1 (16 ounce) package dry corn bread mix
2 tablespoons butter
½ cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock
2 tablespoons dried sage
salt and pepper to taste

Steps:

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
  • In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
  • In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
  • Place into prepared dish and bake at 350 degrees F (175 degrees C) for 30 minutes.

I've tried on quite a few occasions to "gussy up" my family's cornbread dressing recipe. All of the attempts have ended with subpar results and little to no fanfare, so I keep coming back to the classic. Of course the secret to this rich Southern side dish is the butter. But is that really a secret? This version yields an amazingly moist dressing just begging to be drenched in bourbon gravy.

1 cup (2 sticks) unsalted butter
2 cups finely chopped celery
2 cups finely chopped onion (about 2 medium-sized onions)
5 cups day-old crumbled cornbread, recipe follows
2 cups herb-seasoned stuffing mix, such as Pepperidge Farm
1/4 cup minced fresh sage
4 cups turkey or chicken stock, plus more as needed (preferably homemade)
4 eggs, lightly beaten
Freshly ground black pepper, to taste
1/2 cup stone-ground yellow cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
2 teaspoons kosher salt
1/2 teaspoon baking soda
Freshly ground black pepper
2 cups buttermilk
2 large eggs
2 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 400 degrees.
  • Melt butter in a large skillet over medium heat. Saute the celery and onion until soft and translucent, 10 to 12 minutes.
  • In a large bowl, add the celery, onion, cornbread, stuffing mix, and sage. Stir in the chicken stock and eggs and mix until completely combined. Season with a few grinds of black pepper. The mixture should be fairly soupy. Pour into a lightly greased 9 by 13-inch baking dish. Bake, uncovered, until the dressing is set and golden brown, 45 minutes to an hour.
  • Preheat the oven to 425 degrees. Grease a large cast-iron skillet and place in the oven to heat while mixing the batter.
  • In a large bowl, mix the cornmeal, flour, sugar, baking powder, salt, baking soda, and a few generous grinds of black pepper.
  • In a separate bowl, whisk the buttermilk, eggs, and melted butter together until combined. Pour into the dry ingredients and stir until just combined (it's okay if it's a little lumpy). Pour the batter into the hot cast-iron skillet and bake until the top is golden brown, about 25 minutes.
  • Immediately remove the cornbread from the skillet and allow to cool. The cornbread can be made up to 2 days in advance when using for the dressing. Store until needed, then crumble and follow instructions for the dressing.
  • If enjoying the cornbread immediately (not for the dressing recipe), remove the cornbread from the oven, invert it onto a large plate, and then flip it once more so it is right side up. Slice into wedges and serve warm with lots of butter.

2 tablespoons bacon drippings
18 cups cornbread, precooked and crumbled
7 (14 ounce) cans chicken broth

Steps:

  • Bake 4 8x8 inch baking dishes of cornbread. Allow to cool and crumble.
  • Brown celery and onion in margarine and bacon grease. Spread precooked cornbread in disposable turkey roaster pan sprayed with cooking spray. Stir in all ingredients. Bake at 350 degrees for 1 1/2-2 hours. May spoon additional turkey drippings over dressing if it begins to dry out before meal time.

4 tablespoons coconut oil
1 large yellow onion, small diced
1 cup small-diced celery
1 cup small-diced carrots
4 cups homemade Cornbread Croutons, recipe follows, or store-bought
4 cups store-bought seasoned croutons
1 tablespoon fresh thyme, chopped
2 teaspoons fresh rosemary, chopped
1 teaspoon fresh sage, chopped
1 teaspoon cayenne pepper, optional
1 quart chicken stock
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
2 large eggs, beaten
5 tablespoons coconut oil plus more for greasing the baking sheet, melted
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
Kosher salt and freshly ground white pepper
1 cup almond milk or regular milk, at room temperature
1/4 cup applesauce, at room temperature
1/4 cup sorghum (see Cook's Note)
1 large egg, at room temperature

