I searched through ALL 500+ coffee cakes listed, and did not find one like this !! Have NO idea who Miss Helen was, but my MIL gave me this recipe when we were first married (48 years ago), and it has always been a favorite - and a hit.

1/3 cup flour
3/4 teaspoon cinnamon
1 egg
1 cup sugar
1 cup milk
2 1/2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder, heaped
1/4 lb butter

Steps:

  • Cut stick of butter in half length-wise, then cut each half in half lengthwise, to make 4 long pieces.
  • Cut 4 pieces into cubes and keep cold.
  • Mix topping and set aside.
  • Mix batter ingredients.
  • Spread stiff batter into buttered 9x13 baking dish.
  • Push butter cubes into batter.
  • Pour topping evenly over batter.
  • Bake at 350 degrees for 20-30 minutes, until inserted knife comes out clean.

This is an OLD recipe from Armour Star Lard handed down from my grandmother. My grandfather used to work for Armour. I substitute shortening for the lard!

Number Of Ingredients 10

1/2 cup sugar
1 cup cake flour
1/4 teaspoon salt
1 teaspoon baking powder
2 eggs
1/2 cup milk
1/4 cup lard, melted (I use shortening)
3 tablespoons sugar
1 teaspoon cinnamon
4 tablespoons chopped pecans

Steps:

  • Stir dry ingredients together.
  • Combine slightly beaten eggs and milk and add to dry ingredients.
  • Add melted shortening and stir until ingredients are well mixed.
  • Fill greased muffin tins 2/3 full of batter.
  • Combine topping ingredients and and sprinkle evenly over each cake.
  • Bake at 375* for 20-25 minutes.
  • For the Vegetarian option use Vegetable shortening.

Editing per my Grandmother to get the story right: This cake recipe was passed down to my great Grandmother Helen from my Swedish great great Grandmother Maria. It is over 100 years old...possibly 150 or more! Some of my Swedish relatives started the famous Svenhards bakery here in California. They no longer own it but their original packages have my great great Aunt Tilda's (Maria's sister) photo on them! *My Grandmother also says to please beat the egg whites...they make the cake lighter and fluffier.

1/4 lb butter, softened (1 stick)
1 1/2 cups sugar
2 egg yolks
2 1/2 cups flour
3 teaspoons baking powder
1 dash salt
1 cup milk
1 teaspoon vanilla
1 lemon, juice and zest of (My Grandmother says to only squeeze the juice out of half a lemon and only use a few pinches of zest)
2 egg whites, stiffly beaten
1 cup flour
3/4 cup light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 lb butter, softened (1 stick)

Steps:

  • Cake:.
  • Preheat oven to 350 degrees Fahrenheit.
  • Cream together butter and sugar, add egg yolks gradually.
  • Sift the flour, baking powder and salt into the batter. Stir.
  • Add milk, vanilla, lemon juice and lemon rind. Stir.
  • Beat egg whites until stiff. Fold into batter.
  • Pour into 13x9 baking pan.
  • Top with crumb topping and bake for 40 minutes or until tester comes out clean.
  • Crumb topping:.
  • Mix dry ingredients together.
  • Cut in the butter with a pastry blender or the back of a fork until it resembles crumbs.
  • Scatter crumbs over unbaked cake.

6 fresh basil leaves
1/4 cup olive oil
1 teaspoon balsamic vinegar
salt
8 -12 slices course country bread
2 large garlic cloves

Steps:

  • Preheat broiler.
  • In a bowl combine the tomatoes, basil, olive oil vinegar and salt. Toss well.
  • Place the bread on a baking sheet and broil both sides lightly (about 2 min total)
  • Remove and rub one side with slice of garlic clove.
  • Arrange bread garlic side up and spoon on topping.
  • Serve at once.

1 cup (2 sticks) salted butter, melted, plus more for baking sheets
1 cup granulated sugar
2 teaspoons ground cinnamon
8 cups firmly packed light-brown sugar
6 cups raisins, dried cranberries, dried cherries or coarsely chopped pecans or walnuts
2 cups confectioners' sugar
1/4 cup water
2 cups whole milk
1/2 cup plus a pinch granulated sugar
3/4 cup (1 1/2 sticks) salted butter, plus more for bowl
2 teaspoons salt
2 packets active dry yeast (1 scant tablespoon each)
1/2 cup warm water (110 degrees to 115 degrees)
2 large eggs, lightly beaten
6 to 8 cups all-purpose flour, plus more for work surface

Steps:

