THE BEST SEEDED CRACKERS

The Best Seeded Crackers image

Delicious super crispy, super seed crackers with pumpkin seeds, sunflower seeds, sesame seeds, and flaxseed - these healthy low-carb keto crackers are great for snacking and platters

Provided by Samira

Categories     Snack

Time 1h10m

Number Of Ingredients 8

2¼ cups water
1.5 cups sunflower seeds
1/2 cup pumpkin seeds
1 cup sesame seeds
1/3 cup flaxseeds
1/2 tsp salt
1 tsp dried rosemary (or your favourite herb)
2 Tbsp psyllium husk flakes

Steps:

  • Mix all the ingredients in a large mixing bowl. Then add water and stir well.
  • Set aside and allow to thicken for about 20 minutes. The mixture will thicken and become gooey/gel-like in consistency. This is your cracker 'dough.'
  • Transfer the mixture over to a baking sheet covered with parchment paper. Spread into a thin layer. You might need to use two baking trays. I don't measure mine, but I like my crackers to be around 4-5mm in thickness.
  • Bake in the oven for 1 hour at 150ºC/300ºF. You can adjust the baking time (+/- 10 minutes) depending on how browned/golden and crispy you prefer your seeds to be. Keep an eye, though - because of how thin the crackers are, they can burn quickly.
  • To get evenly cut flax seed crackers, you can cut them halfway through baking. Otherwise, they might be too hard to cut/break evenly. You can use a pizza cutter to do this really quickly, or a knife.
  • However, you can also just break them apart after baking, into 'uneven' pieces, for a rustic look.
  • Remove the crackers from the oven and leave to cool completely before transferring to a container/ eating.
  • How To Store:These keto crackers will store in an airtight container for up to three weeks at room temperature. They may last longer, but I've never had any left past that point.Depending on what additions you add to the crackers (such as cheese), then this may vary. But the plain seed crackers themselves don't have anything that 'spoils,' so they should be okay for weeks.

HOMEMADE MULTI-SEED CRACKERS

Homemade Multi-Seed Crackers image

Turn leftover brown rice and quinoa from dinner or meal-prepping into these delicious crispy crackers that are loaded with three good-for-you seeds--and create an everything-bagel flavor, without the bagel. The whole grains that make up this copycat cracker recipe add lots of fiber for a healthy snack that pairs perfectly with hummus or cheese.

Provided by Carolyn Casner

Categories     Healthy Vegetarian Rice Recipes

Time 1h

Number Of Ingredients 9

1 cup cooked brown rice, at room temperature
1 cup cooked quinoa, at room temperature
¼ cup sesame seeds
¼ cup flaxseeds
¼ cup sunflower seeds
2 tablespoons reduced-sodium tamari
2 tablespoons water
¼ teaspoon salt
¼ teaspoon ground pepper

Steps:

  • Place oven racks in upper and lower sections of the oven. Preheat to 350 degrees F. Cut 3 pieces of parchment paper the size of a large baking sheet.
  • Place rice, quinoa, sesame seeds, flaxseeds, sunflower seeds, tamari, water, salt and pepper in a food processor. Process until finely chopped and coming together in a ball. The dough will be sticky.
  • Divide the dough in half. Place 1 piece of dough between 2 sheets of the prepared parchment paper. Roll out as thin as possible. Remove the top sheet of parchment and place the dough with parchment on a baking sheet. Repeat with the remaining dough and prepared parchment.
  • Bake for 15 minutes. Switch the position of the baking sheets and continue baking until dark around the edges and crisp, 12 to 15 minutes more. Remove from oven and carefully break into roughly shaped crackers. If some crackers aren't fully crisp, return them to the oven and bake for 5 to 10 minutes more.

2019-10-21 Homemade seed crackers recipe. If the idea of making homemade healthy food sounds challenging to you, you can relax. Making these multi seed crackers is easier than making regular bread crackers. Some “fancier” foods are sometimes perceived as more difficult to make as a default. It is not the case with these crackers.

  • In a food processor, combine the pumpkin seeds and sunflower seeds. Pulse until the seeds are coarsely ground. Transfer to a large bowl, and add the brown rice flour, ground flaxseeds, chia seeds, sesame seeds, herbs de Provence, baking soda and salt. Whisk to combine. Drizzle in the olive oil and water. Using a fork or pastry cutter, incorporate the liquids into the dry ingredients until fully combined and the texture resembles coarse meal.
  • Transfer the dough to a lightly floured piece of parchment paper, and gather it into a disk. If the dough seems crumby, drizzle in 1 to 2 tablespoons of water to help it stick together. The dough should be the texture of Play-Doh.
  • Roll the dough into a 1/4-inch thickness (Marie rolls it thinner, but I find a slightly thicker cracker works better for the gluten-free version). The dough will crack as you go, but you can simply pat it back together. Lightly sprinkle the dough with more flour as needed to prevent sticking. Using a pizza cutter or knife, cut the dough into 2-inch wide strips (The dough will seem quite tender and delicate, but don’t fear! Just patch it back together as needed). Cut the strips crosswise to create 2-inch wide crackers. Nudge the crackers apart slightly and brush off any excess flour using a pastry brush. Carefully slide the parchment (with the crackers on top) onto a baking sheet (a rimless baking sheet works great here). Lightly spray the crackers with cooking spray, and sprinkle them with flaky sea salt. Bake until the edges of the crackers are lightly golden, about 20 to 25 minutes. Transfer to a wire rack and let cool completely before serving.

  • Place ground flax seeds in a large mixing bowl, stir in 90 ml / 6 tbsp of water and set aside in the fridge for the mixture to thicken into flax eggs. Use 3 tbsp of ground flax and 120 ml / ½ cup of water for a firmer / less delicate cracker.
  • Preheat your oven to 180° C / 355° F oven and line a large baking tray with some baking paper.
  • Once thickened, add in all the seeds, seasonings and oil and stir through until all the ingredients are evenly distributed. If not using nutritional yeast (which I recommend if you have it), you may need an extra tablespoon of rice / almond flour to absorb the extra moisture.
  • Blob the mixture on the prepared baking tray and compress the mixture roughly using a spatula, then to make sure the mixture is even and as thin as possible (about 0.5 cm / 0.2"), place another piece of baking paper on top of the mixture and roll it out with a rolling pin. Make sure it's evenly compressed with no gaps.
