Butter and flour for coating pan
1 1/2 cups poppy seeds
1 1/2 cups finely ground almonds
1/2 cup bread crumbs
1/8 teaspoon ground cinnamon
1/8 teaspoon ground clove
1 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, at room temperature
1 1/4 cups confectioners' sugar, plus additional for garnish
1 teaspoon grated lemon zest
1/2 teaspoon vanilla extract
9 eggs, separated
1/2 cup plus 3 tablespoons sugar

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch kugelhopf mold and coat with flour. Place the poppy seeds in a blender and blend until ground fine. Transfer to a bowl and mix in the ground almonds, bread crumbs, cinnamon, clove, baking powder and salt. Set aside.
  • In a mixing bowl with an electric mixer, cream the butter and the confectioners' sugar until light. Mix in the lemon zest and the vanilla. Beat in the egg yolks one at a time.
  • In a separate bowl, whip the egg whites until soft peaks form. Gradually add the sugar and whip until stiff but not dry. Fold the whites into the yolk mixture. Fold in the poppy seed mixture.
  • Scrape the batter into the prepared pan. Bake until a skewer inserted into the center of the cake comes out clean, about 55 minutes. Place the pan on a rack to cool. Turn the cake out onto a cake plate and sift confectioners' sugar over the top.

1 cup buttermilk, shaken
1/3 cup poppy seeds (1.75 ounces)
Nonstick baking spray with flour, such as Baker's Joy
1/2 pound (2 sticks) unsalted butter, at room temperature
2 1/2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1/3 cup grated lemon zest, loosely packed (4 to 5 large lemons)
2 3/4 cups all-purpose flour
1/4 cup cornstarch
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup freshly squeezed lemon juice, divided
1 cup sifted confectioners' sugar
1 1/2 tablespoons freshly squeezed lemon juice

Steps:

  • Pour the buttermilk into a 2-cup liquid measuring cup, stir in the poppy seeds, and set aside at room temperature for at least 2 hours.
  • Preheat the oven to 350 degrees F. Thoroughly spray the inside of a Bundt pan with the baking spray and set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and 2 cups of the granulated sugar on medium speed for about 5 minutes, until light yellow and fluffy. With the mixer on low, add the eggs, one at a time, the vanilla, and lemon zest, scraping down the bowl with a rubber spatula.
  • Sift the flour, cornstarch, salt, baking powder, and baking soda into a medium bowl. Add 1/4 cup of the lemon juice to the buttermilk mixture. With the mixer on low speed, alternately add the flour mixture and buttermilk mixture in thirds, beginning and ending with the flour. Scrape the bowl with a rubber spatula to be sure the batter is well mixed. Spoon the batter into the prepared pan, smooth the top, and bake for 40 to 50 minutes, until a cake tester comes out clean.
  • Meanwhile, place the remaining 1/2 cup of granulated sugar and the remaining 1/2 cup of lemon juice in a small saucepan and cook over high heat until the sugar dissolves. Set aside. When the cake is done, allow it to cool in the pan for 10 minutes, then turn it out onto a baking rack set over a large plate. Spoon the warm lemon syrup slowly over the cake, allowing it to be absorbed into the cake. Set aside for at least 30 minutes to cool.
  • For the glaze, whisk the confectioners' sugar and lemon juice together in a small bowl, adding a little more sugar or lemon juice to make a smooth, thick, but pourable glaze. Drizzle over the cake, allowing it to drip down the sides. Transfer to a flat cake plate and serve at room temperature.

