FOOLPROOF POPOVERS
Bake Melissa d'Arabian's recipe for hollow, golden Foolproof Popovers from Ten Dollar Dinners in a muffin tin for the perfect accompaniment to a Sunday roast.

- Special equipment: muffin tin
- Preheat the oven to 400 degrees F.
- Using a pastry brush, coat 8 muffin cups with 1 tablespoon of the melted butter and put the tin in the oven for 5 minutes. Meanwhile, mix the eggs in a blender until light yellow. Add the warmed milk and blend. Add the flour, salt and remaining melted butter, and blend until smooth. Pour the batter into the warmed muffin tin and return it to the oven to bake until golden, about 35 minutes. Remove from the oven and serve warm.
POPOVERS
Steps:
- Place the milk in a bowl and microwave on high for 2 minutes, or until warm to the touch.
- In a large mixing bowl, sift the flour, salt and baking powder together.
- Beat the eggs in the bowl of an electric mixer fitted with a whisk on medium speed for about 3 minutes until foamy and pale in color. Turn down the mixer to low speed and add the warm milk. Gradually add the flour mixture and beat on medium speed for about 2 minutes. Turn the machine off and let the batter rest for 1 hour at room temperature.
- Preheat the oven to 450 degrees F.
- Spray a popover tin generously with nonstick spray. Fill the popover cups almost to the top with the batter and place the popover tin on a cookie sheet. Transfer to the oven and bake for 15 minutes. Turn down the oven temperature to 375 degrees F and bake for 30 to 35 minutes longer, until the popovers are a deep golden brown on the outside and airy on the inside. Turn out the popovers and serve hot with strawberry butter.

- Grease pans. Mix and sift flour and salt. Combine eggs, milk, and shortening. Gradually add to flour mixture, beating about one minute or until batter is smooth. Fill greased sizzling hot pans about three-quarters full and bake in very hot oven (450°F) about 20 minutes. Reduce heat to moderate (350°F) and continue baking for 15 or 20 minutes.

POPOVERS
Popovers begin with essentially the same batter as Yorkshire pudding. Purists will tell you that what makes Yorkshire pudding so great is that it's cooked in beef drippings. But butter isn't a bad stand-in, and popovers are pretty easy. You can buy special popover pans, with deeper, narrower cups which force the tops up in a more pronounced fashion, but I wouldn't bother. Any muffin pan will produce a perfect popover if the butter is hot, the batter is rich and smooth and the baker is patient. But the patience ends when the popovers are done: they must be eaten right away.

- Preheat oven to 425 degrees. Drizzle a teaspoon or so of melted butter in each cup of a 12-cup muffin pan or a popover tin and put it in oven while you make batter.
- Beat together the eggs, milk, 1 tablespoon butter, sugar and salt. Beat in the flour a little bit at a time and add thyme if using; mixture should be smooth.
- Carefully remove muffin tin from oven and fill each cup about halfway. Bake for 15 to 20 minutes, then reduce heat to 350 degrees and continue baking for 15 minutes more, or until popovers are puffed and browned. Do not check popovers until they have baked for a total of 30 minutes. Remove from pan immediately and serve hot.

- Combine 1/2 cup sugar and 1/3 cup water and cook until small amount of syrup forms soft ball in cold water (240°F). Cook remaining 1-1/2 cups sugar, 1/3 cup water and corn syrup until it forms a hard ball in cold water (254°F). Cool first syrup slightly. Add slowly to egg whites, beating constantly about 1 to 2 minutes, or until mixture loses its gloss. Add second syrup in same way. Add vanilla and turn into greased pan. Cut in squares when cold. This candy is softer and creamier than the regular divinity.
