These English Muffin Tuna Melts are perfect for those days when you don't feel like cooking but you still want good homemade food. You can have a delicious lunch or dinner ready in just 20 minutes!

3 (4.5 to 5-ounce) cans tuna in olive oil (or water) (drained)
3 ribs celery (diced)
3 tablespoons finely diced onion
6 tablespoons mayonnaise
¾ teaspoon black pepper
salt (to taste)
3 English muffins (halved)
6 Campari tomatoes (each sliced into three slices)
6 slices provolone cheeese

Steps:

  • Preheat the broiler.
  • In a large bowl, combine the tuna, celery, onion, mayonnaise, and pepper. Mix until well combined. Season to taste with salt, if desired. Note: some brands of tuna may already have salt added, so you may not need to add any additional salt.
  • Lightly toast the English muffins halves and place on a baking sheet (I line the baking sheet with aluminum foil for easy cleanup).
  • Divide the tuna salad mixture evenly among the English muffin halves.
  • Top each with three slices of tomato. Lightly season tomatoes with salt and pepper, if desired.
  • Top each with one slice of cheese. If the slice of cheese is really big, break it into pieces first so that the cheese stays on top of the tuna melt rather than melting down the sides and onto the baking sheet.
  • Place the tuna melts under the broiler until the cheese is melted.
  • Best when served immediately.

2 tablespoon finely chopped shallot (1 medium)
2 tablespoon snipped dried cranberries
Fresh dill sprigs (optional)

Steps:

  • Preheat oven to 375°F. Generously coat twelve 2 1/2-inch muffin cups with cooking spray; set aside. Lightly brush one side of bread slices with melted butter. Press bread slices, buttered sides up, into the prepared muffin cups.
  • In a small bowl combine tuna, mayonnaise, and honey mustard. Stir in cheese, shallot, and dried cranberries. Divide tuna mixture among bread-lined muffin cups.
  • Bake about 15 minutes or until filling is hot and bubbly. Remove tuna cups from muffin cups; let stand for 5 minutes before serving. If desired, garnish with fresh dill.

1 small onion, finely diced
¼ teaspoon minced garlic
½ teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon chopped fresh cilantro
¼ teaspoon onion powder
¼ teaspoon sea salt
¼ teaspoon ground black pepper
2 (5 ounce) cans albacore tuna packed in water, drained
½ cup mayonnaise
3 English muffins, split
1 large vine-ripened tomato, cut into 6 slices
6 slices American cheese

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Melt butter in a small frying pan over low heat. Add onion and garlic and saute over low heat until soft and translucent, 5 to 7 minutes. Stir in seafood seasoning, cilantro, onion powder, salt, and pepper. Remove from heat.
  • Combine tuna and mayonnaise in a bowl. Add the sauteed mixture from the frying pan and blend well with a fork.

2 tablespoons prepared mayonnaise (optional)
1 recipe Tuna Salad, recipe follows
1 cup shredded sharp farmhouse Cheddar cheese
Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole grain mustard
Freshly ground black pepper,
Freshly squeezed lemon juice, to taste (optional)

Steps:

  • Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
  • Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.

1 1/2 lbs potatoes, peeled (raw weight)
1/3 lb tuna
1/3 cup water
1 bunch spring onion, finely chopped
1/4 cup mayonnaise
1/2 cup ricotta cheese
1/4 cup fish sauce
1/4 teaspoon Old Bay Seasoning
fresh ground black pepper, to taste
2 eggs, beaten
1/2 cup mozzarella cheese, grated

Steps:

  • Boil or microwave potatoes til soft and mash. Leave to cool til warm.
  • Boil tuna in the water til cooked through. Flake fish and add with the water to potatoes.
  • Add spring onion, mayonnaise, ricotta cheese, fish sauce, Old Bay and pepper and mix well together.
  • Mix in beaten eggs. This will make the mixture very soft.
  • Spoon into a greased muffin pan, filling to the top.
  • Spinkle mozzarella cheese on top with a light sprinkling of Old Bay.
  • Bake at 180C for 30 minutes.
  • Leave to cool in muffin pan for 10 minutes so that the fish cakes can firm up a bit.
