PORK CHOPS AND DIRTY RICE
This recipe is very easy and quite tasty. I have made it every year for the last 25 years. Children seem to love it. The rice has a wonderful flavor.

Steps:
- Preheat an oven to 375 degrees F (190 degrees C).
- Heat the oil in a large skillet over medium heat; brown the pork chops on both sides. Remove the pork chops from the skillet, reserving the drippings in the skillet; add the onion soup mix and the water to the drippings; cook and stir until hot.
- Spread the rice evenly into the bottom of a 2 quart casserole dish. Lay the pork chops atop the rice. Pour the mixture from the skillet over the pork chops and rice; cover.
- Place covered dish in preheated oven and bake 45 minutes. Remove cover and bake until the pork is no longer pink in the center, another 15 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

ONE DISH PORK CHOPS WITH DIRTY RICE

Steps:
- In a medium size microwavable bowl mix together the rice and 1 ¼ cups chicken broth; cover. Microwave on high for 10 minutes or until liquid is absorbed; fluff with a fork.
- While rice is cooking season pork chops generously with salt and pepper. In a 12 inch skillet using the oil brown the chops on one side for 4 - 6 minutes; set chops aside on a plate.
- Reserve about 1 tablespoon of fat in the skillet and cook the onion, red pepper, and sausage until vegetables are softened. Mix in the thyme, Cajun seasoning, and garlic and continue cooking for about 30 seconds or until fragrant. Stir in the remaining chicken broth stirring any dripping from the bottom of the pan, and then mix in the pre-cooked rice.
- Arrange the pork chops on top of the rice mixture, cover, and cook on low heat for 8 - 10 minutes or until pork chops are 145F and the rice is tender.
- Remove pork chops to a serving platter, cover with aluminum foil, and let rest for 5 minutes. (when removing the chops scrap any rice sticking to the chops back into the pan)
- Add the green onions into the rice mixture and serve with the chops; Enjoy.
PORK CHOPS AND RICE
Steps:
- Preheat the oven to 350 degrees F.
- In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
- Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
- Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.

- Sprinkle pork with 3/4 teaspoon seafood seasoning. In a large skillet, heat oil over medium heat; brown chops on both sides. Remove from pan., Add pepper and onion to skillet; cook and stir until tender, 4-5 minutes. Stir in remaining seafood seasoning, Worcestershire sauce, peas, tomatoes, rice and broth. Bring to a boil. Place chops over top. Reduce heat; simmer, covered, until a thermometer inserted in pork reads 145°, 2-3 minutes. Let stand, covered, 5 minutes before serving.

PORK CHOPS OVER RICE
If you asked my husband to name his favorite foods, he'd likely mention these chops. I've also served this appealing skillet supper to company. Ever since I clipped the recipe out of the paper many years ago, it's become a standard in my kitchen. We live in a semi-rural area with two horses and six cats!

- Preheat oven to 350 degrees. Grease 9" X 9" casserole pan. Start rice cooking.
- Rub pork chops with dry mustard and cloves, brown on both sides in skillet with 1 tsp olive oil. Arrange pork chops in pan. Place one onion slice and then one tomato slice on top of each pork chop.
- Drain mushrooms (retain liquid), set mushrooms aside. Mix soup, mushroom liquid and water. Add to rice and mix well. Cover entire dish with rice mixture, being careful not to dislodge the onions and tomatoes from the chops, and filling in between chops so that there are no gaps. Spoon sliced mushrooms over top of rice mixture.
- Bake, covered, at 350 degrees for 55-65 minutes.
- Serve with a spatula to preserve your nice chop/tomato/onion stack.
