I'm bringing back an oldie but a goodie: Mini Strawberry Cheesecake Desserts! This recipe creates the perfect sweet treats for any occasion. I bring them to potlucks frequently and they are always a huge hit!

Number Of Ingredients 6

Ingredients

2 lbs strawberries
2 (8 ounce) bricks cream cheese (softened)
1 1/2 cups sour cream
2 teaspoons vanilla
2 cups powdered sugar
12 individual graham cracker pie crust

Steps:

Add 1 pound of strawberries, cream cheese, sour cream, vanilla and powdered sugar to a food processor and process until a smooth mixture is created. *This may need to be done in two batches depending on the size of your processor.
Cut the bottom corner off of a large plastic bag and fill it with the strawberry mixture. Use bag to squeeze mixture into individual graham cracker pie crusts.
Garnish each dessert with a single sliced strawberry.

Rinse strawberries, cut each one into 4 pieces and place them into a small saucepan. Add sugar (combined with starch, optional), lemon juice and place the saucepan onto the stove top and bring it to a boil stirring constantly.
Using a food processor, pulse graham crackers into fine crumbs. Then add melted butter and pulse once more for 30 seconds or until well combined.
Pipe cream on top of each cheesecake. Top each cheesecake with chunky strawberry sauce and sprinkle with crushed pistachios.

Preheat oven to 350 F or 175 C. Spray a mini springform pan with non-stick baking spray or line a cupcake / muffin tin with 9 liners.
Combine the graham cracker crumbs, granulated sugar and melted butter until the mixture looks like sand.
Scoop about 1 Tbsp of the cookie mixture into each cavity. Use the back of a spoon or the bottom of a flat, small glass (I used a shot glass) to press down firmly and create a compact, even crust covering the bottom of each little cavity. If you're using a muffin pan, make 9 crusts by adding a rounded Tbsp into each liner.
Bake for 5 minutes then remove from the oven. Place the pan on a wire rack to cool. Keep your oven on but lower the temperature to 300 F / 150 C.
