Easy to make pregnancy energy balls with date fruit, chia seeds, cacao, coconut and almonds. Packed with protein and healthy fats this pregnancy snack will keep you full longer. Gluten free, dairy free and grain free.

12-14 dates (Deglet Noor)
1/2 cup of unsweetened shredded coconut
1 cup of raw almonds
1 tbsp of cacao powder (or cocoa)
1 tsp of chia seeds
2 tbsp coconut oil

Steps:

  • First soak the dates in bowl of water for about 20 minutes.
  • Blend until smooth. Scrape down the side and blend again. (2-3 mins)
  • If dough seems too dry and isn't sticking add a additonal 1-2 tbsps of coconut oil and blend again.
  • Roll into little balls and place on a parchment lined baking pan.
  • Place in freezer for 30 minutes and then enjoy!

Quick and easy date-nut cookies! All in one pan! Mom and I have made these every year for Christmas since I can remember. Store in an airtight container.

½ cup butter
1 cup white sugar
1 cup chopped dates
1 cup chopped walnuts
1 egg, beaten
2 ½ cups crisp rice cereal
2 cups flaked coconut, or to taste

Steps:

  • Melt butter in a large skillet over medium heat. Add sugar, dates, walnuts, and beaten egg. Bring to a boil, stirring occasionally. Boil until dates have softened and melted into the mixture, 3 to 5 minutes. Remove from the heat and stir in rice cereal.
  • Place coconut in a shallow bowl.
  • Scoop rounded teaspoonfuls of dough and drop them into the coconut, rolling and pressing until coated.

When I was a youngster, Mom always baked these tender old-fashioned cookies dotted with chewy dates and crunchy walnuts. Much to the delight of my family, I've continued her delicious tradition.

1/2 cup butter, softened
1/3 cup confectioners' sugar
1 tablespoon 2% milk
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1/4 teaspoon salt
2/3 cup chopped dates
1/2 cup chopped nuts
Additional confectioners' sugar

Steps:

  • Preheat oven to 325°. In a bowl, cream butter and sugar. Beat in milk and vanilla. Combine flour and salt; gradually add to creamed mixture. Stir in dates and nuts. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake until bottoms are lightly browned, 22-25 minutes. Roll warm cookies in confectioners' sugar; cool on wire racks.

  • Cool. Roll mixture into balls and roll in icing sugar. You may need to roll them twice to get a good coating.

My mom makes these every Christmas. They are really delicious and so pretty too, like they have snow sprinkled on top. Hence the name, "Frosty" :) These can be thrown together in about 30 minutes and keep in an airtight container for about 1-2 weeks.

1/2 cup margarine
1/3 cup powdered sugar
1 tablespoon water
1 teaspoon vanilla
1 1/4 cups flour
1 dash salt
2/3 cup chopped dates
1/2 cup chopped walnuts
powdered sugar, for rolling

Steps:

  • Cream butter and 1/3 cup powdered sugar until light and fluffy.
  • Mix in water, vanilla, flour, salt, dates, and walnuts.
  • Roll into balls a little larger than the size of walnuts and bake on an ungreased baking sheet 2 1/2 inches apart at 300 degrees F for 20 minutes (Till soft but NOT brown.).
  • While warm, roll in powdered sugar OR sift powdered sugar over warm cookies.

1 teaspoon water
1 cup chopped walnuts
2 egg white
1 cup packed brown sugar
1 tablespoon butter
1 cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a small saucepan over low heat, combine butter, water, and dates. Bring to a boil, then remove from heat, and let stand for 10 minutes.
  • Pour date mixture into a medium bowl. Mix in the brown sugar and chopped nuts.
  • Whip egg whites in a small bowl until stiff. Fold egg whites into date mixture. Roll dough into 2 inch balls and roll in shredded coconut. Place on cookie sheets about 2 inches apart
  • Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.