1/3 cup honey
1 cup butter or 1 cup margarine
1 1/2 cups sugar
4 eggs, separated
1 cup sour cream
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda, scant
1 teaspoon baking powder
1 teaspoon salt

Steps:

  • In small sauce pan cook poppy seed with honey and 1/4 cup water for 5-7 minutes.
  • Cool.
  • Cream butter/margarine and sugar until light and fluffy.
  • Add cooled poppy seed mixture to creamed mixture, and egg yolks one at a time, beating well after each addition.
  • Blend in sour cream and vanilla.
  • Sift together flour, baking soda, baking powder, and salt.
  • Gradually add poppy seed mixture to dry mixture, beating well.
  • Beat egg whites until stiff and fold into batter.
  • Pour batter into a lightly greased and floured 9-inch tube (or bundt) pan.
  • Bake at 350 degrees for 1 hour and 15 minutes.
  • Cool in pan for 5 minutes.
  • Remove from pan and cool on a wire rack.

Steps:

  • In a small saucepan, combine the poppy seeds and milk. Bring to a boil, remove from heat, and allow to rest until cool, about 20 minutes.

Unsalted butter, for pan
3 tablespoons all-purpose flour, plus more for pan
1/2 cup poppy seeds
3 tablespoons finely ground toasted walnuts (3/4 ounce)
1/2 teaspoon pure almond extract
1/4 teaspoon salt
2 large eggs, separated
1/2 cup sugar
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees. Butter a 7-inch springform pan. Line the bottom with parchment paper; butter parchment, and dust with flour, tapping out excess. In a small bowl, combine poppy seeds, walnuts, flour, almond extract, and salt.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg yolks and 1/4 cup sugar on medium-high speed until pale and thick, about 3 minutes. Transfer to a large mixing bowl. Add the poppy-seed mixture, but do not stir in.
  • Place egg whites in a heatproof mixer bowl set over a pan of simmering water until warm to the touch. Attach bowl to mixer fitted with a clean, dry whisk attachment, and beat on high speed until soft peaks form. Beat in remaining 1/4 cup sugar until stiff and glossy peaks form. Fold egg whites into egg-yolk mixture in three batches.
  • Spread batter evenly in prepared pan, and bake until lightly golden and firm on top, about 30 minutes. Transfer to a wire rack to cool completely. Carefully remove sides of pan, and transfer torte to a serving plate. Dust with confectioners' sugar, and serve in wedges.

100 g melted butter
20 g sugar
2 eggs
50 g granola cereal or 25 g ground almonds
150 g raisins
300 g flour
6 teaspoons baking powder
100 g low fat Quark (firm yogurt works as well)
6 tablespoons milk
3 tablespoons oil
3 tablespoons applesauce
100 g sugar
1 pinch salt
1 teaspoon ground vanilla

Steps:

  • In a bowl mix poppy seeds, butter, sugar, eggs, granola cereal/almonds and raisins. Stir until well blended.
  • In a second bowl mix baking powder and flour. Add quark, milk, oil, applesauce, sugar, vanilla and salt. Using the dough hooks work into a smooth dough (first on low then on highest speed). Do not knead longer than 1 minute or dough will become sticky.
  • Roll out on a floured surface into a rectangle of 35X45 cm. If the dough is too sticky, add a little flour.
  • Spread with the poppy-seed-mixture and roll up starting on the longer side.
  • Carefully place on a paper-lined baking sheet and cut a criss-cross-pattern into the top of the dough (about 1.5 cm deep). Brush with a little milk.
  • In the preheated oven bake at 180°C/350°F for about 30-35 minutes.

175g golden caster sugar
200g self-raising flour
4 lemons , zested and 2 juiced for icing
3 eggs
2 tbsp poppy seeds
125g pot natural yoghurt
200g icing sugar
3 tbsp lemon juice (see above)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line the base of a 20cm square deep cake tin (or if using a decorative tin like ours, grease well).
  • In a bowl, beat the butter and sugar until fluffy. Add the rest of the ingredients and beat until combined. Spoon into the tin and smooth over the top. Bake for 40-45 mins. Cool in the tin for 10 mins, then turn out, peel off the parchment and leave to cool on a wire rack.
  • Sift the icing sugar into a bowl. Beat in the lemon juice to make a runny icing. Pour over the cake and leave to set.
