This one-skillet chili mac is on the table in less than half an hour, and it's loaded with family favorite flavors.

8 ounces elbow macaroni
1 pound lean ground beef
1 (24 ounce) jar Ragu® Old World Style® Traditional Pasta Sauce
1 ½ tablespoons chili powder
1 teaspoon ground cumin
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 (15.25 ounce) can whole kernel corn, drained
1 ½ cups shredded Cheddar cheese, divided
Chopped green onions, for garnish

Steps:

  • Cook and drain the elbow noodles according to the package directions; set aside.
  • Brown the beef in a large skillet over medium heat. Drain excess grease. Stir in the Ragu® Sauce, chili powder, cumin, tomatoes and corn. Bring to a boil over medium high heat, cover,reduce to low and let simmer for 10 minutes.
  • Stir in the cooked noodles and 1 cup of the cheese until melted and heated through. Sprinkle the rest of the cheese evenly over top, heat on low until melted. Serve immediately.

Just a yummy casserole I threw together with what I had on hand. It's creamy, hearty and a little spicy, just how a winter meal should be!

12 ounces pasta (i use bowtie)
1 lb lean ground beef
1 small onion
15 ounces canned red beans, drained and rinsed (black beans work just as well)
16 ounces crushed tomatoes
2 teaspoons dried thyme
2 teaspoons cajun seasoning
1 teaspoon cayenne pepper
1 tablespoon paprika
2 tablespoons chili powder
2 teaspoons cumin
salt and pepper
1 (16 ounce) package Velveeta cheese

Steps:

  • Pre-heat oven to 375.
  • Cook pasta according to box, making sure not to over cook as it will continue cooking in oven.
  • In a large skillet cook meat until no longer pink. Drain. Return to heat.
  • Add onions to beef and cook about 6-7 minutes. Add beans and tomatoes, mix well.
  • Add the seasonings. (I sometimes add a few dashes of hot sauce for a spicier version.) Simmer about ten minutes, stirring occasionally.
  • Divide velveeta in half. Slice half the cheese into thin slices, cube the rest.
  • Add a small amout of meat mixture to cooked pasta and layer on the bottom of casserole dish. Top with cubed velveeta and give a quick stir.
  • Next add meat mixture. Top with sliced velveeta.
  • Bake for 20-25 minutes, until cheese is slightly browned and edges are crispy.

1 pound corkscrew shaped pasta with lines or elbows with lines
2 pounds ground sirloin
2 tablespoons (2 turns around the pan in a slow stream) extra-virgin olive oil
1 sweet onion, chopped
2 jalapeno peppers, seed and chopped
4 cloves garlic, chopped
3 tablespoons (1 1/2 palm fuls) dark chili powder
2 tablespoons (1 palm ful) cumin
2 tablespoons cayenne pepper sauce
Coarse salt
1 cup beer or beef broth
1 (28-ounce) can diced tomatoes in juice
1 (14-ounce) can crushed tomatoes
Chopped scallions, for garnish

Steps:

  • In a large pot, boil pasta until al dente.
  • Meanwhile, in a big, deep pot, brown beef in oil over medium high heat. Add onions, peppers, and garlic. Season meat mixture with chili powder, cumin, cayenne, and salt. Cook together 5 minutes, stir in beer or broth, and reduce liquid by half, 2 minutes. Stir in tomatoes and simmer for 10 minutes.
  • Drain pasta. Add hot pasta to chili pot and stir to coat pasta evenly. Remove from heat and garnish big bowlfuls of chili mac with chopped scallions.
