- Cook macaroni according to package directions. Meanwhile, in a saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the cheeses, stirring until cheese is melted. Drain macaroni., Transfer macaroni to a greased 1-1/2-qt. baking dish. Pour cheese sauce over macaroni; mix well. Melt the remaining butter; add the bread crumbs. Sprinkle over top. Bake, uncovered, at 375° for 30 minutes or until heated through and topping is golden brown.

MOM'S BAKED MACARONI AND CHEESE
Mom's cooking is the best! Especially when it's her family-favorite Baked Macaroni and Cheese, loaded with melty Vermont white cheddar. Around our parts, it's just not a holiday meal without it.

Steps:
- PREPARE MACARONI & CHEESE LAYERS: Cook macaroni in salted water; drain.
- In a 1 & 1/2-quart baking dish coated with non-stick cooking spray, layer macaroni and cheese in this order: 1. 1/2 of the macaroni, 2. one cup cheese, 3. remaining macaroni, and 4. one cup cheese. Set aside.
- PREPARE WHITE SAUCE: Melt butter in a medium saucepan over medium heat. Remove from heat and whisk in flour. Return to heat and gradually whisk in milk. Add salt and pepper. Bring to a boil, stirring; boil gently for about one minute until sauce is thickened.
- Pour white sauce evenly over the top of the macaroni. Top with remaining one cup cheese.
- For creamy macaroni and cheese, bake immediately. For "firmer" macaroni and cheese, cover and refrigerate overnight or for at least 4-6 hours before baking.
- BAKE: Bake at 375℉ for 35-45 minutes until cheese is melted and top is lightly browned.
- For a 9x13-inch pan, I make 1 & 1/2 times the recipe.
- For cheese, I always use Cabot brand Vermont sharp or extra-sharp white cheddar.

This is a macaroni and cheese I first made 3 years ago when I was in California. When I got back to Texas I made it for my mom. This is now her favorite baked macaroni and cheese. She begs me to make it when I come to visit.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a medium saucepan over medium heat. Saute onion for 2 minutes. Stir in flour and cook 1 minute, stirring constantly. Stir in milk, salt, mustard and pepper; cook, stirring frequently, until mixture boils and thickens.
- Meanwhile, bring a pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- To the milk mixture add the Cheddar and American cheeses; stir until cheese melts. Combine macaroni and cheese sauce in a 2 quart baking dish; mix well.

- Heat oven to 375°F. Cook and drain macaroni as directed on package using minimum cook time.
- Meanwhile, in 2-quart saucepan, melt butter over medium heat. Cook onion, salt and pepper in butter, stirring occasionally, until onion is crisp-tender.

This is a recipe that my grandmother found years ago. My mother tweaked it and it's definitely a comfort food classic in my household. I personally prefer extra-sharp Cracker Barrel but use whatever cheddar you prefer.

- Preheat oven to 375 degrees.
- Shred the cheddar cheese or chop into very small cubes. *Shredded cheese will melt faster than cubed cheese, but it's also messier and takes longer to do. It's up to you.*.
- Melt the butter in a saucepan. Add flour, salt and pepper off of the heat. Gradually add the milk and stir continuously for about 10 minutes or until the sauce has thickened.
- Add cheese and melt.
- Meanwhile, boil the macaroni for about 5 minutes. Pour macaroni into a glass casserole dish and then pour cheese sauce over. Stir until macaroni is coated.
- Sift bread crumbs over the top of the macaroni.
- Bake about 30 minutes or until the bread crumb crust is crispy.

MOM'S BAKED TOMATO AND CHEESE MACARONI
This is not your everyday mac & cheese. It always tasted best when Dad would stop in Pinconning MI on his way home from deer hunting each year to pick up a huge round of Pinconning cheese. Mom had 5 hungry kids sitting at the table waiting for this to come out of the oven!

- Note 1: If you can't find Ready-Cuts, use a small penne pasta or mostaccioli. Elbows don't have enough substance for this recipe.
- Note 2: You may use stewed or diced tomatoes.
- Note 3: I use a combination of Pinconning, Colby, and mild Cheddar cheese. You may use your favorite(s).
- Boil macaroni in salted water, 3 minutes less than package directions. Drain. It will finish cooking in the oven.
- Sauté onion in butter until soft and translucent. Add the can of tomatoes to the onions and let simmer over low heat for 5 minutes.
- Cut cheese into small chunks and set aside.
- Preheat oven to 350°.
- Spray a 9X14" glass pan with non-stick cooking spray. Layer half the tomatoes and cheese in the pan. On top of this, layer 1/2 of the cooked, drained macaroni, then the remaining tomatoes, then the remaining macaroni, and top with the remaining cheese.
- Pour 1/4 cup water over the top. Cover with foil.
- Bake in the oven for 35 to 45 minutes. Remove from oven and let stand for 5 minutes before serving.
