SMOKY CHEDDAR, CHORIZO AND SWEET POTATO POT PIES



Smoky Cheddar, Chorizo and Sweet Potato Pot Pies image

2 tablespoons vegetable oil
3 stalks celery, diced
1 small yellow onion, diced
3 cloves garlic, minced
1 pound fresh Mexican chorizo or soy-based chorizo sausage, casings removed
1 pound sweet potatoes, parcooked (see Cook's Note)
1 cup frozen peas
2 tablespoons all-purpose flour
2 cups vegetable stock
1/2 cup heavy cream
1 cup shredded smoked Cheddar
1/4 bunch fresh parsley, chopped
Kosher salt and freshly ground black pepper
1 box refrigerated pie crusts (2 crusts)
1 large egg, beaten

Steps:

  • Preheat the oven to 400 degrees F.
  • Add 1 tablespoon of the oil to a large saucepan over medium heat. When the oil is hot, add the celery and onions and cook, stirring occasionally, until translucent, 4 to 5 minutes. Stir in the garlic, chorizo, sweet potatoes and peas. Add the remaining 1 tablespoon oil and the flour. Stir and cook to remove the raw flour flavor, about 2 minutes. Slowly whisk in the vegetable stock and the cream. Bring to a simmer to allow the sauce to thicken; it should coat the back of a spoon, 6 to 7 minutes. Stir in the cheese and the parsley and remove from the heat. Taste and season with salt and pepper.
  • Place six 8-ounce ramekins in a baking dish or a rimmed baking sheet. Fill each with the chorizo mixture until 1/2-inch from the top (the number of pies you get depends on the size of the ramekins). Let cool slightly.
  • Meanwhile, roll out the pie crust and, using a large biscuit cutter, cut a circle of dough large enough to cover the entire top of the ramekin and fall over the sides. Repeat until all the ramekins are covered. Brush the dough with the egg, cut 2 to 3 slits in the top to allow steam to escape and bake until golden and the dough is cooked through, 20 to 22 minutes.

2 large sweet potatoes
12 mini graham cracker pie crusts
3/4 cup heavy cream
1/2 cup packed brown sugar
1/3 cup orange juice (from about 1 orange)
4 tablespoons unsalted butter, melted
3 tablespoons crushed pineapple
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1/4 teaspoon grated nutmeg
1/4 teaspoon ground cloves
2 large eggs
1 cup chopped pecans
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
Pinch cayenne pepper
1/2 cup candied pineapple, chopped

Steps:

  • For the mini sweet potato pies: Pierce the skin of the sweet potatoes a few times with a fork, then microwave on high until soft, 7 to 8 minutes. Let cool slightly.
  • Preheat the oven to 375 degrees F. Place the pie crusts on a rimmed baking sheet.
  • Peel the sweet potatoes and cut into chunks. Transfer the potatoes to the bowl of a food processor and process until smooth. Add the cream, brown sugar, orange juice, butter, pineapple, granulated sugar, cinnamon, salt, nutmeg, cloves and eggs and pulse until the mixture is combined and smooth.
  • Pour the mixture into the crusts on the baking sheet. Bake until the pies are slightly browned on top, 20 to 25 minutes. Let cool for at least 1 hour or refrigerate until ready to serve.
  • For the pecan pineapple topping: Add the pecans, cinnamon, salt and cayenne to a small skillet and cook over high heat until toasted, 2 to 3 minutes. Add the pineapple pieces and remove from the heat. Sprinkle the topping over the pies before serving.

A balanced and satisfying meal, this meat- and veggie-loaded shepherd's pie with sweet potato topping is full of nutrition. This dish freezes well, so you can go ahead and double the recipe and freeze one for a future meal. Feel free to substitute regular potatoes for sweet potatoes.

1 pound ground beef or lamb
2 medium carrots, peeled and diced
1 small green pepper, diced
1 small yellow onion, diced
1 cup mushrooms, cleaned and stemmed, diced
4 cloves garlic, minced
3 ounces tomato paste
1 teaspoon chili powder
1/2 teaspoon dried rosemary or dried herb of choice
1/2 teaspoon fine salt or to taste
1/4 teaspoon black pepper
1/4 cup water
2 large sweet potatoes (about 12 ounces each), peeled and cubed (~6 cups cubed)
1 tablespoons butter (may substitute ghee or coconut oil for Whole30)
1/2 teaspoon chili powder
1/4 teaspoon fine salt

Steps:

  • Preheat oven to 375℉. Bake the sweet potatoes until fork tender, 45 to 60 minutes (see our directions for perfect baked sweet potatoes). Alternatively, you can steam peeled and diced sweet potatoes until tender.
  • In a medium skillet over medium-high heat, saute the ground beef, chopped carrots, green pepper, onion, mushrooms, and garlic. Continue cooking until the carrots are soft, about 12-15 minutes. Begin making the sweet potato topping while the filling cooks.
  • To make the topping: Place the peeled and baked/steamed sweet potato with all of the topping ingredients in a food processor (or blender) and process until smooth. NOTE: If using white potatoes, we recommend mashing them by hand rather than blending to prevent them from getting pasty.
  • Back to the filling: Once the carrots are soft, stir in tomato paste, chili powder, rosemary, salt, black pepper, and water.
  • Final step: Top the meat filling with the sweet potato mash. If you're not using an oven-safe 10-inch cast-iron skillet, transfer the meat filling to a casserole dish or 9×9 inch baking dish and top the meat filling with the sweet potato mash. Sprinkle the top with a little sea salt and chili powder.
  • Bake for 10 minutes. Remove from oven and serve.

