A friend gave me this divine recipe after I asked how she managed to put together such an elegant pie after a long day at work. Prepared cookie dough, marshmallow creme and a little instant coffee make it a breeze to assemble. -Barbara Keller, Highlands Ranch, Colorado

1 tube (18 ounces) refrigerated chocolate chip cookie dough
3 ounces cream cheese, softened
2 tablespoons whole milk
1 jar (7 ounces) marshmallow creme
1 tablespoon instant coffee granules
1 tablespoon hot water
1 carton (8 ounces) frozen whipped topping, thawed
2 tablespoons chocolate syrup, divided
3 tablespoons chopped walnuts

Steps:

  • Cut cookie dough in half widthwise; let one half stand at room temperature for 5-10 minutes to soften (save the other half for another use). , Press dough onto the bottom and up the sides of an ungreased 9-in. pie plate. Bake, uncovered, at 375° for 11-12 minutes or until lightly browned. Cool on a wire rack., In a large bowl, beat cream cheese and milk until smooth. Beat in marshmallow creme. Dissolve coffee granules in water. Fold the coffee, whipped topping and 1 tablespoon chocolate syrup into the cream cheese mixture. Pour into cooled crust. Chill for 1 hour. , Just before serving, sprinkle with nuts and drizzle with remaining chocolate syrup.

2 tablespoons plus 1/2 cup sugar, divided
1/2 cup butter, melted
1/4 cup cold water
1 teaspoon instant coffee granules
1 envelope unflavored gelatin
1/2 cup semisweet chocolate chips
1-1/2 cups heavy whipping cream, divided
2 packages (8 ounces each) cream cheese, softened
Caramel sundae syrup, optional
Chocolate syrup, optional

Steps:

  • Preheat oven to 350°. Combine crushed crackers and 2 tablespoons sugar with melted butter. Using the bottom of a glass, press cracker mixture onto bottom and up the sides of a greased 9-in. deep-dish pie plate. Bake until set, 12-15 minutes. Cool completely on a wire rack., Meanwhile, mix cold water and coffee granules until blended. Sprinkle gelatin over coffee mixture; let stand 5 minutes. Microwave chocolate chips and 1/4 cup cream on high until chips are melted; stir until smooth. Stir gelatin into chocolate mixture until smooth. Cool slightly. , Beat cream cheese and remaining sugar until smooth. Gradually beat in remaining cream. Beat in chocolate mixture until blended. Transfer filling to crust. Refrigerate, covered, until set, about 2 hours., If desired, drizzle with caramel and chocolate syrups.

1/4 cup unsweetened cocoa, plus more for dusting
1/2 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon, plus more for dusting
1 tablespoon strong coffee grounds
2 tablespoons walnuts
2 tablespoons mini chocolate morsels
2 tablespoons butterscotch morsels
2 teaspoons instant coffee
1 tablespoon warm water
2 eggs
1/4 cup Kahlua, divided
1/4 cup fat-free chocolate sauce, plus more for drizzling
4 cups low-fat coffee ice cream
2 cups fat-free whipped topping

Steps:

  • Preheat oven to 375 degrees F.
  • Coat a 9-inch springform pan with cooking spray and set aside.
  • In an electric mixer, combine the flour, 1/4 cup cocoa, sugar, baking soda, salt, 1/2 teaspoon cinnamon, coffee grounds, walnuts, chocolate morsels, and butterscotch morsels and mix until combined.
  • In a medium bowl, whisk together the instant coffee and warm water. Add the eggs and 2 tablespoons of Kahlua and mix until thoroughly combined. Add egg mixture to the dry ingredients and mix until fully incorporated, forming a thick dough. Transfer dough to the springform pan, press to cover the surface evenly, and bake until firm and set, about 25 minutes. Remove from the oven and with a fork poke holes all over it. With a pastry brush, brush the remaining 2 tablespoons Kahlua over the warm crust. Repeat the same process with the chocolate sauce. Allow the crust to cool completely. Once cool, top with the ice cream and smooth out. Top with the whipped topping and smooth out. Place in the freezer and allow to freeze completely. Serve dusted with cinnamon and cocoa and a tiny drizzle of chocolate sauce.

