3/4 cup milk
4 eggs
6-1/2 oz. (1/2 of 13-oz. pkg.) OSCAR MAYER Natural Uncured Turkey Sausage
6 frozen mini waffles, each cut into 4 pieces
12 CRACKER BARREL Cracker Cuts Vermont Sharp White Cheddar Cheese

Steps:

  • Heat oven to 350ºF.
  • Microwave cream cheese in medium microwaveable bowl on HIGH 15 to 20 sec. or until softened; whisk until creamy. Gradually stir in milk, then eggs.
  • Cut sausage lengthwise into quarters, then crosswise into thin slices. Place 1 waffle piece in each of 12 muffin pan cups sprayed with cooking spray; cover with sausage, cheddar and remaining waffles. Top with egg mixture, adding about 2 Tbsp. to each filled cup. Let stand 5 min. or until egg mixture is absorbed.
  • Bake 18 min. or until knife inserted in centers comes out clean.

This spin on the popular brunch dish of chicken and waffles is delightfully easy to make at home. Customize it to your taste with your favorite cheese and jam.

1/2 (1-pound) package Jimmy Dean Premium Pork Sausage
1 tablespoon canola or vegetable oil
4 slices Muenster cheese
4 frozen mini waffles
¼ cup strawberry jam

Steps:

  • Using the palms of your hands, take a dollop of the sausage and begin forming 8 small patties, about the size of silver dollars.
  • Heat the oil in a frying pan over medium-high heat, and fry each patty until they are cooked through, about 4 minutes on each side.
  • Cut each cheese slice into fourths and place two on each patty.
  • Toast your waffles, then spread jam on one side. Cut them into fourths if you're using full-size waffles. Place a sausage patty with cheese on a prepared waffle, and top with another piece of waffle. Continue until you have eight mini sandwiches.
  • Use toothpicks to hold each waffle bite together for serving.

1 pound breakfast or Italian sausage, removed from casing
4 tablespoons salted butter, at room temperature
14 to 16 slices (1/2-inch thick) French/Italian bread, left out overnight or toasted
12 ounces Gruyere, shredded
2 cups half-and-half
12 large eggs
1 tablespoon kosher salt
Cracked black pepper
3 cups broccoli florets with about 1 1/2 inches of stalk remaining
1 cup grated Parmesan

Steps:

  • In a skillet, cook the sausage over medium-high heat, crumbling it with a spoon, until mostly brown but still a little pink, about 5 minutes. Drain on a paper towel; reserve the sausage fat separately.
  • Butter both sides of the bread with the butter. Arrange half of the bread in 1 layer in a 9-by-13-inch baking dish. Top with half the sausage, followed by half the Gruyere. Repeat with another layer of the remaining bread, sausage and cheese.
  • In a bowl, whisk together the half-and-half, eggs, 2 teaspoons of the salt and some pepper. Pour the mixture over the layers of bread, sausage and cheese. Cover in plastic wrap and weigh down the strata with a couple sacks of rice/beans in a zipper top bag to compress it. Refrigerate overnight.
  • The morning of baking, remove the plastic wrap and weights. Preheat the oven to 325 degrees F.
  • Toss the broccoli with the reserved sausage fat, remaining 1 teaspoon salt and some pepper. Dot the top of the strata with the broccoli florets so the broccoli tops are still visible (to look like trees) but the stalks are submerged in the custard. Bake until the edges pull away from the dish and the center is puffed, about 45 minutes. Let rest for 5 minutes. Right before serving, sprinkle with the Parmesan to mimic snow on trees.

This strata is really easy to make. Put it together the day before, then just remove from the refrigerator and bake. Ham or bacon can be substituted for the sausage. Sometimes I add cooked chopped broccoli for a change of pace.

  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.
  • Layer bread cubes, sausage, and Cheddar cheese in a lightly greased 7x11 inch baking dish. In a bowl, beat together the eggs, milk, salt, and mustard. Pour the egg mixture over the bread cube mixture. Cover, and refrigerate at least 8 hours or overnight.
  • Remove the casserole from the refrigerator 30 minutes before baking. Preheat oven to 350 degrees F (175 degrees C).
  • Bake 50 to 60 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

2 lbs pork sausage
1/4 cup finely chopped green bell peppers (optional) or 1/4 cup red bell pepper (optional)
2 teaspoons prepared yellow mustard
12 slices white bread, crust removed
1 lb shredded cheddar cheese or 1 lb swiss cheese
6 large eggs
4 cups milk
1 teaspoon Worcestershire sauce
1/8 teaspoon black pepper
1/8 teaspoon salt
1/8 teaspoon ground nutmeg (optional)

Steps:

  • The day before:.
  • Grease a 9"x13" baking pan.
  • In a large skillet, saute sausage and peppers. Break up the sausage, stirring and frying until it is well-browned. Drain off the fat. Stir mustard into the sausage.
  • Arrange 6 slices of bread on bottom of baking pan. Top with 1/2 of the sausage and 1/2 of the cheese. Repeat with remaining bread, sausage, and cheese to make a second layer.
  • Beat eggs in large bowl. Beat in milk, Worcestershire sauce, salt, pepper, and nutmeg. Pour beaten mixture over layers in the baking pan.
  • Cover tightly and refrigerate overnight.
  • On serving day:.
  • Remove baking pan from refrigerator one hour before cooking to reach room temperature.
  • Bake uncovered at 350F for 40-50 minutes or until center seems set. Serve immediately.

2 pounds bulk spicy breakfast pork sausage
1 tablespoon rubbed sage
1/2 teaspoon fennel seed
1 package (12.3 ounces) frozen waffles, cut into bite-sized pieces
8 large eggs
1-1/4 cups half-and-half cream
1/4 cup maple syrup
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese
Additional maple syrup

Steps:

  • Fold two 18-in.-long pieces of foil into two 18x4-in. strips. Line the sides around the perimeter of a 5-qt. slow cooker with foil strips; spray with cooking spray., In a large skillet, cook and crumble sausage over medium heat; drain. Add sage and fennel., Place waffles in slow cooker; top with sausage. In a bowl, mix eggs, cream, syrup and seasonings. Pour over sausage and waffles. Top with cheese. 1/2 lb maple flavored link sausage
2 cups milk
6 slices bread
2 cups cheddar cheese
1 green pepper
1 yellow onion
2 garlic cloves
4 tablespoons butter
1 tablespoon mustard
mushroom
3 green onions

Steps:

  • Saute garlic, onion, mushrooms, and green pepper. Add bacon and sausage, fry until brown. Cube bread and layer in 9x13 pan, add meat and veggies.
  • In a separate bowl combine milk, eggs, cheese and mustard.
  • Layer wet ingredients in pan, cover and bake for half an hour. Uncover and let rest for 5 minutes before serving. Salt and pepper to taste.