2 pounds russet potatoes, peeled and quartered
Kosher salt
1 tablespoon extra-virgin olive oil
8 ounces fresh chorizo, casings removed
12 ounces ground beef
1 bunch scallions (white and light green parts only), chopped
2 cups frozen corn (preferably fire-roasted)
1 poblano chile pepper, chopped
2 tablespoons tomato paste
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Freshly ground pepper
1 14.5-ounce can diced tomatoes with green chiles
1 cup low-sodium chicken broth
1/2 cup sour cream
3 tablespoons unsalted butter
1 1/2 cups shredded pepper jack cheese (about 6 ounces)

Steps:

  • Preheat the oven to 400 degrees F. Put the potatoes in a large saucepan, cover with cold water by 1 inch and season with salt. Bring to a boil, then reduce the heat and simmer until tender, 20 to 25 minutes.
  • Meanwhile, heat the olive oil in a large ovenproof skillet over medium heat. Add the chorizo and cook, breaking it up with a wooden spoon, until slightly browned, about 5 minutes. Add the beef and cook, breaking it up, until browned, about 5 minutes. Add all but 1 tablespoon of the scallions to the skillet along with the corn, poblano, tomato paste, cumin, chili powder, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the vegetables are slightly softened, about 5 more minutes. Add the tomatoes and chicken broth. Bring to a simmer, then reduce the heat to medium low; cook, stirring occasionally, until slightly thickened, about 10 minutes.
  • Drain the potatoes and let cool slightly. Return to the pot, add the sour cream and butter and mash well. Stir in the cheese and season with salt and pepper. Dollop the mashed potatoes on top of the meat mixture in the skillet, then spread with the back of a spoon. Transfer the skillet to the oven. Bake until bubbling around the edges and the topping is browned in spots, 25 to 30 minutes. Let rest 10 minutes, then sprinkle with the reserved scallions before serving.

The secret to this shepherd's pie filling is to choose big carrots so they don't lose their texture when cooked

1 tbsp olive oil
1 large onion, halved and sliced
2 large carrots (500g/1lb 2oz in total), cut into sugar-cube size pieces
2 tbsp thyme chopped
200ml red wine
400g can chopped tomatoes
2 vegetable stock cubes
410g can green lentils
950g sweet potatoes, peeled and cut into chunks
25g butter
85g vegetarian mature cheddar, grated

Steps:

  • Heat 1 tbsp olive oil in a frying pan, then fry 1 halved and sliced large onion until golden.
  • Add 2 large carrots, cut into sugar-cube size pieces and most of the 2 tbsp chopped thyme, reserving a sprinkling for later.
  • Pour in 200ml red wine, 150ml water and a 400g chopped tomatoes, then crumble in 2 vegetable stock cubes and simmer for 10 mins.
  • Tip in a 410g can green lentils, including the juice, then cover and simmer for another 10 mins until the carrots still have a bit of bite and the lentils are pulpy.
  • Meanwhile, boil 950g sweet potatoes, cut into chunks, for 15 mins until tender, drain well, then mash with 25g butter and season to taste.
  • Pile the lentil mixture into a pie dish, spoon the mash on top, then sprinkle over 85g grated vegetarian mature cheddar and the remaining thyme. The pie can now be covered and chilled for 2 days, or frozen for up to a month.
  • Heat oven to 190C/170C fan/gas 5. Cook for 20 mins if cooking straightaway, or for 40 mins from chilled, until golden and hot all the way through. Serve with broccoli.

This recipe calls for pressing two dozen tiny crusts into a mini-muffin tin, which may seem tedious, but is easy with the help of a wine or champagne cork, which is the ideal size for tamping down the graham cracker crumbs. These two-bite (OK, one-bite) pies need to be chilled, so they're ideal for making ahead and can be refrigerated for up to three days.

1 medium sweet potato (10 ounces/285 grams), peeled and cut into 1-inch chunks
1/2 cup/100 grams granulated sugar
2 tablespoons unsalted butter, softened
1 teaspoon pumpkin pie spice
1/4 teaspoon fine sea salt
1/2 cup/120 milliliters unsweetened full-fat coconut milk, well shaken
1 teaspoon dark rum or vanilla extract
1 large egg, at room temperature
1/2 cup/45 grams unsweetened coconut flakes
5 whole graham crackers, finely ground (2/3 cup/80 grams)
2 tablespoons unsalted butter, melted and cooled
1 tablespoon granulated sugar
1/2 teaspoon pumpkin pie spice
1/4 teaspoon fine sea salt

Steps:

  • Start the filling: Prepare a steamer. Steam the sweet potato over medium-high heat until falling-apart tender, 15 to 20 minutes. Transfer the sweet potato to a food processor and purée until smooth. Alternatively, smash and stir with a heavy whisk until smooth.
  • Meanwhile, make the crust: Heat oven to 350 degrees. Line 24 cups of a mini-muffin tin with paper liners. Mix the graham cracker crumbs with the butter, sugar, pumpkin pie spice and salt in a bowl until evenly combined.
  • Divide mixture evenly among the mini-muffin liners (about 1 packed teaspoon per cup). Using a wine cork or your fingertips, firmly press the crumbs into an even layer. Bake until brown at the edges, 6 to 8 minutes.
  • While the crust bakes, finish the filling: Smash the sugar, butter, pumpkin pie spice and salt until well combined, then stir in 3/4 cup sweet potato, the coconut milk and the rum until smooth. Stir in the egg until just incorporated.
  • When the crusts are done, divide the filling among the hot crusts (about 1 tablespoon per cup). Sprinkle with the coconut flakes. Return to the oven and reduce the temperature to 325 degrees.
  • Bake until the coconut is golden brown and the pies are set, 30 to 35 minutes. Cool in the pans on a wire rack until room temperature, then transfer to the refrigerator. Chill until cold, at least 2 hours.
