MOM'S BEST SPICED EGGNOG
This eggnog recipe was the traditional holiday drink while growing up and now it's the traditional drink in my home. I've tried several nog recipes, but to this day this one is still my favorite. Optional: add brandy or liqueur of choice when serving.

Steps:
- Combine sugar, 1/2 teaspoon cinnamon, nutmeg, and allspice in a bowl.
- Whip egg whites with an electric mixer on high speed until soft peaks form. Reduce speed to medium and beat, gradually adding 1/2 of sugar mixture, until stiff peaks form.
- Beat egg yolks in a separate bowl until thick and lemon colored. Mix remaining sugar mixture into the yolks. Fold yolk mixture into the egg whites. Add milk and half-and-half; combine gently. Garnish with remaining cinnamon.

HOMEMADE EGGNOG

Steps:
- In a heavy saucepan, whisk together eggs, sugar and salt. Gradually add 4 cups milk; cook and stir over low heat until a thermometer reads 160°-170°, 30-35 minutes. Do not allow to boil. Immediately transfer to a large bowl., Stir in vanilla, nutmeg and remaining milk. Place bowl in an ice-water bath, stirring until milk mixture is cool. (If mixture separates, process in a blender until smooth.) Refrigerate, covered, until cold, at least 3 hours. , To serve, beat cream until soft peaks form. Whisk gently into cooled milk mixture. If desired, sprinkle with additional nutmeg before serving.

MOM'S SPICED EGGNOG PANCAKES
These are a fun change of pace during the holiday season. Serve with maple syrup or warm applesauce.

- Whisk flour, baking powder, salt, nutmeg, and cinnamon together in a large bowl.
- Whisk eggnog, eggs, oil, and rum extract together in a small bowl. Add to flour mixture and mix briefly to combine. Batter should be slightly lumpy.
- Grease a griddle lightly with cooking spray and heat over medium-high heat. Pour 1/4 cup batter onto the griddle and cook until bubbles form and the edges are dry, 2 to 3 minutes. Flip and cook until browned on the other side, 1 to 2 minutes. Repeat with remaining batter.

MAMA'S EGGNOG
Every holiday needs a little sweet and spice with some eggnog. This recipe calls for bourbon, heavy cream, milk and sugar. Enjoy this drink responsibly.

Steps:
- In a bowl beat the egg yolks with the ½ cup of sugar until thick. In another bowl beat the egg whites with ¼ cup of sugar until thick. In a third bowl beat the cream until thick. Add the cream to the yolk, fold in the egg whites, and add the milk, Bourbon, vanilla, and a pinch of nutmeg if desired. Chill in freezer before serving.
- Serve Eggnog in a large punch bowl.

- Beat yolks in a very large bowl until thick and pale. Slowly beat in sugar. Whisk in milk and 2 cups cream. Mix in bourbon, rum, and Cognac. Cover, and refrigerate for up to 1 day.
- Just before serving, beat whites until stiff peaks form. Fold whites into eggnog. Whisk remaining 1 cup cream until stiff peaks form, and fold into eggnog. (Alternatively, you can fold half the whipped cream into eggnog, and top with remaining half.) Sprinkle with nutmeg.