1 tub (8 oz.) COOL WHIP Whipped Topping (Do not thaw.), divided
28 thin vanilla creme-filled chocolate sandwich cookies, divided
1/4 cup finely chopped walnuts
1/3 cup butter, melted
3/4 cup brewed double-strength MAXWELL HOUSE Coffee, cooled, divided
3/4 cup half-and-half
1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding
1-1/2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate (6 oz.), divided

Steps:

  • Heat oven to 350ºF.
  • Spoon half the COOL WHIP into small bowl; refrigerate until thawed. Meanwhile, return remaining COOL WHIP to freezer.
  • Crush 20 cookies; mix with nuts and butter. Press onto bottom and up side of 9-inch pie plate. Bake 10 min.; cool. Meanwhile, chop remaining cookies.
  • Reserve 1 Tbsp. coffee. Mix remaining coffee with half-and-half in large bowl. Add dry pudding mix; beat with whisk 2 min. Stir in thawed COOL WHIP and chopped cookies. Spread onto bottom of crust.
  • Microwave 3 oz. chocolate and frozen COOL WHIP in microwaveable bowl on HIGH 2 min. or until chocolate is completely melted, stirring after each minute. Stir in reserved coffee. Let stand 15 min.; spread over pie.
  • Refrigerate 6 hours. Meanwhile, make chocolate curls from remaining chocolate. (See tip.)
  • Garnish pie with chocolate curls before serving.

This is a very easy recipe to make and is very full of flavor!! I do believe all will love it! This pie is at its best when garnished with whipped topping and chocolate curls.

8 ounces semisweet chocolate chips
1 tablespoon instant coffee powder
1 tablespoon boiling water
2 (8 ounce) packages cream cheese, softened
⅓ cup white sugar
3 eggs
¼ cup frozen whipped topping, thawed
1 (9 inch) pie shell

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a double boiler, over hot (not boiling) water, melt chocolate morsels; stir until smooth, and set aside.
  • In a cup, dissolve coffee in 1 tablespoon boiling water.
  • In a large bowl, beat cream cheese and sugar together until smooth. Add eggs one at a time, beating well after each addition. Add melted chocolate and coffee; mix well, then blend in frozen whipped topping.
  • Pour mixture into pie shell and bake in preheated oven for 35 to 40 minutes. Turn oven off and allow pie to stand in oven with door ajar for 15 minutes. Remove from oven and let cool. Refrigerate 20 to 30 minutes before serving. Garnish with whipped topping and chocolate curls just prior to serving, if desired.

1/4 teaspoon salt
1/3 cup brown sugar
1/3 cup cold butter
3 tablespoons finely chopped semisweet chocolate

1 teaspoon vanilla
2 teaspoons water
1 cup unsalted butter, softened
1 cup brown sugar
4 teaspoons instant coffee
2 teaspoons vanilla
3 ounces unsweetened chocolate, melted
4 eggs
2 cups heavy cream, cold
2 tablespoons instant coffee (plus 1 teaspoon)
1/2 cup powdered sugar
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla
grated chocolate (for topping) (optional)

Steps:

  • Crust:.
  • Preheat oven to 350. Combine the flour, salt and brown sugar. With a pastry blender or 2 knives, cut in the butter.
  • Stir in the chocolate and nuts. Mix the vanilla and water and add to the crumbs.
  • Work the mixture with your hands to combine. With floured fingers, push the mixture into a 9 inch pie plate, covering the bottom, sides and rim. Bake for 20 minutes. Cool completely.
  • Filling:.
  • In an electric mixer, cream the butter till fluffy and smooth. Add the sugar, coffee and vanilla and beat till smooth. Add the melted chocolate. Again beat smooth.
  • Add the eggs one by one, beating for several minutes after each addition.
  • (NOTE: If you prefer to cook the eggs first, mix them with 1/4 cup milk and heat over medium low heat, till the mixture thickens and bubbles a bit, and coats a spoon -reaching a temperature of 160. Cool and add to the chocolate mixture.).
  • Spread the mixture into the pie crust. Chill several hours. (At this point, the pie can be wrapped and frozen. Defrost in the refrigerator for 6-8 hours.).
  • Topping:.
  • Just before serving, whip together the cream, coffee, powdered sugar, cocoa and vanilla till stiff enough to hold a shape. Cover the top of the pie and top with grated chocolate, if desired.
