Remove Grease: Bake for 25 minutes and carefully remove it from the oven, there will be grease to remove. To do this, carefully transfer each meatloaf to a new parchment paper lined baking sheet using a spatula. OR, transfer to a plate and replace the original baking sheet with new parchment paper. (See PRO tips in notes section for an alternative method of handling the grease.)
  • Bake Twice: Brush remaining glaze on top of the meatloaf. Bake for 15 more minutes, the internal temperature should be 160 degrees.
  • Serve: I like to brush a little more ketchup on top prior to serving. Serve with mashed potatoes and roasted green beans or roasted carrots.

1 1/2 pounds lean ground beef ((or ground turkey))
2/3 cup panko bread crumbs
1/2 cup onion (, chopped)
1 Tablespoon barbecue sauce
1 Tablespoon mustard
1/2 teaspoon garlic powder
1 1/2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 egg (, lightly beaten)
1/3 cup light brown sugar
1/2 cup ketchup
2 teaspoon dijon mustard
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
  • Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
  • In the meantime, in a small bowl mix together all of the ingredients for the sauce.
  • Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
  • Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
  • Serve with mashed potatoes and any extra sauce.

1 small Spanish onion, 1/4-inch dice
Kosher salt and freshly cracked black pepper
2 cloves garlic, minced
1/2 cup whole milk
1 tablespoon unflavored gelatin
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce, such as Tabasco
2 large eggs
2 pounds ground chuck
1 cup crushed butter crackers, such as Ritz
1/3 cup fresh parsley, minced
1/2 cup smoky BBQ sauce, such as Rufus Teague Smoky Apple
4 tablespoons brown sugar
4 tablespoons apple cider vinegar
Roasted Russet Potatoes with Garlic and Rosemary:
2 tablespoons olive oil
1 pound russet potatoes, cubed, rinsed and dried
Kosher salt and freshly cracked black pepper
2 teaspoons fresh rosemary, minced
2 cloves garlic, minced
1 pound green beans
Olive oil, for the pan
1 lemon, zested and juiced
Kosher salt and freshly cracked black pepper

Steps:

  • For the meatloaf: Preheat the oven to 350 degrees F.
  • Heat a skillet over medium heat, add the oil and saute the onions until translucent, 3 to 5 minutes. Season with salt, add the garlic and saute for 1 to 2 minutes without letting the garlic brown. Remove from the heat and cool.
  • In a large bowl, whisk together the milk, gelatin, mustard, Worcestershire, hot sauce and eggs and season with salt and pepper. Let it sit for 5 minutes so the gelatin can bloom.
  • Add the meat along with the crackers, parsley and cooked onion and garlic; mix with your hands until evenly combined. Place the meat mixture on a parchment-lined sheet tray. Using your hands, and without overworking the meat, form into 6 football-shaped free-form loaves.
  • For the glaze: In a small bowl, combine the BBQ sauce, brown sugar and apple cider vinegar.
  • Slather the glaze over the meatloaves and bake, basting again halfway through, until the meat registers 165 degrees F, about 1 hour. Let rest for 20 minutes.
  • For the roasted russet potatoes with garlic and rosemary: Heat the olive oil in a 12-inch nonstick skillet over medium-high heat. Add potatoes cut-side down and cook, without moving, until golden, 6 to 7 minutes.
  • Flip the potatoes using a fish spatula and lower the heat to medium low. Cover and cook until the potatoes are knife-tender, 7 to 8 more minutes.
  • Toss the potatoes with salt and pepper. Add the rosemary and garlic, cover again, take off the heat and let infuse for an additional 45 seconds using the residual heat left in the skillet. Taste, adjust the seasoning if necessary and serve.
  • For the green beans: Bring a pot of water to a boil. Set up an ice bath. Blanch the green beans in the boiling water until bright green and tender, a few minutes. Remove from the water and immediately plunge into the ice bath.
  • Meanwhile, heat a saute pan with olive oil over medium-high heat. Toss the green beans in the pan with the lemon zest and juice and salt and pepper to taste until warmed through, 2 to 3 minutes.

3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

Easy Mini Meatloaf Muffins image

Homemade meatloaf with a yummy sweet twist. I didn't have any breadcrumbs for the traditional meatloaf, so I searched my cabinets and came up with this meatloaf. It was a huge hit with the kids. It's sweet but still a meatloaf. The cornmeal and brown sugar just made it out of this world! Also, once cooked, they are very easy to store and pack up for leftovers. Serve with some smashed potatoes and green beans.

An updated retro favourite that makes a cheap and easy family meal

4 tsp olive oil
1 onion , finely chopped
1 carrot , finely chopped
50g fresh breadcrumb
175ml passata
2 tsp Worcestershire sauce
1 egg , beaten
500g lean beef or pork mince
2 tsp thyme leaves
2 plum tomatoes , halved, seeds scraped out
1 tsp sugar

Steps:

  • Heat oven to 200C/fan 180C/gas 6 and heat 1 tsp oil in a large frying pan. Add the onion and carrot and soften for 10 mins. Scrape into a large bowl, then add the breadcrumbs, 5 tbsp of the passata, the Worcestershire sauce, egg, mince, half the thyme and some seasoning. Mix well.
  • Brush 4 large ramekins or 6 muffin tins with the remaining oil. Press the mince mixture into them, then pour the remaining passata over the top. Top each with a tomato half, sprinkled with a pinch of sugar, salt and pepper and the remaining thyme. Bake for 50 mins until cooked through, then serve with Chive mash (recipe below).