  • In a medium saucepan, combine milk, 1/2 cup sugar, butter, and salt over medium-low heat. Bring just to a simmer, then remove from heat. Let stand until cool.
  • Meanwhile, combine yeast, water, and a pinch of sugar in a small bowl. Let stand until foamy, about 5 minutes. Add yeast mixture and eggs to milk mixture, stirring to combine.
  • Butter a large bowl; set aside. Place 6 cups flour in a large bowl. Slowly stir in the milk mixture. Add enough of the remaining 2 cups flour to create a dough that comes together around the spoon, being sure not to add more than 8 cups. Transfer to a lightly floured work surface and knead until smooth and elastic, about 5 minutes. Transfer to prepared bowl, cover with plastic wrap, and let stand in a warm place until doubled in bulk, about 1 hour.
  • Turn dough out onto a lightly floured surface and knead until smooth, about 15 minutes. Cut into 4 equal pieces. Place on a baking sheet, cover with plastic wrap, and let stand until doubled in bulk, about 1 hour.
  • Preheat oven to 375 degrees. Prepare the filling: Brush 2 baking sheets with butter; set aside. Combine granulated sugar and cinnamon in a small bowl; set aside.
  • Roll each piece of dough into a rectangle about 12 inches wide and 17 inches long. Brush each rectangle generously with butter. Sprinkle each rectangle evenly with 2 tablespoons cinnamon sugar mixture, 2 cups brown sugar, and 1 cup fruit or nuts. Roll up from long side like a jelly roll. Place 2 rolls on each baking sheet. Cut diagonal slits into the tops of rolls about 1 inch apart. Brush rolls with remaining butter. Sprinkle each roll with 2 tablespoons cinnamon sugar and 1/2 cup dried fruit or chopped nuts, pressing into slits.
  • Let stand for 15 minutes. Transfer to oven and bake for 15 minutes. Reduce oven to 350 degrees.and continue to bake until light golden brown, about 20 minutes more. Transfer baking pans to wire racks and let cakes cool briefly.
  • Prepare the icing: In a medium bowl, combine confectioners' sugar and water, stirring to make a smooth glaze. Drizzle generously over warm coffee cakes.

1 cup sourdough starter
1 cup white sugar
2 cups self-rising flour
½ teaspoon salt
2 teaspoons ground cinnamon
⅔ cup vegetable oil
2 eggs
1 cup raisins or dates
1 cup chopped walnuts
1 tablespoon honey
1 cup packed brown sugar
1 teaspoon all-purpose flour
1 teaspoon ground cinnamon
¼ cup chopped walnuts
½ cup butter
1 cup sifted confectioners' sugar
2 tablespoons butter, melted
2 tablespoons milk

Steps:

  • To Make Starter: Mix 2 cups flour, 1/4 cup sugar, 2 cups warm water, 1/4 ounce yeast in a bowl, cover and let stand over night (cover should be loose). Refrigerate and stir daily. On fifth day feed Herman one cup flour, 1 cup milk and 1/2 cup sugar; stir and refrigerate. Stir daily until 10th day. On 10th day remove 1 cup starter and feed as on fifth day.
  • Preheat oven to 350 degrees F (175 degrees C). Grease four 8 inch pans or three 9 inch pans.
  • Mix together 1 cup starter, white sugar, self rising flour, salt, 2 teaspoons cinnamon, oil, eggs, raisins, 1 cup chopped nuts, honey (optional). Stir until combined. Pour into prepared pans. Top with sugar-nut topping.
  • Dot with 1/2 cup butter or margarine and bake at 350 degrees F (175 degrees C) for 15 minutes. Remove cakes from oven and pour glaze over still-warm cakes.
  • To Make Sugar-Nut Topping: Mix together 1 cup brown sugar, 1 teaspoon flour, 1 teaspoon cinnamon, 1/4 cup chopped nuts.
  • To Make Glaze: Combine 1 cup sifted confectioners' sugar, 2 tablespoons melted margarine, 2 tablespoons milk. Use immediately to glaze cake.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together 1/4 cup butter and 1/3 cup of sugar until smooth. Beat in egg and vanilla until well blended. Combine 1 1/2 cups of flour, salt and baking powder; stir into the creamed mixture alternately with the milk. Spread evenly in a 9x9 inch baking pan.
  • In a small bowl, stir together 2 tablespoons flour, 5 tablespoons sugar, and cinnamon. Add 2 tablespoons of butter, and pinch into the dry mixture using your fingers until the mixture is crumbly. Sprinkle over the top of the cake.
  • Bake for 25 minutes in the preheated oven, until a knife inserted into the center comes out clean.
