I created this recipe with what I had on hand. By some miracle, my entire family LOVED it. I hope you do too.

Ingredients

3 -4 carrots, peeled & sliced
1 1/2 lbs boneless skinless chicken breasts
1 (10 1/2 ounce) can cream of chicken soup
1 (1 7/8 ounce) package knorr leek soup mix
1/2 cup water
1/4 cup red wine (I used Merlot)
1/2 tablespoon parsley flakes
salt & pepper, to taste

Steps:

Spray crock pot with non-stick spray.
Layer bottom of crock pot with carrots.
Add chicken breasts.
Mix the remaining ingredients in a bowl and then pour on top of the chicken.
Cook on low for 5-6 hours or on high for 2-3 hours.
(I mixed in baby peas at serving time and served it over egg noodles.).

1-1/2 cups instant white rice, uncooked
1-1/2 cups fat-free reduced-sodium chicken broth
1/4 cup MIRACLE WHIP Dressing
1 Tbsp. chili powder
4 small boneless skinless chicken breasts (1 lb.)
1 tomato, chopped
1/2 cup KRAFT Shredded Cheddar Cheese

Steps:

Mix first 4 ingredients in large skillet. Top with chicken.
Bring to boil; cover. Simmer on low heat 25 min.
Top with remaining ingredients. Cook 10 min. or until chicken is done (165°F).
