MUSSELS MARINIERE
Steps:
- Scrub mussels. Pull off beards, the tuft of fibers that attach each mussel to it's shell, cutting them at the base with a paring knife. Discard those that do not close when you handle them and any with broken shells. Set aside.
- Combine onion, garlic, 4 tablespoons parsley, bay leaf, thyme, wine, and 2 tablespoons butter in large pot. Bring to boil. Lower heat, and cook 2 minutes. Add mussels, and cover. Cook just until shells open, 3 to 4 minutes. Do not overcook. Remove mussels from sauce, and place in bowls.
- Strain liquid, and return to pot. Add remaining butter and parsley. Heat until butter melts. Pour over mussels.

MUSSELS MARINIERE

Steps:
- Place a grill pan over high heat. Drizzle both sides of the bread with olive oil. Grill the bread, on both sides, until toasted, about 3 minutes per side. Remove and set aside.
- In a large saute pan or cast iron skillet, melt the butter with the shallots, herbs and mussels. Add the wine and seasonings, to taste. Cover and cook over high heat until the mussels are open. Season to taste and finish with chopped parsley. Place the grilled bread on top of the mussels and drizzle with Bearnaise Sauce.
- Bearnaise Sauce:
- 2 medium shallots, minced
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup dry white wine
- 1/2 cup white wine vinegar
- 3 egg yolks
- 4 tablespoons water
- 1/2 teaspoon salt
- 1/2 pound unsalted butter, clarified
- 1 tablespoon minced fresh tarragon
- In a small saucepan, combine the shallots, pepper, white wine, and vinegar. Reduce over medium heat until 1 tablespoon liquid remains.
- In a heat-resistant mixing bowl, combine the egg yolks, water, salt, and shallot mixture. Whip over hot, but not boiling, water until thick and creamy. Slowly whisk in the butter, a few drops at a time, until the sauce begins to emulsify. In a slow stream, whisk in the remaining butter until it is completely incorporated. Whisk in the tarragon. Correct seasoning to taste. Keep warm until needed.

PASTA WITH CLAMS AND MUSSELS MARINIERE

Steps:
- In a large stock pot, bring salted water to a boil. Debeard mussels. Set aside.
- In a large saute pan, over high heat, combine the butter and olive oil. Add the shallots and garlic and cook for 1 to 2 minutes until translucent. Do not brown. Add the chili flakes and stir to combine.
- Add the reserved mussels, clams, tarragon, thyme, and rosemary and continue to saute until herbs begin to turn fragrant. Deglaze with white wine and season with salt and pepper. Cover the pan and continue to cook over high heat until the shellfish have opened, about 3 to 4 minutes.
- Meanwhile, add a couple tablespoons of salt and a drizzle of olive oil to the boiling water. Add the pasta and cook until al dente. Drain. Remove cover from saucepan containing the shellfish and discard the sprig of rosemary. Taste the sauce and adjust seasoning, if necessary. Add the cooked pasta, chopped parsley and tarragon, and Parmesan. Toss with sauce and shellfish until well blended. Serve immediately.
MUSSELS WITH LINGUINE

Steps:
- Bring water to boil for pasta.
- Rinse mussels in cold water. Scrub and remove beards. Discard any mussels whose shells are open.
- Combine mussels with wine and thyme in pot, and cover. Steam mussels until they open, 5 to 7 minutes.
- Chop whole onion.
- Heat oil in nonstick pan until it is very hot; reduce heat to medium high; add onion, and saute until it begins to soften.
- Meanwhile, mince garlic, and add it to onion as it cooks.
- When mussels are cooked, remove from liquid and set aside. Add 1 cup of the cooking liquid to the onion, and boil to reduce to 1/4 cup.
- Shuck mussels, discarding any that are not open.
- Cook linguine according to package directions.
- Add mussels to onion mixture, and heat through.
- Whisk yogurt and ricotta to make a smooth mixture. Wash, dry and chop parsley. Grate cheese.
- Drain pasta.
- Remove mussel mixture from heat. Stir in yogurt-ricotta mixture, parsley, cheese and pepper, and mix well. Spoon over pasta, and serve.

MUSSELS A LA MARINIERE
A classic dish of the south of France. Serve with a glass of chilled white wine and plenty of crusty French bread. You can also substitute clams.

Steps:
- Place mussels in a large bowl with cold water to cover. Tap each mussel on the counter as you do; discard any shells that fail to close. Let them soak for about 20 minutes to remove any dirt or sand.
- Heat olive oil and butter in a large stockpot over medium-low heat. Add garlic and saute until fragrant, about one minute, but do not brown. Add the wine and chicken broth, and simmer briskly until reduced by half. Add the tomatoes and cook 4-5 minutes, until nearly tender.
- Drain mussels and add to pot. Cover and simmer briskly 5 minutes. Add the scallion and parsley. Re-cover and simmer another 5 minutes, until all the shells are open. Season with salt and pepper to taste. Discard any shells that fail to open.
- Serve each diner 8 mussels with a good ladle of the sauce and plenty of crusty bread to mop it up.

- Scrub mussels and pull off beards, cutting them at the base with a paring knife. Discard those that do not close when you handle them and any with broken shells.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
- Meanwhile, in a large skillet place 2 tablespoons butter or margarine, onion, garlic, parsley, bay leaf, thyme and wine. Bring to a boil and lower heat; cook for 2 minutes. Add mussels; cover and cook just until they open, 3 to 4 minutes. Do not overcook.
- Divide pasta into 4 bowls and spoon mussels over noodles.
- Strain mussel liquid, and return to pot. Add remaining butter or margarine and heat until it melts. Pour over mussels and serve.

MUSSELS SAILOR STYLE (MOULES MARINIERE)
Every year we host a mussel party. The number of attendees continues to increase as word gets out about how great this recipe is. I always serve these mussels with plenty of crusty breads (french loaves, focaccia etc.) for dipping as the juices are just amazing.

Steps:
- Place mussels in bowl and cover with cold water.
- Discard any that are open or cracked.
- Scrub under cold running water and remove beards.
- Melt butter in a large pot, stir in shallots and garlic and saute gently until soft.
- Add wine and bouquet garni.
- Bring to a boil for 2 minutes.
- Add a pinch of salt and black pepper to taste.
- Add mussels and cover pot.
- Cook over high heat until mussels open.
- Remove mussels from pot with a slotted spoon, set aside (keep warm).
- Discard any mussels that did not open.
- Boil the remaining liquid (with bouquet garni) until reduced to half, then return mussels to the pan and heat through.
- Sprinkle with parsley and stir.
- Place mussels into a warmed serving dish and pour liquid over top.
- Serve.
