MINI STRAWBERRY CHEESECAKE DESSERTS
I'm bringing back an oldie but a goodie: Mini Strawberry Cheesecake Desserts! This recipe creates the perfect sweet treats for any occasion. I bring them to potlucks frequently and they are always a huge hit!

Steps:
- Add 1 pound of strawberries, cream cheese, sour cream, vanilla and powdered sugar to a food processor and process until a smooth mixture is created. *This may need to be done in two batches depending on the size of your processor.
- Cut the bottom corner off of a large plastic bag and fill it with the strawberry mixture. Use bag to squeeze mixture into individual graham cracker pie crusts.
- Garnish each dessert with a single sliced strawberry.

- Rinse strawberries, cut each one into 4 pieces and place them into a small saucepan. Add sugar (combined with starch, optional), lemon juice and place the saucepan onto the stove top and bring it to a boil stirring constantly.
- Using a food processor, pulse graham crackers into fine crumbs. Then add melted butter and pulse once more for 30 seconds or until well combined.
- Pipe cream on top of each cheesecake. Top each cheesecake with chunky strawberry sauce and sprinkle with crushed pistachios.

- Preheat oven to 350 F or 175 C. Spray a mini springform pan with non-stick baking spray or line a cupcake / muffin tin with 9 liners.
- Combine the graham cracker crumbs, granulated sugar and melted butter until the mixture looks like sand.
- Scoop about 1 Tbsp of the cookie mixture into each cavity. Use the back of a spoon or the bottom of a flat, small glass (I used a shot glass) to press down firmly and create a compact, even crust covering the bottom of each little cavity. If you're using a muffin pan, make 9 crusts by adding a rounded Tbsp into each liner.
- Bake for 5 minutes then remove from the oven. Place the pan on a wire rack to cool. Keep your oven on but lower the temperature to 300 F / 150 C.
