CHOCOLATE PRUNE CAKE
This cake is most, delicious, and it has a perfect texture. You can top it with powdered sugar or icing, if you like. We don't think it needs anything else.

Steps:
- Preheat oven to 350°F.
- Prepare bundt pan.
- Sprinkle soda on prunes.
- Pour boiling water over and allow to cool.
- Cream butter and sugar in food processor.
- Add eggs.
- Add prune mixture and process for 15 seconds.
- Gradually add flour sifted with cocoa.
- Mix until blended with on/off motion.
- Pour into pan.
- Bake 45-55 minutes.
- When cool, turn out.
- Sprinkle with powdered sugar.

Steps:
- 1. For cake: Cream first three ingredients together; blend well. In seperate bowl, combine dry ingredients and mix well. Add flour mixture and buttermilk to creamed mixture; mix well. Stir in prunes. Spray glass pan with non-stick spray and pour mixture into pan. Bake at 375 degrees for 30-40 minutes, or until cake is done.
- 2. For glaze: Heat buttermilk and sugar in a saucepan until sugar melts. (Don't allow to boil.) Pour gradually over hot cake, allowing glaze to soak in before adding more. You could poke holes in the cake to help it along.

- In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the dry ingredients; add to creamed mixture alternately with prune juice, beating well after each addition. Stir in prunes. , Pour into a greased 10-in. fluted tube pan. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

- Preheat oven to 325°. Sift together dry ingredients in a bowl. Add oil, coffee and milk; mix at medium speed 1 minute. Add eggs and vanilla; beat 2 minutes longer. (Batter will be thin.) , Pour into 2 greased and floured 9-in. round baking pans (or two 8-in. round baking pans and 6 muffin cups). , Bake until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool 10 minutes before removing from pans. Cool on wire racks. , Meanwhile, for icing, combine milk and flour in a saucepan; cook until thick. Cover and refrigerate. , In a bowl, beat butter, shortening, sugar and vanilla until creamy. Add chilled milk mixture and beat 10 minutes. Frost cooled cake. If desired, dust with additional cocoa.
