QUICK & TASTY BONE BROTH MUSHROOM MISO SOUP RECIPE



Quick & Tasty Bone Broth Mushroom Miso Soup Recipe image

Number Of Ingredients 8

4 cups chicken bone broth OR 2-3 scoops of Plain Organixx Bone Broth Protein powder mixed in 36 ounces filtered water OR a combination of the two (i.e., 2 cups chicken broth mixed with 1 scoop of Plain Organixx Bone Broth Protein and 2 cups of filtered water)
1 cup baby portabella mushrooms OR shiitake mushrooms, chopped
1⁄2 red onion, chopped
3 cloves garlic, pressed OR minced
1 Tablespoon grated ginger
1⁄4 cup dried wakame
1-3 Tablespoons mellow white OR garbanzo miso (depending on desired taste, miso can be bitter)
Half-bunch scallions, chopped

Steps:

  • If using Organixx Plain Bone Broth Protein powder, blend bone broth powder with water to remove any lumps.
  • In a medium pot over medium-high heat, bring broth (either chicken broth or blended with bone broth protein) to a rolling simmer.
  • Add in mushrooms, onion, garlic, ginger, and wakame. Reduce heat to medium and simmer for 15 minutes.
  • Reduce heat to low and remove about 1 1⁄2 cups of broth into a separate bowl/container.
  • Whisk miso into separated broth and then add it back to the soup. Continue cooking on low heat for 5 more minutes.
  • Ladle soup into bowls and garnish with chopped scallions.
  • Enjoy!

1 cup Kettle & Fire Beef Bone Broth ((any flavor))
1/2 cup mirepoix ((chopped onion, celery and carrots))
1/2 cup tofu (cut into cubes)
1/4 cup seaweed ((optional))
1 large egg (beaten)
1/3 cup oats
1 teaspoon miso paste

Steps:

  • In a small saucepan, heat bone broth over high heat. Add mirepoix and tofu, bring to a boil.
  • Stir in seaweed, followed by the beaten egg. Stir constantly for a few seconds or until the egg is spread out. Remove from heat.
  • Stir in oats, cover, and let it sit for 5 minutes.
  • In the meantime, dissolve miso paste in some hot water in a small bowl.
  • Add the miso to the oatmeal. Taste and adjust flavor by adding more salt if desired.

11 oz Soft tofu (diced)
1 green onion (chopped)
Dash of togarashi

Steps:

  • In a medium sized pot, bring broth to a boil then bring down to a simmer over medium low heat.
  • Add miso to the broth and stir until miso dissolves.
  • Next, add the mushrooms, wakame, and tofu to your broth and simmer for 5 minutes.
  • Top the soup with green onion and togarashi before serving.
