4 cups sifted powdered sugar
1 pkg. (4 oz.) BAKER'S Unsweetened Chocolate, melted
1/2 cup chopped walnuts
1 tsp. vanilla

Steps:

  • Beat cream cheese in large bowl with mixer until creamy. Gradually beat in sugar until blended.
  • Add remaining ingredients; mix well.
  • Spread onto bottom of 8-inch square pan sprayed with cooking spray.
  • Refrigerate several hours or until firm.

Fudge is not a twentieth-century invention, but fast fudge is. This recipe, an adaptation of the famous uncooked fudge developed by Philadelphia Brand Cream Cheese, became popular shortly after World War II, is as foolproof as it is fast. And it never turns gritty. From American Century Cookbook.

1 (6 ounce) package semi-sweet chocolate chips
2 (3 ounce) packages cream cheese, at room tmeperature
2 tablespoons milk or 2 tablespoons cream
4 cups sifted confectioners' sugar (10X)
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup coarsely chopped pecans or 1 cup walnuts

Steps:

  • Butter 9x9x2" baking pan well, set aside.
  • Melt chocolate chips in double boiler over hot, not boiling, water.
  • Blend cream cheese and milk in large electric mixer bowl, beating at high speed until smooth.
  • Add powdered sugar, 1/2 cup at a time, and beat at low speed until creamy.
  • Blend in melted chocolate chips, vanilla and salt, beating until smooth.
  • Stir in pecans.
  • Press mixture into pan, cover with plastic wrap, and chill over night or until firm.
  • Cut into 1 1/4" squares.

3 cups sugar
1/2 cup butter
1 cup whole milk
Dash of salt
4 ounces unsweetened chocolate
1 teaspoon vanilla extract
1 cup chopped pecans or walnuts

Steps:

  • Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.

1 1/2 cups all-purpose flour
1 cup sugar
1/4 cup cocoa (Hershey's preferably)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup canola oil (Wesson preferably)
1 teaspoon vinegar
1 teaspoon vanilla
8 ounces Philadelphia Cream Cheese
1 large egg
1/3 cup sugar
1/8 teaspoon salt
chocolate chips

Steps:

  • Pre-heat oven to 350°.
  • Mix together all the cake ingredients-fill lined cupcake pans half full.
  • In separate bowl mix all the topping ingredients together-place 1/2 teaspoon of cream cheese mix on top of each cupcake.
  • Top with chocolate chips (about eight per cupcake but who actually counts (except my mom).
  • Bake for 15-18 minutes or until done.
  • Let cool before serving.
  • ENJOY!

3/4 cup (1 1/2 sticks) salted butter
2 2/3 cups sugar
1 can (5 ounces) evaporated milk
12 ounces semisweet chocolate, finely chopped
2 1/4 cups Momma Reiner's Homemade Marshmallow Cream
1/2 teaspoon pure vanilla extract

Steps:

  • Melt butter in a heavy-bottomed saucepan over medium heat. Add sugar and evaporated milk; bring to a boil. Cook, stirring, until mixture reaches the soft-ball stage, 234 to 240 degrees on a candy thermometer, about 6 minutes.
  • Add chocolate and stir until melted. Add marshmallow cream and vanilla; stir or blend using an immersion blender, until well combined. Remove from heat; use immediately.
