- Heat taco sauce with ground beef as directed on tub.

- In 10-inch skillet, cook beef over medium heat 8 to 10 minutes, stirring occasionally, until thoroughly cooked; drain.

NACHO DEANO'S TACOS OF LOVE

- Preheat the oven to 250 degrees F.
- For the tomatillo sauce: On a baking sheet, combine the tomatillos, garlic, Anaheim peppers, jalapenos and onions. Drizzle olive oil over everything and hit it with salt. Place in the oven and roast until the vegetables are browned and soft, roughly 45 minutes.
- For the pork: Combine the cayenne, coriander, cumin, garlic powder, dry mustard, oregano, paprika, thyme and 1 teaspoon each of salt and pepper in a bowl and mix well.
- Trim the excess fat off the pork butt and belly and cut into 3- by 3-inch chunks. Put the pork in large bowl. Pour the spice rub mixture onto the pork a little at a time and toss the pork to make sure every piece is coated with the rub. Let sit.
- Heat the vegetable oil in a large frying pan. When the oil gets super hot, add a few pieces of pork and put a nice sear on it. Brown the meat on both sides and remove from the pan. Continue to sear off the remaining pieces of pork, adding more oil if needed.
- When all the pork is seared, put it in the pressure cooker and add all the juices from the frying pan into the pressure cooker. Don't forget to get all the little brown bits off the bottom of the pan. This is called fond and it's full of flavor.
- Add the garlic, Anaheim peppers, jalapenos and onions. Give it a good stir and turn up the heat.
- When things are sizzling and rocking and rolling, deglaze the pot with the beer. (You're not going to have a lot of room to move in your pressure cooker pot, but get a spatula or wooden spoon down in there and give the bottom of the pot a good scrape to loosen the fond off the bottom to get them into the mix of peppers, pork, onion and garlic.) Hit the pot with a good pinch of salt and some pepper, then put the pressure cooker top on and cook for 45 minutes. Then release the steam from the pressure cooker very carefully. (Note: Please follow manufacturer's instructions for this.)
- To finish the tomatillo sauce: Remove the tomatillos and peppers from the oven. Remove the stems from the tomatillos and place them in a blender with the roasted vegetables. Rip all the leaves off of a bunch of cilantro and add that to the blender. Blend until smooth. Adjust the texture of the sauce with a few tablespoons water. Taste and adjust seasoning with salt and pepper. Put in the refrigerator to chill and set up.
- Remove the pork from the pressure cooker and place on a baking sheet. With the back of a fork and a pair of tongs, shred the pork, and mix the belly and butt together. This should be easy to do after the pressure cooker has worked its magic.
- With a slotted spoon, remove the peppers, onion and garlic and put them all into a blender. Add one third of the liquid from the pressure cooker and blend. Use the liquid to adjust the consistency so you have a sauce that is not too thick. Taste and season with salt if needed.
- For the tacos: Heat the vegetable oil in a large frying pan over medium-high heat. Cook the chorizo until browned and cooked through.
- In a hot frying pan with some vegetable oil, add a handful of the shredded pork in silver-dollar-pancake-size portions. We want to get a little crust on the outside of the pork.
- In another frying pan over medium heat, warm up the tortillas one by one and cover with a towel to keep warm.
- Place a crispy pork pile on 2 stacked tortillas, then top with 1 teaspoon of the braising sauce, some chorizo, some shredded cabbage, 1 tablespoon of tomatillo sauce and some crumbled Cotija cheese. Sprinkle with cilantro, then hit it with a squeeze of lime and enjoy. It seems labor intensive, but trust me, the flavor will blow your sombrero off!
TACO NACHOS
My kids wanted nachos. I didn't have a recipe, so I created this one. It was a hit with us!

- Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and mix in taco seasoning mix and water. Continue cooking 5 minutes. Remove from heat.
- Place processed cheese and milk in a small, microwave safe bowl. Microwave on high until melted, 1 to 2 minutes. Stir until blended and smooth.
- Place tortilla chips on a large, microwave safe dish. Spread with refried beans. Top with beef and cheese and mixtures.
- Microwave approximately 2 minutes on high, until the cheese has melted into the beef. Top with tomato and green onions. Serve warm.

- Brown the beef in large skillet and drain (in colander rinsing with hot water if possible to reduce fat intake).
- Return to skillet with water, beans, taco seasoning, onion and green chilies.
- Cook until everything is mixed well under medium-low heat stirring often until a low boil is achieved.
- Reduce heat cover and simmer 10 minutes stirring every couple minutes.
- The construction.
- On a large plate cover with tortilla chips and dollop generous portions of the meat mixture on chips.
- Now pour over WARMED cheese sauce.
- Top with the lettuce next, then what ever order you want of the other veggies except the JP's.
- Then add the JP's AS MUCH AS YOU CAN MUSTER YEA!
- A couple dollops of sour cream and you are ready for a very filling, spicy treat that you will not forget--EVER.
- You should also consider topping with some of my guacamole.