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the coconut oil over medium heat in a large skillet. Saute the onion, celery and carrots until tender, 8 to 10 minutes. Remove from the heat and put into a large bowl. Add the cornbread croutons, seasoned croutons, thyme, rosemary, sage and cayenne if using. Add the chicken stock and stir to combine. Taste and add salt and pepper, then stir in the eggs. Mix to combine and pour into a 9-by-13-inch casserole dish. Bake until golden brown and fluffy but still moist, 45 to 55 minutes.
  • Preheat the oven to 375 degrees F.
  • Add 1 tablespoon of the coconut oil to a 6-inch cast-iron skillet. Put the skillet in the oven and allow to heat until very hot, 6 to 8 minutes.
  • Combine the cornmeal, flour, baking powder and 1 teaspoon salt in a large bowl with a whisk. In a different bowl, combine the almond milk, applesauce, sorghum, egg and 2 tablespoons coconut oil. Make a well in the center of the dry ingredients and pour in the wet. Fold to combine.
  • Carefully remove the skillet from the oven and pour in the batter. Return the skillet to the oven and bake until golden with a crisp crust, 25 minutes. Let cool before cutting the cornbread into 1-inch pieces (about 8 cups).
  • Reduce the oven to 350 degrees F.
  • Grease a baking sheet with some coconut oil and spread the cornbread in a single layer. Be careful, the cornbread is fragile and you don¿t want to be rough with it. Drizzle lightly with the remaining 2 tablespoons coconut oil and sprinkle with salt and pepper. Cook, stirring halfway through, until golden brown and crunchy, 30 to 40 minutes. Cool on the baking sheet before using.

2 cups yellow cornmeal
½ cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon white sugar
2 cups buttermilk
6 large eggs, divided
2 tablespoons butter
½ cup butter
1 bunch green onions, chopped
5 stalks celery, diced
4 ½ (14 ounce) cans chicken broth, divided
1 (5 ounce) package herb-seasoned croutons
5 large hard-boiled eggs, chopped
1 teaspoon ground black pepper
1 teaspoon dried sage

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine cornmeal, flour, baking powder, baking soda, salt, and sugar in a large bowl. Stir together buttermilk and 2 eggs in a separate bowl; add to dry ingredients and stir until just moistened.
  • Heat 2 tablespoons butter in a cast iron skillet over medium heat until hot. Pour cornbread batter into the skillet.
  • Place skillet into the oven and bake until cornbread is golden brown, about 25 minutes. Remove from the oven and allow to cool, 20 to 30 minutes. Turn oven off.
  • Melt 1/2 cup butter in a large skillet over medium heat. Add green onions and celery; saute until tender, 5 to 7 minutes.
  • Crumble cooled cornbread into a large roasting pan. Add onion-celery mixture, 1 can chicken broth, croutons, hard-boiled eggs, pepper, and sage. Cover and place in the refrigerator, 8 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Remove dressing from the refrigerator. Stir in remaining 4 eggs and 3 1/2 cans chicken broth.
  • Bake in the preheated oven until golden brown, about 1 1/2 hours.

5-6 slices white bread
1 onion, chopped
1 cup chopped celery
1/2 cup margarine
3-4 raw eggs
1 can cream of mushroom soup
1 can chicken & rice soup
Salt & pepper
1-2 cans chicken broth

Steps:

  • Crumble cornbread and place in large baking pan. Toast the white bread, crumble and add to cornbread.
  • Saute onion and celery in margarine and add to bread. Add raw eggs, soups, salt & pepper to taste and mix well. Then add chicken broth to thin mixture a little.
  • Bake at 350°F for approx. 1 hr.

1 medium spaghetti squash (about 4 pounds)
1 package (8-1/2 ounces) cornbread/muffin mix
1 medium onion, finely chopped
2 celery ribs, thinly sliced
1/2 cup butter, cubed
2 garlic cloves, minced
1/2 pound bulk pork sausage, cooked and drained
1 cup frozen corn
2 tablespoons poultry seasoning
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup chopped walnuts, toasted
1 cup chicken broth
1/4 cup grated Parmesan cheese

Steps:

  • Cut squash lengthwise in half; remove and discard seeds. Place squash in a roasting pan, cut side down; add 1/2 in. of hot water. Bake, uncovered, at 375° for 45 minutes. Drain water from pan; turn squash cut side up. Bake 5 minutes longer or until squash is tender., Prepare and bake cornbread mix according to package directions, using an 8-in. square baking dish. Cool to room temperature; crumble bread. Place in an ungreased 13x9-in. baking pan. Bake at 350° for 8-13 minutes or until lightly browned, stirring twice. , In a large skillet, cook onion and celery in butter over medium heat for 4 minutes. Add garlic; cook 2 minutes longer. This is my version of my family's cornbread dressing passed down from my mother. My sister Beverly makes a delicious version and I must say I am 2nd in line. I hope you all like this as much as our family does. All our cousin's and aunts that have tasted my sister's are calling and asking for the recipe, everythough my aunt makes delicious dressing.

