MAMA'S CHEWY OATMEAL COOKIES
Chewy and delicious. Everyone that tries my oatmeal cookies gets hooked! I recreated this recipe from memory from my childhood. They are so good, they have a place in every woman's cookbook in my family.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Beat brown sugar, shortening, milk, egg, and vanilla extract in a bowl until mixture is creamy. Stir oats, flour, baking soda, and salt into moist ingredients. Drop dough by spoonful onto ungreased baking sheets.
- Bake in the preheated oven until cookies are lightly golden brown, 8 to 10 minutes.

MOM'S RAISIN OATMEAL COOKIES
Soft cake-like cookie studded with plump raisins and sweetened with brown sugar - a childhood favorite.

- Preheat oven to 375 degrees F (190 degrees C).
- Sift the flour together with the soda, salt, and cinnamon. Stir in the oats. Combine the other ingredients and add them to the flour mixture, stirring thoroughly.
- Drop by tablespoonful onto ungreased cookie sheet. Bake 15 to 18 minutes. Remove to wire rack to cool.

MARI'S HOMEMADE OATMEAL COOKIES
Steps:
- Preheat the oven to 375 degrees F.
- Using an electric mixer, cream the butter and both the brown and granulated sugar. Add the eggs and vanilla and beat well. In another bowl, sift together the flour, baking soda, baking powder and salt. Stir in the dry mixture to the butter mixture. Then add the oatmeal, pecans and coconut.
- Using an ice cream scooper, drop some of the dough on an ungreased baking sheet 2 inches apart. Bake until the cookies turn a light brown, about 10 minutes. Remove from the oven and cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely. Repeat with the remaining dough.
FAMILY-FAVORITE OATMEAL COOKIES
My mother got this recipe in about 1910 when she was a housekeeper and cook for the local physician. The doctor's wife was an excellent cook and taught my mother of lot of her cooking techniques. The cookies soon became a favorite in our home and, when I got married and had a family of my own, they were a favorite throughout the years. My five children also enjoy baking these cookies for their own families-it's a real family tradition.

- In a large bowl, cream sugar and shortening until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, salt, baking powder, soda and cinnamon; add alternately to the creamed mixture with buttermilk. Fold in the oats, raisins and nuts. , Drop dough by heaping tablespoonfuls onto greased baking sheets. Bake at 350° for 12 minutes or until lightly browned. Remove to wire racks.

- Preheat oven to 350* Put raisins in a bowl with water so they will plump up...
- In mixing bowl Cream together Shortening and sugar, add in eggs and cream...
- Add in all dry ingredients, except nuts and raisins and mix well...Add milk a little at a time till mixed well.
- Drain raisins, stir in raisins and nuts...Place spoon fulls on to cookie sheet..Bake at 350* for 10 to 12 minutes or till golden..

MOM'S OATMEAL COOKIES
From an old Tupperware cookbook.This is my family's favorite oatmeal cookie recipe. I have been making this since I was little. I give a favorite uncle this every year for Christmas. He hides them so no one else can have any. You can either sift the flour or not. If you sift it the cookies spread more. My family prefers unsifted, the cookies stay more compact & moist. I changed it a little bit, original recipe made a base cookie mix for 12 dozen cookies.

- Sift flour, soda, salt & sugar together.
- Add brown sugar, oats and shortening.
- Mix together with pastry blender until in fine crumbs.
- Add eggs, milk and vanilla.
- Use your imagination. I add 1 cup chopped walnuts, 3/4 cup coconut and sometimes raisins for my hubby. You could add M & M's, chocolate chips or whatever.
- Drop unto greased cookie sheet. Bake at 375 degrees for 15-18 minutes.

- Blend the butter and both sugars together in a large bowl with a hand mixer (or a standing mixer), until well blended. Beat in the egg, then beat in the vanilla. Add the flour mixture gradually mixing on low speed until each batch is incorporated. Mix in the oats, and the raisins.
- Use a ¼ cup measuring cup (or ice cream scoop) to measure out balls of the dough, which should be placed on an ungreased cookie sheet with at least 3 inches in between each ball (you should bake 6 cookies per classic-sized cookie sheet). Use the bottom of a glass to flatten each ball. Cover the baking sheet with plastic wrap and refrigerate for 2 days, longer if you like. (You can also layers the flattened disks of dough two layers deep in a container, with parchment or wax paper in between the layers, if that’s easier in terms of fridge space).