STEAK NACHOS
Nachos are like pizza to me, a perfect food! My tips for making them super-delicious is to use restaurant-style chips if you can find them, and to prebake them before topping them. In this recipe I load them up with a grilled flank steak that gets its inspiration from Mexican carne asada. In addition to these nachos, you can also serve the steak just by itself, or use it in tacos, quesadillas, burritos and more.

- Put the oil, garlic, cilantro, soy sauce, orange juice, cumin and oregano in a blender or small food processor and blend until combined, 10 to 20 seconds. Pour the marinade into a gallon resealable bag. Add the steak, force out as much air as possible, seal the bag and massage the
- marinade into the steak. Allow the steak to marinate for 30 minutes on the counter or overnight in the refrigerator.
- Prepare a grill or grill pan for medium-high heat. Preheat the oven to 350 degrees F. Line a sheet pan with parchment paper.
- When ready to grill, remove the steak from the marinade and pat dry with paper
- towels. Discard the marinade. Season the steak with salt and pepper. If using an outdoor grill, brush the grill clean and oil the grill grate. Grill the steak until charred on the bottom, 3 to 5 minutes. Flip and cook until the steak reaches the desired doneness, 3 to 5 minutes more. Remove from the heat and allow to rest on a cutting board for 5 to 10 minutes.
- While the steak rests, place the chips on the prepared sheet pan and bake until warm, 5 to 10 minutes.
- Slice the beef into 1/2-inch-thick strips, then slice across to make 1/2-inch cubes. Pull the hot chips out of the oven. To build the nachos, start by topping them with the steak cubes. Then sprinkle them evenly with the Cheddar and Monterey Jack. Bake until the cheese melts, about 4 minutes. Finish by topping the chips with avocado and pico de gallo and drizzling with crema. Garnish with scallions and jalapeno and serve hot.
STEAK AND POTATO TACO NACHOS RECIPE BY TASTY

- Preheat the oven to 300˚F (150˚C).
- In a small bowl, combine 1 teaspoon of salt, the pepper, onion powder, paprika, garlic powder, chili powder, and cumin.
- Slice the potatoes on a mandolin or with a sharp knife into ¹⁄₁₆-inch (1 mm) thick slices.
- Transfer the potato slices to a large bowl and cover with water. Toss the potato slices around to remove excess starch, then drain the water.
- Sprinkle the remaining 2 teaspoons of salt onto the potato slices and toss, then drain any excess water.
- Sprinkle half the spice mixture over the potatoes and toss until well-coated.
- Invert a muffin tin and place the potato slices in between the muffin tin walls to create taco shapes. If you have one, use a second muffin tin for the remaining potato slices, or repeat when finished baking the first batch.
- Bake the potato slices for 25 minutes, or until golden brown.
- Season the skirt steak with the remaining spice mix on both sides.
- Heat the oil in a large cast-iron skillet over high heat. Add the skirt steak and cook for 3 minutes on each side until it is seared with a golden brown crust.
- Remove the steak from the pan and let rest on a cutting board for 10 minutes. Once rested, cut the steak into ½-inch (1 cm) cubes.
- Sprinkle the cheese blend and steak into the potato taco shells.
- Bake for another 5 minutes or until cheese is melted.
- Serve with pico de gallo, guacamole, and sour cream.
- Garnish with chopped chives, if desired.

- Make Copycat Taco Bell Seasoned Beef, reserve 2 1/2 cups, set aside.
- Heat oven to 350°F Place two baking racks over rimmed baking sheets; spray generously with cooking spray. Using aluminum foil, roll 12 1/2- inch balls. Stir together melted butter and sugar until well combined.Remove "cheese powder" packets from macaroni and cheese boxes. Save pasta for a later date. Remove "taco seasoning mix" packet from Taco Dinner kit, set kit aside for later.
- In a shallow rimmed dish, stir together both packets of "cheese powder", "taco seasoning mix", paprika, salt, Accent, onion powder, and garlic powder.
- On prepared baking sheets, arrange taco shells, (12) spacing out evenly. Working one at a time, holding the shell from the inside, brush both both sides with butter mixture. Dip buttered shell into cheese powder mix on both sides, pressing gently to adhere. Spray both sides of dipped shell with cooking spray and place back on baking rack. Repeat with remaining shells.
- Fit prepared aluminum foil balls into the "mouths" of the taco shells; this will help keep the shells in shape while they bake. Bake for 3 to 5 minutes, until shells are warmed. Allow to cool on racks fully, remove foil balls.
- Dividing evenly, Fill Copycat Nacho Cheese Doritos Locos Tacos Supreme Shells with Copycat Taco Bell Seasoned Beef, lettuce, tomato, shredded cheese, and sour cream. Serve immediately.
