MYSTERY BREAD

Mystery Bread image

I found this recipe in an old Woman's Day Magazine dated 1968 that my late DM had in her collection ( can you believe a magazine only cost 20 cents back then...talk about inflation!) Anyway I made this up and it is easy, economical, and really delicious as well. I don't do Bread Making Machines as I like to play in the dough, but sure this could be done up in one easily.

Categories     Yeast Breads

Time 2h45m

Yield 2 loaves

Number Of Ingredients 9

1/2 cup cornmeal
2 tablespoons shortening
1/2 cup maple syrup (I used Amber Maple Syrup, but to make this economical you can use Maple Flavored Syrup)
1/2 teaspoon celery seed
1 tablespoon salt
1 tablespoon paprika
2 (1 ounce) packages dry active yeast
2 cups boiling water
5 cups all-purpose flour, approximately, I used unbleached and it needed a bit more than the 5 cups

Steps:

  • Put first 6 ingredients in a large bowl and cover with the 2 cups boiling water. Mix well and cool until lukewarm.
  • Sprinkle with yeast, let stand a few minutes then stir until yeast is dissolved. Add 3 cups flour and beat hard with spoon. Add 2 more cups flour, or enough to make a firm dough. Turn out on floured board and knead 5 to 10 minutes, or until smooth and elastic.
  • Put into greased bowl and turn dough over greased side up. Cover and let rise in warm place for 45 minutes or until doubled in bulk.
  • Knead down and shape into 2 loaves. Put in greased 9"x5"x3" loaf pan and let rise again 40 minutes or until double. Bake in 375 degree oven about 45 minutes. Turn out on cake racks and let stand until cold.
  • Makes good grilled cheese sandwiches.

PIONEER WOMAN'S MYSTERY (BLUE CHEESE) ROLLS

Pioneer Woman's Mystery (Blue Cheese) Rolls image

I found this recipe on the Pioneer Woman blog site. I have tried several of her recipes and loved them. I have not yet tried this one. Just putting it here for safe-keeping. It looks like she used Pilsbury Golden Layer cans of biscuits. I am guessing at the number of rolls that it makes. It would depend on the brand of biscuits you selected. She states that these freeze well. Just flash freeze them and put them in a Ziploc. Then microwave, from frozen stage, for 13 seconds

Each "hollow" roll has a gooey cinnamoney-sweet inside! Cooking time includes rising and baking time. From the Elsah Landing cookbook. Please be sure to use a 3-inch round cutter ~ you need the right amount of dough to form the roll ~ and take care to really pinch those edges together, or the mystery filling will escape....

1 (1/4 ounce) package active dry yeast or 1 (1/4 ounce) package compressed yeast cake
3/4 cup milk, scalded and cooled to lukewarm
1 egg, beaten
1/4 cup sugar
1/4 cup shortening

1 cup sugar

  • Gradually stir in just enough of the remaining flour to make an easily handled dough.
  • Turn out on lightly floured board and knead for 5 minutes, or until dough is smooth and elastic- dust board with more flour if necessary to prevent sticking.
  • Shape dough into a ball, place in a greased bowl- turn to grease top, cover and let rise in warn, draft-free place for 1 hour or until doubled in bulk.
  • After this first rising, punch down the dough, cover and let rise again for 30 minutes, or until ALMOST doubled in bulk (marshmallows will leak out if the dough rises too much at this stage) dough may be covered and refrigerated at this point if desired.
  • Turn out on lightly floured board and cut in 1/2.
  • Roll each 1/2 out to a thickness of 1/2 inch.

  • Dip again in butter, then sugar mixture.
  • Place dough in prepared pans, pinched-side-down.
  • Cover and let rise in warm, draft-free place for 15- 20 minures.
