MOM'S BROCCOLI & GREEN OLIVE SALAD



Mom's Broccoli & Green Olive Salad image

Mom has made this for years. We love olives and this gives the salad a zip. Of course, adjusting the amounts of each ingredient is a personal choice, if you like more bacon or more olives, etc.

1 bunch fresh broccoli, cut to bite size pieces
1/4 cup cooked bacon (you can also use imitaion bacon bits if you are in a hurry)
1/4 cup green olives, chopped
mayonnaise
7 hard-boiled eggs, cut up

Steps:

  • Mix broccoli, bacon and green olives together.
  • Mix in enough mayo to hold the above ingredients together.
  • Gently mix in the eggs, adding more mayo to hold all ingredients together.
  • We serve this on lettuce leaves.

(This Southern-inspired recipe can be made up to 24 hours ahead, then stored in the fridge.) While most traditional Southern broccoli salads feature a creamy mayonnaise dressing and are finished with bacon bits and grated cheese, this vegan riff offers a punchy vinegar mixture that serves as a quick pickling liquid for the onions and raisins before it's used as the final dressing. If you are making this salad in advance, leave the toasted almonds out until you are ready to eat.

1/2 cup golden or black raisins (or dried cranberries)
1/2 red onion, finely sliced
1/4 cup apple cider vinegar
4 teaspoons granulated sugar
Kosher salt (such as Diamond Crystal)
3 tablespoons extra-virgin olive oil
1 tablespoon sesame oil
1 1/2 pounds broccoli (about 2 heads)
1 apple (any variety), cored and cut into ½-inch cubes
2 scallions, white and green parts, finely sliced
Kosher salt (such as Diamond Crystal) and black pepper
1/2 cup toasted sliced almonds, pepitas or sunflower seeds (see Tip)
1 cup red or green grapes (optional), halved crosswise

Steps:

  • Make the dressing: Place raisins and red onion in a small bowl. Add vinegar, sugar, ¾ teaspoon salt and 2 tablespoons of water, and toss to combine. Leave to pickle for 10 minutes while you prepare the rest of the ingredients.
  • Peel the woody exterior from the broccoli stalks and discard. Chop the stalks into ½-inch pieces. Chop the broccoli florets into ½-inch pieces. (The pieces do not have to be uniform or the same shape.) Place all the broccoli into a large mixing bowl.
  • After 10 minutes, finish the dressing by adding the olive oil and sesame oil to the bowl with the pickling raisins and red onion, and stir well to combine. Taste and season with more salt if needed. It should be tangy, slightly sweet and a little salty.
  • Add the raisin-and-onion dressing to the broccoli along with the apple and scallions. Using two large spoons, toss well so that everything is well coated. Season with 1/2 teaspoon salt and black pepper to taste. Taste to make sure you are happy with the seasonings, adding more if needed.
  • When you are ready to eat, add the almonds and grapes (if using), and gently toss. Serve at room temperature.

⅓ red onion (sliced)
12-15 black olives ((more or less, Olive Garden doesn't use too many, but you can add as many as you want))
2-4 whole banana peppers
½ cup croutons
1 tomato (quartered, (you can cut into smaller pieces if you prefer))
freshly grated parmesan cheese (for topping)
½ cup mayonnaise
⅓ cup white vinegar
1 teaspoon vegetable oil
2 Tablespoons corn syrup
2 Tablespoons parmesan cheese
2 Tablespoons Romano cheese
¼ teaspoon garlic salt ((or one clove garlic minced))
½ teaspoon Italian seasoning
½ teaspoon parsley flakes
1 Tablespoon lemon juice

Steps:

  • Place bag of salad in a large bowl.
  • Place red onion, black olives, banana peppers, tomatoes, and croutons on top of salad. Add some freshly grated Parmesan cheese if you like, and add plenty of Olive Garden salad dressing on top. You can add more or less of each ingredient depending on your preference.
  • Blend all ingredients together and chill until ready to use. The dressing will be more of a white color, but will taste very similar to Olive Garden's House Dressing.

1 pound broccoli, chopped
¼ cup finely chopped red onion
1 cup green olives, sliced
1 (4 ounce) jar diced pimentos, drained
¾ cup mayonnaise
1 teaspoon dry mustard powder
½ pinch salt, or to taste
½ teaspoon celery seed
1 tablespoon chopped fresh dill

Steps:

  • Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel and chop once cold.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add the broccoli and cook uncovered until bright green and just tender, about 2 minutes. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the broccoli is cold, drain well and set aside.
  • Combine the red onion, hard-cooked eggs, green olives, pimentos, mayonnaise, mustard powder, salt, celery seed, and dill in a mixing bowl. Stir in the drained cooked broccoli. Refrigerate overnight for best flavor.
