Frosted Ginger Creams image

I have many recipes featuring ginger, but these soft cookies are real gems. The hint of lemon in the cream cheese frosting is a nice complement.

1/4 cup shortening
1/2 cup sugar
1 egg
1/3 cup molasses
2 cups all-purpose flour
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/3 cup water
FROSTING:
1-1/2 ounces cream cheese, softened
3 tablespoons butter, softened
1 cup plus 3 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
1 to 2 teaspoons lemon juice

Steps:

  • In a large bowl cream shortening and sugar. Beat in egg and molasses. Combine the flour, ginger, baking soda, salt, cinnamon and cloves; gradually add to creamed mixture alternately with water (dough will be soft). , Drop by heaping teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 400° for 7-8 minutes or until tops are cracked. Remove to wire racks to cool., In a small bowl, beat cream cheese, butter and confectioners' sugar until light and fluffy. Beat in vanilla and enough lemon juice to achieve spreading consistency. Frost cookies. Store in the refrigerator.

1/4 cup sugar
1/2 cup molasses
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1 to 2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup water
GLAZE:
1-1/2 cups confectioners' sugar
1/4 teaspoon vanilla extract
2 tablespoons plus 1-1/2 teaspoons 2% milk

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in molasses and egg. Combine the flour, baking soda, ginger, cinnamon and salt; gradually add to the creamed mixture alternately with water mixing well after each addition. , Pour into a greased 13x9-in. baking pan. Bake at 400° for 13-15 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack. , In a small bowl, combine the confectioners' sugar, vanilla and enough milk to achieve desired consistency. Spread over cooled bars.

1/2 teaspoon ground cloves
1/2 teaspoon salt

Steps:

  • In a mixing bowl, cream first 4 ingredients until fluffy.
  • Sift together the 6 dry ingredients and stir into molasses mixture.
  • Form dough into small balls (1 inch diameter).
  • Roll balls in granulated sugar.
  • Place 2 inches apart on cookie sheet.
  • Bake at 375 degrees for 12 minutes.

This recipe was handed down from my husband's Great-Great-Grandmother - his Grana has it written out in her grandmother's own handwriting! In this family, it's made & served like a piece of cake. I made it 24 small pieces because the flavor is pretty strong. I can only have a small piece at a time. Of course, my husband can eat more than that!

Steps:

  • Cream shortening & sugar together.
  • Mix in the other ingredients.
  • Pour into a well greased 9x13 pan.
  • Bake at 350 for 30-35 minutes, or until it starts to pull away from the edges and a toothpick comes out clean.

Steps:

1 egg
1 teaspoon Spice Islands® Pure Vanilla Extract

1 teaspoon Clabber Girl® Baking Powder
1 teaspoon Spice Islands® Ground Nutmeg

Steps:
