ASIAGO TOASTED CHEESE PUFFS
A rich and tasty appetizer. People will request the recipe EVERY time you make it!

Steps:
- Preheat the broiler.
- In a mixing bowl, combine the Asiago, garlic, mayonnaise, oregano, thyme, parsley, salt and pepper. If the mixture does not hold together well, add more mayonnaise, if desired.
- On a baking sheet, arrange the baguette slices in a single layer. Spread the Asiago mixture on the slices. Broil for 3 minutes, or until the cheese is melted and lightly browned. Serve immediately.

ROASTED ASIAGO CHEESE POTATOES
I love potatoes and I love asiago cheese, put the two together and YUM! I got this recipe from the local newspaper the TNT. It was a big hit with my friends and family.

Steps:
- Cut each potato into 1-inch cubes and place in a pot filled about 3/4-full with water.
- Bring to boil.
- Add salt to taste and boil potatoes for 5 minutes only.
- Drain well and pat dry.
- In a large bowl, stir together olive oil, salt garlic and pepper.
- Add potatoes and toss to coat.
- Spread the potatoes in an oiled roasting pan.
- Roast at 450 degrees for about 30-45 minutes, turning the potatoes every 5-10 minutes to insure even roasting.
- Cook potatoes until they are tender and brown.
- Transfer to a serving dish, add the asiago cheese, parsley, and toss to coat evenly.
- note- I don't peel my potatoes, but you are welcome to for this recipe if you like.

WISCONSIN ASIAGO CHEESE PUFFS
Cheese Puffs from Wisconsin, how great is that? Pepato is a semi-hard sheep's milk cheese with peppercorns. Pepato is a pepper Asiago cheese that you can find in cheese shops or specialty Italian stores. Variation: For lighter puffs, use 2 whole eggs and 4 egg whites instead of 4 eggs.

- Preheat oven to 400°F In a small saucepan, combine butter, oil, salt, cayenne pepper and water; bring to a boil. Add flour all at once; stir until mixture forms a smooth ball.
- Cook over low heat, until mixture is drier, but still smooth; place in mixing bowl. Beat in eggs, one at a time; stir in cheeses.
- Drop tablespoonfuls of batter onto greased cookie sheets. Bake for 20 minutes or until lightly browned and firm. Serve immediately.

- Preheat oven to 400°. On a work surface, unroll crust; roll to a 12-in. circle. Press crust onto bottom and up sides of an ungreased 11-in. tart pan with removable bottom. Refrigerate while preparing filling., In a large skillet, cook beef and shallot over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles. Remove from heat., In a small bowl, whisk eggs, sour cream, salt and pepper until blended. Stir in cheeses, sun-dried tomatoes, chopped basil and rosemary. Stir into beef mixture; pour into tart shell., Bake on a lower oven rack 15-20 minutes or until crust is golden brown and filling is set. Just before serving, add pine nuts and, if desired, basil.