2 package(s) turkey drumsticks
- water to cover
1 teaspoon(s) salt
1 teaspoon(s) black pepper
2 cup(s) onions, chopped
1 cup(s) chopped celery
1 - chopped bell pepper
2 stick(s) butter
12 large eggs
7 - slices lightly toasted bread
2 - bouillon cubes
2 bunch(es) green onions, chopped
1/2 teaspoon(s) cayenne pepper
2-3 tablespoon(s) poultry seasoning
3 package(s) corn-kits cornbread mix or 1 iron skillet from scratch
2-2 1/2 cup(s) buttermilk
1 cup(s) vegetable oil

Steps:

  • Preheat oven 425 degrees and mix cornbread according to package directions but use 6 eggs total for the three packages of cornbread mix and 2 to 2 1/2 cups of buttermilk. In as 9X13 in pan or large iron skillet add vegetable oil heat in oven until hot, then pour into the cornbread mix. Mix well then pour cornbread into the pan or iron skillet. Bake until lightly browned.
  • Rinse turkey parts and put in a large pot and cover with water. You will need a large amount sf water so that you have enough rich broth so that your dressing will not be dry. Put in your bouillon cubes, add salt and pepper and cover. Cook until tender. Once tender, remove turkey, let cool, and debone.
  • Melt one stick of butter in a saute pan and saute the onions, green onions, celery, and bell pepper until clear about 5 minutes, pour over the cornbread and bread crumbs in the bowl. Toast bread lightly then crumble and add to the crumbled cornbread in a large bowl. To the bread and vegetables, add the broth, one cup at a time, stir well after each cup. Add the remainer of the eggs one at time, mixing well. Add the stick of softened butter. Make sure your dressing is almost wet but not soppy wet. Add the poultry seasoning a tablespoon at a time and the cayenne pepper, more salt and black pepper if needed. Spray a large glass casserole and layer yur deboned turkey meat in the bottom of your dish. Pour your dressing over the top. Bake for approximately one hour until it is starting to brown around the edges and on top approximately one hour. This dish takes some time to prepare but it is well work your time. note: You may not need all the poultry season the last time I only used 1 1/2 tablespoon and that was not enough. My children must my giblet gravy with this. I will post the recipe later.

When we ate our first Thanksgiving Dinner with his family, I learned his mom's secret to Wonderful Cornbread Dressing - Lots and Lots of Broth! I have made her version of Cornbread Dressing since, but I add chopped meat and eggs like my mom's recipe. Now we have a marriage of both mom's Cornbread Dressing.

1/3 cup bell pepper, chopped
1 cup onion, chopped
1 cup celery, chopped
1/4 cup reduced-calorie margarine
4 cups cornbread, crumbled

2 cups chicken broth
1 teaspoon rubbed sage

  • In skilet brown bell peppers, onions,and celery in margarine.
  • When onions are clear add 1/2 cup water.
  • Cover and simmer 7 minutes.
  • Combine vegetable mixture with remaining ingredients and mix well.
  • At this point,you can add some of the meat you will serve the dressing with and the egg , to make it more like my mom's giblet style cornbread dressing.
  • Place mixture in covered casserole at 350 degrees for 30 minutes. If dry, add more broth, to make this like my mother in laws it should be more like "mashed potatoes" instead of my mom's "cornbread".
  • Add more sage to taste.

6-7 cups crumbled cornbread (I recommend my "Grandma's Cornbread" recipe)
2 cans (14 1/2 oz. each) chicken broth or turkey broth
2 package s (6 oz. each) Stove Top Stuffing (chicken or turkey)
1 egg
1 tsp baking powder

Steps:

  • Add the butter, celery, and onions to a small saucepan. Saute for about 5 minutes or until the onions begin to look transparent.
  • Pour the celery and onion mixture into a large bowl and add the remaining ingredients. Use your hands to mix the ingredients. Spoon the dressing mixture into a 9x13-inch pan or baking dish.
  • Bake in a 425 degree oven for 30-45 minutes or until the top begins to brown. The dressing will set after it cools.
