Fish Fillets With Mediterranean Sauce image

This recipe makes a lovely thick sauce perfect in my opinion for most varieties of white, non-oily fish. We like it for its slightly sweet taste which is different from most other tomato-based sauces that generally end up tasting like spaghetti sauce. It's also a pretty healthy recipe, I think.

1 lb ripe tomatoes, seeded and coarsely chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1 teaspoon fresh chives, chopped
2 green onions or 2 scallions, finely chopped
1/3 cup dry white vermouth
1 tablespoon olive oil
salt and pepper
2 lbs fish fillets (a white variety, such as haddock, cod, catfish, etc.)
butter (optional)

Steps:

  • TO PREPARE SAUCE:.
  • Combine first seven ingredients in a saucepan.
  • Simmer for 30 minutes.
  • Add olive oil, and simmer for an additional 30 minutes or until sauce is thickened and reduced in volume.
  • Add Salt and Pepper to taste.
  • Serve sauce over fish.
  • TO PREPARE FISH:.
  • There are various methods you may use but I prefere one of the following:.
  • METHOD ONE:Preheat oven to 400°F Butter a baking dish large enough to hold all the fillets in one layer, and place the fish in it.
  • Dot with butter, salt and pepper to taste.
  • Cook in the oven 10-12 minutes, or until fish flakes easily with a fork.
  • OR.
  • METHOD TWO: Place fish fillets on a large piece of aluminum foil.
  • Salt and pepper to taste.
  • Fold foil securely around fish and place in steamer over boiling water.
  • Steam about 5 minutes, or until fish flakes easily with a fork.

5 cloves chopped garlic divided
1/8 tsp red pepper flakes
1 teaspoon grated lemon rind
1/3 C freshly squeezed lemon juice
dash salt**
2 tsp chopped fresh oregano
2 tsp freshly chopped italian parsley
optional = 1 tsp 365 Mediterranean seasoning. if using, omit salt**

Steps:

  • 1) combine 3 cloves of garlic and pepper flakes in oil in small glass bowl and warm in microwave until oil is just warm but not hot. cool. (this is to just barely denature some of the the garlic and infuse the oil 2)add zest to oil and stir. while stirring add salted lemon juice whisking to blend. 3) add remaining ingredients and serve immediately. ** if using 365 Med blend - add to oil oil in beginning.

2 tbsp soy sauce
2 garlic cloves , finely grated
small knob ginger , grated
1 tbsp vegetable oil
200g spring greens , roughly shredded

Steps:

  • Toss the fish with the soy sauce, garlic and ginger. Heat the oil in a non-stick wok or frying pan and add the fish and its marinade. Sizzle for 3 mins on each side, until fish is almost cooked.
  • Throw in the greens and a splash of water and let everything simmer for 5 mins, until the greens have wilted. Spoon everything onto a plate and serve with rice or noodles.

1/4 cup olive oil
2 pounds tilapia, red snapper, or orange roughy fillets
1/2 cup chopped fresh parsley
1/2 teaspoon dried crushed red pepper
4 cups cherry tomatoes, halved
1 cup Kalamata olives or other brine-cured black olives, chopped
6 garlic cloves, minced

Steps:

  • Heat olive oil in heavy large skillet over medium-high heat. Sprinkle fish with salt and pepper. Add half of fish to skillet and sauté until just opaque in center, about 3 minutes per side. Transfer fish to platter. Repeat with remaining fish. Add parsley and crushed red pepper to same skillet; sauté 1 minute. Add tomatoes, olives, and garlic; sauté until tomatoes are soft and juicy, about 2 minutes. Season sauce with salt and pepper; spoon over fish.

Steps:

  • Prepare tomatoesand set aside.
  • Saute onion and garlic in olive oil untilonion is transparent.
  • Add all remaining ingreients.
  • Bring sauce to a boil and reduce heat, cover and simmer for about 15 to 20 minutes.
