Papa a la Huancaina aka boiled potatoes in a spicy cheese sauce is a traditional dish that is a favorite throughout Peru.

Ingredients

8 yellow or white potatoes , peeled
Lettuce leaves
Huancaína sauce
2 hard-boiled eggs
8 large black olives, halved

Steps:

Gather the ingredients.
Heat a large pot of salted water to boiling and add the potatoes.
Boil the potatoes until tender when pierced with a fork, about 15 to 20 minutes.
Drain the water from potatoes and let them cool.
Slice the potatoes and arrange on top of the lettuce leaves.
Pour Huancaina sauce over the potatoes and garnish with slices of hard-boiled egg and black olive halves.
Serve and enjoy.

1 box (12 oz.) instant potatoes
1 pkg (8 oz.) cream cheese
1 container (8 oz.) sour cream
Garlic salt (to taste)
Butter
Paprika

Steps:

Make potatoes according to recipe on box. Soften cream cheese and beat into potatoes along with sour cream and garlic salt.
Place potato mixture in casserole dish. Dot with butter & sprinkle with paprika for color.
Bake 20-25 minutes in a 350 degree F oven.
