A sweet, buttery yeast bun from The Family Christmas Cookbook: Best-loved Recipes from the Christmas Annual

1 medium potato, peeled and cubed
1/4 cup water
1/2 cup butter
4 -5 cups all-purpose flour
1 cup sugar
1 teaspoon salt
1 (1/4 ounce) package active dry yeast
2 eggs, beaten
1/4 cup cold butter
8 teaspoons sugar

Steps:

  • Place cubed potato and enough water to cover in small saucepan. Bring to a boil; reduce heat to medium-low. Cook potatountil fork-tender. Drain, reserving 1/2 cup of the potato water. Mash potato to measure 1/2 cup; set aside.
  • In the same saucepan combine potato water, 1/4 cup of water and1/2 cup butter. Heat until very warm (120 to 130 degrees F).
  • Meanwhile, in a large bowl, combine 2 cups of the flour, the sugar,salt, and yeast; mix well. Add warm potato water mixture; beat until well blended. Add remaining flour, 1/2 cup at a time, beatinguntil smooth. Cover and refrigerate 8 to 24 hours.
  • Grease cookie sheets. Punch down dough several times to remove all air bubbles. Place dough on lightly floured surface. Knead dough 6 to 10 minutes or until smooth and elastic. Dividedough into 16 pieces. Shape each into smooth, round bun; place on greased cookie sheets. Cover loosely with plastic wrap and cloth towel. Let rise in warm place (80 to 85 degrees F) until doubled in size, about 45 minutes.
  • Heat oven to 375 degrees F. Uncover dough. Cut 1/4 cup cold butter into 16 equal pieces. Press one piece into the center of each bun. Sprinkle each with 1/2 teaspoon sugar. Bake 20 to 30 minutes or until golden brown. Serve warm.

These sweet rolls are very similar to the kind found in bakeries...only better! Pineapple adds just the right amount of sweetness. My husband can't eat just one.

Number Of Ingredients 15

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 tablespoon plus 1/4 cup sugar, divided
1 cup warm 2% milk (110° to 115°)
1/2 cup butter, melted, divided
2 large eggs, room temperature, lightly beaten
1 teaspoon salt
5 to 5-1/2 cups all-purpose flour
TOPPING:
1-1/2 teaspoons cornstarch
1 can (8 ounces) crushed pineapple, undrained
GLAZE:
1-1/2 cups confectioners' sugar
1 teaspoon vanilla extract
1 to 2 tablespoons 2% milk

Steps:

  • In a large bowl, dissolve yeast in warm water. Add 1 tablespoon sugar; let stand for 5 minutes. Add milk, 1/4 cup butter, eggs, salt, remaining sugar and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. , Punch dough down. Turn onto a floured surface; divide in half. Roll each into a 12x8-in. rectangle. Brush with some of the remaining butter. Roll up, jelly-roll style, starting with a long side. Pinch seam to seal. , Cut each into 12 slices. Place, cut side down, 2 in. apart on greased baking sheets. Brush with remaining butter. Cover and let rise in a warm place until doubled, about 30 minutes. Preheat oven to 425°., Meanwhile, in a small saucepan, combine cornstarch and pineapple until blended. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. , Place a teaspoonful of filling in the center of each roll. Bake until golden brown, 12-16 minutes. Remove from pans to wire racks. , For glaze, combine sugar, vanilla and enough milk to achieve desired consistency. Drizzle over warm rolls.

The lemony fragrance eminating from these rolls while they're baking calls one to put on the coffee pot and wait with plate in hand until they are done and you can "unroll" one to cool it off a little and tear into it. Good stuff! Recipe adapted from a Romanian cookbook.

7 cups all-purpose flour
1 tablespoon salt
1 ounce compressed yeast cake
2 1/2 cups lukewarm milk
3 eggs
4 tablespoons soft butter
3/4 lb sweet butter
1 1/2 cups granulated sugar
3 lemons, rind of, grated

Steps:

  • For the dough:.
  • Dissolve yeast in 1/4 cup lukewarm milk.
  • Beat eggs slightly and combine with remaining 2-1/4 cups lukewarm milk.
  • Sift flour and salt into large mixing bowl.
  • Make a well in the flour and add yeast mixture, 4 tablespoons soft butter and egg-milk mixture.
  • Mix all, then knead until the dough is smooth and elastic, about 15 minutes. Cover and let rise for 30 minutes.
  • Prepare filling:.
  • Cream butter and sugar well.
  • Add grated lemon rind and continue beating until very light and fluffy.
  • To assemble:.
  • Divide dough in half and place 1/2 dough on lightly floured cloth.
  • Roll and stretch until thin.
  • Spread 1/2 of the butter mixture over entire surface, and roll as for jelly roll.
  • Cut into 2" pieces, dip one end in flour and place in ungreased 9"x13"x2" pans arranging so that rolls barely touch.
  • Repeat with other half of dough. Cover and let rise 2 hours or doubled in bulk.
  • Bake in 350F degree oven for 45 minutes.
